Pastrami (Romanian: pastramă) is a Romanian variant of the Turkish pastırma usually made from beef brisket, and sometimes from lamb, or turkey. The raw meat is brined, partially dried, seasoned with herbs and spices, then smoked and steamed. Like corned beef, pastrami was originally created as a way to preserve meat before the invention of refrigeration. One of the iconic meats of American Jewish cuisine and New York City cuisine, hot pastrami is typically served at delicatessens on sandwiches such as the pastrami on rye.

The name pastrami comes from Romanian pastramă, a conjugation of the Romanian verb păstra meaning "to conserve food, to keep something for a long duration" whose etymology is linked to the Turkish pastırma, short for Turkish: bastırma et "pressed meat." It is sometimes claimed that the name pastirma comes from Greek παστρον "dried meat."[citation needed]

Wind-dried beef had been made in Anatolia for centuries, and Byzantine dried meat is thought by some to be "one of the forerunners of the pastirma of modern Turkey."

Early references in English used the spelling "pastrama", closer to the Romanian pastramă. Pastrami was introduced to the United States in a wave of Jewish immigration from Bessarabia and Romania in the second half of the 19th century. The modified "pastrami" spelling was probably introduced in imitation of the American English salami. Romanian Jews emigrated to New York as early as 1872. Among Jewish Romanians, goose breasts were commonly made into pastrami because they were inexpensive. Beef navel was cheaper than goose meat in America, so the Romanian Jews in America adapted their recipe and began to make the cheaper-alternative beef pastrami.

New York's Sussman Volk is generally credited with producing the first pastrami sandwich in the United States in 1887. Volk, a kosher butcher and New York immigrant from Lithuania, claimed he got the recipe from a Romanian friend in exchange for storing the friend's luggage while the friend returned to Romania. According to his descendant, Patricia Volk, he prepared pastrami according to the recipe and served it on sandwiches out of his butcher shop. The sandwich was so popular that Volk converted the butcher shop into a restaurant to sell pastrami sandwiches.[additional citation(s) needed]

Beef plate is the traditional cut of meat for making pastrami, although it is now common in the United States to see it made from beef brisket, beef round, and turkey. New York pastrami is generally made from beef navel, which is the ventral part of the plate. It is cured in brine, coated with a mix of spices such as garlic, coriander, black pepper, paprika, cloves, allspice, and mustard seed, and then smoked. Finally, the meat is steamed until the connective tissues within the meat break down into gelatin.[citation needed]

Greek immigrants to Salt Lake City in the early 1960s introduced a cheeseburger topped with pastrami and a special sauce. The pastrami cheeseburger has since remained a staple of local burger chains in Utah.

Did a little pastrami today. Gonna make some Rueben sandwiches tomorrow!! Bought this pre-packaged, and brined corned beef brisket flat. Rinsed off the brine. Rubbed with @howtobbqright TX Brisket Rub and smoked on my @traegergrills PRO 575 till it hit 170. Then placed in an aluminum pan with some beef broth and finished when it was probe tender. Around 205. Sliced it up with my @messermeister knife. ***Werbung***Das Rezeptarchiv: „Pastrami“ Zutaten:1 kg Tafelspitz Pökelmischung (pro kg Fleisch):- 40g Pökelsalz - 55g Rohrzucker - 20g Pfeffer frisch gemahlen- 1 EL Knoblauch granuliert- 1 EL Koriander - 1 TL Rosa BeerenGewürzmischung (pro kg Fleisch):- 1 EL Pfeffer frisch gemahlen - 2 EL Koriander- 1 EL Thymian- 1 TL Knoblauch- 1 TL Rosa BeerenZubereitung:1. Den Tafelspitz parieren (vom Fett befreien) und mit der zusammen gemischten Pökelmischung einreiben. 2. Den Tafelspitz in einen Vakuumbeutel vakuumieren. Sollte etwas von der Pökelmischung übrig geblieben sein, kann das mit in den Vakuumbeutel. Der Vakuumbeutel muss nun zum pökeln in den Kühlschrank. (pro cm dicke einen Tag + 2 Sicherheitstage) In unserem Fall:5cm dicke = 5 Tage + 2 Tage = 7 Tage pökeln. Das Fleisch sollte jeden Tage gewendet werden, damit das Pökelsalz überall hin kommt.3. Den Tafelspitz aus dem Vakuumbeutel nehmen und unter fließendem Wasser abspülen. Anschließend für eine Stunde ins Wasser legen, damit das Pökelsalz aus dem Fleisch gezogen wird. 4. Den Tafelspitz aus dem Wasser nehmen und abtrocknen. Anschließend die Gewürze für die Gewürzmischung vermischen und das Fleisch damit einreiben. 5. Den Tafelspitz nun bei 110°C auf den Smoker legen. Ziel ist eine Kerntemperatur von 68°C. Dauer ca. 2-3 Stunden.Den Tafelspitz nun komplett auskühlen lassen. 6. Den Tafelspitz erneut in einem Vakuumbeutel vakuumieren und 5-7 Tage ziehen lassen. Das Pastrami ist nun endlich fertig. Viel Spaß beim Nachmachen und guten Appetit.
