I took @jestorode_fit’s advice and started adding split red lentils to my soups to increase the protein content. Red lentils are also good for your skin, bones, teeth, heart and digestion , and apparently they reduce the risk of cancer ๐Ÿ‘๐Ÿป I experimented with red lentils for the first time by using a recipe from acedarspoon.com. It’s full of the most delicious spices and boasts an impressive 15g of vegan protein per serving. . ๐Ÿ‚ Moroccan Red Lentil Soup ๐Ÿ‚ Yield: 8 servings 3 tbsp Olive Oil 1 Onion, chopped 1 Celery Stalk, chopped 1 Carrot, chopped 3 Garlic Cloves, chopped 3 tsp Ground Coriander 1 1/2 tsp Ground Cumin 1 1/2 tsp Ground Turmeric 1 tsp Paprika 1/2 tsp Ground Cinnamon 4 cups Veg Stock (or Chicken Stock) 4 cups Water 1 can Crushed Tomatoes 2 cups Split Red Lentils 1 Lemon, juiced 1 pinch Red Pepper Flakes 4 tbsp Fresh Flat-Leaf Parsley, chopped 1 tbsp Fresh Coriander, chopped Recipe will be continued in my “Food” highlight later.

I know that part of me looks forward to social situations๐ŸŽ‰, but another part of me gets anxious and stressed over them ๐Ÿคฏ I build the pressure concerned about how it’s going to go, will it be awkward, am I going to talk enough, the list goes on..but then once I’m there, in the actual situation, I tend to relax and open up ๐Ÿคจ๐Ÿ˜Ž • • Because of this, weekends can be exhausting - mentally. I love spending time with friends and family of course, but I’m also someone who craves alone time and peace - which is why I tend to welcome Monday with open arms - just me, myself and my work! ๐Ÿ™ƒ๐Ÿคซ • • So the point of all of this?! It’s okay to be an introvert sometimes, it’s okay to want alone time and to be by yourself. It’s also okay to stress about social situations - but important to put yourself in them and push through the anxiety and really LIVE LIFE! The choice to start meal prepping can originate from a number of lifestyle needs; to facilitate making healthier food choices throughout the day, convenience and time efficiency, or adhering to a budget.  Here are a short list of things to consider before jumping in:  What are your personal preferences?๐Ÿคท๐Ÿพ‍โ™‚๏ธ If you get bored easily with same foods day in and day out you may want to consider preparing more than one dish for the week to help with variety.  What are your goals?๐Ÿ’ช๐Ÿฝ๐Ÿ’ธ You want to make sure that your meal prepping is align with whatever your goals are (i.e. general healthier eating, sticking to a budget). You also should consider food that you will actually eat as there’s no sense in spending time prepping something you don’t like eating. Simple Maple Fall Kale Salad๐Ÿ‚๐ŸŒฑ .  I’ve been loving sweet and tangy salads so I whipped up the below, not really any strict measurements, I just added what I was hungry for. .  Salads don’t have to be boring. They are my favorite dish to get creative with in the kitchen and I love them because I am able to always add a variety of nutrient dense foods.โœŒ๏ธ .  2 oz of Kale-messaged in lemon juice Sweet Potato Chips Maple Cinnamon Roasted Chickpeas Pomegranate Seeds Apples Slices Half a Sliced Date Toasted Pecans with Maple Glaze (Toast desired about of pecans on medium in a sauce pan until you can start to smell them and than pour in a little maple syrup. It will boil, mix the pecans in quickly and transfer to parchment paper to cool). . I remember believing this and having this idea that in order to eat healthy and nutritious food it had to be bland and tasteless with no flavor. This is such a lie! All you need to create yummy palatable and healthy dishes is your imagination!! --------------------------------- Start by swapping out those heavily processed snacks and sweet treats with minimally processed versions. This gives you more control over the sugar, and fat content and decreases questionable ingredients such as trans fats, hydrogenated fats, artificial flavorings, refined sugar, and refined flour. --------------------------------- You can find healthy recipes for delicious homemade treats on sites such as Eating Well where they have a variety of different recipes to fit a plethora of dietary styles. Such as paleo, whole 30, plant based, etc. --------------------------------- I encourage you to change your perception of what is healthy and get out there and start experimenting with different recipes! Forever rewarding myself with sweaty hiit/cardio sessions with mini weetabix/cereal as justification for the processed not so good foods ๐Ÿ˜‚ oh well, if I’m ever going to eat my cereal it might as well be when my body needs the quick carbs right?! Breakfast post sweaty workout at le gym was this bowl of the thickest yogurt oats full of raisins, with a baby underripe creamy banana, mini weetabix that I mushed in cashew milk, a dollop of lemon jam, a good dollop of cashew butter which is the love of my life, then granola and quinoa puffs, and because I was STILL hungry I also had a fig, bluebs mixed with protein powder, and handfuls of muesli lol!
