Chunky Monkey Nice Cream Sandwiches⠀ INGREDIENTS:⠀ 4 bananas⠀ 2 eggs⠀ 3/4 cup honey⠀ 1 tsp vanilla extract⠀ 1 1/2 cups oat flour⠀ 1 tsp cinnamon⠀ 1/2 tsp baking soda⠀ 1/2 tsp baking powder⠀ 1/2 tsp salt⠀ 1/2 cup shredded coconut⠀ 1/2 cup dark chocolate, melted⠀ ⠀ NICE CREAM:⠀ 6 bananas, frozen⠀ 1 tbsp maple syrup⠀ 1/2 cup walnuts, chopped⠀ ⠀ STEPS:⠀ For the banana bread- Preheat oven to 350 degrees. Spray a 9 by 13-inch pan with nonstick spray and set aside.⠀ In a large bowl, mash bananas with a fork. Mix in eggs, honey, and vanilla.⠀ In a separate bowl, whisk together the oat flour, cinnamon, baking soda, baking powder, and salt. Add dry ingredients to the wet ingredients and fold together until just combined. Fold in coconut.⠀ Spoon batter into the prepared pan and bake 10 to 12 minutes or until a toothpick comes out clean. Place a smaller pan on top and allow to cool completely in the pan.⠀ For the nice cream- In the bowl of a food processor, blitz the bananas and maple syrup until thick and creamy, then stir in the walnuts. Line an 8 by 8-inch pan with plastic wrap and pour banana mixture into the bottom. Place in the freezer until solid.⠀ When ready to assemble- Use a 2-inch cookie cutter to cut rounds from both the banana bread and nice cream, then sandwich a round of nice cream between two banana bread slices. Dip each sandwich in the melted dark chocolate and serve immediately.

Stir in the walnuts. Grilled PB&J Ice Cream Sandwich ⠀ INGREDIENTS:⠀ 8 slices brioche loaf, 1/4-inch thick⠀ 6 teaspoons creamy peanut butter⠀ 4 teaspoons jelly of your choice⠀ 1/4 cup clarified butter⠀ 1/4 cup sugar⠀ 1 teaspoon cinnamon⠀ 1 pint of your favorite ice cream⠀ ⠀ STEPS:⠀ Using a round cutter or a 3-inch-diameter glass, cut circles out of the brioche slices.⠀ Working with 4 of the slices, spread 1 1/2 teaspoons peanut butter on each slice, concentrating in the middle but spreading a thin layer on the rim, which will seal the top slice.⠀ Drop 1 teaspoon of jelly in the middle of the peanut butter, and set a plain brioche circle on top of each, lightly pressing around the sides to seal in the jelly.⠀ In a 9-inch nonstick skillet, melt the butter over medium heat, and toast the sandwiches until golden. Flip and repeat on the other side.⠀ On a plate or flat dish, mix the sugar and cinnamon. Coat each toasted sandwich in the cinnamon sugar and set aside.⠀ Using a serrated knife, carefully slice the ice cream pint into 1/2-inch to 3/4-inch rounds. In one bowl, add the light strawberry puree, and add the heavy strawberry puree to the other bowl. Pour each mixture into a mold, then cool in the refrigerator until solidified.⠀ Transfer the solidified strawberry balls into a large bowl and pour 1 1/4 cups of the milk agar-agar mixture over the top.⠀ Add the melted chocolate to the rest of the milk agar-agar mixture, then pour it on top of the bowl. Balloon Animal Cookies ⠀ 🎥: @thescranline⠀ INGREDIENTS:⠀ 1 ½ stick of butter, room temperature⠀ 1 cup sugar⠀ 1 egg⠀ 1 tsp vanilla extract⠀ 2 ½ cups flour⠀ ⠀ ROYAL ICING:⠀ 1 2lbs bag of powdered sugar⠀ 1 egg white (pasteurized)⠀ 1 tsp vanilla extract⠀ 1 drop pink food gel⠀ 1 drop orange food gel⠀ 1 drop red food gel⠀ 1 drop green food gel⠀ ⠀ STEPS:⠀ In the bowl of an electric mixer fitted with the flat beater, cream butter and sugar on medium speed until light in color and fluffy in texture. Add the egg and vanilla extract. Mix until combined. Add all the flour and mix on low speed until the dough comes together.⠀ Roll out your dough between 2 pieces of plastic wrap and refrigerate for at least 30 minutes. In the meantime, preheat your oven to 350°F.⠀ Unwrap your dough. Place a large piece of baking paper and place the dough on top. Place another large piece of baking paper on top. Use a rolling pin to roll out to about 1cm thick. ⠀ Use a large knife to cut out 1.5cm thick strips of cookie dough. For each balloon animal, you’ll need five 4cm strips of cookie dough, one 5cm strip, and one 2cm long piece.⠀ To round out the corner use the end of a small piping tip to cut out the rounded corners on each end of each shape. Use your finger to round it out a little more. Assemble your cookie balloon animals on a baking tray lined with baking paper and bake for 10 minutes or until golden in color. Note: if your cookies didn’t stick together when they baked and the legs or heads came away from the rest of the cookie, use a little bit of royal icing to stick everything back together once they’ve cooled down.⠀ To make the royal icing, place the egg white, powdered sugar and vanilla into a large mixing bowl and mix on low speed until well combined. It should resemble the consistency of thin paint. Thick enough to hold it’s shape and thin enough to be smooth.⠀ Split the mixture into 5 mixing bowls. Leave one white
Avocado Pancakes⠀ INGREDIENTS:⠀ 1 cup oat flour⠀ 1 1/2 tbsp fine sugar⠀ 1 tsp baking powder⠀ 1/4 tsp baking soda⠀ Pinch of salt⠀ 1 ripe avocado, mashed⠀ 3/4 cup buttermilk⠀ 1 egg⠀ 1/2 tsp vanilla extract⠀ 1/2 cup blueberries⠀ Coconut oil, to fry⠀ Maple syrup, to serve⠀ ⠀ STEPS:⠀ In a medium bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.⠀ In the bowl of a food processor, add the mashed avocado, buttermilk, egg, and vanilla and process until smooth.
