Can you believe this was a 20 minute dinner? Wow your friends and entertain, wow your partner when they get home from work! Make yourself seem like you are all that and a bag of chips in the kitchen when you're really not😂 Seriously this is so easy. Just buy really good cuts of thin strip steak from your local butcher. Season them up with salt, pepper and garlic and fry them right on your stove for a couple minutes each side. Saute mushrooms in another Pan simultaneously if you like mushrooms on top of your steak (I usually do a balsamic/ honey glaze for my mushrooms.) Top the steak with the mushroom mixture, blue cheese and a hunk of burratta and some precooked shrimp I picked up at @wegmans I probably spend the bulk of my existence in my home in my kitchen but I'm not cooking and cleaning the entire time. The kitchen is the heart of the home and the place where people gather. It should be a fun place to be and not somewhere where every time you're in it you're slaving over a stove and then slaving to clean up afterward. Can I get a show of hands who isn’t busy in life?...*crickets*...yeah, I thought so. In life’s business, do not let eating good food be compromised! Yes, it may take 5 minutes of forethought to take the chicken out of the freezer, but it is worth it. Also, super easy meals like this baked chicken fajitas will make it easier on you too: 2 lbs chicken breast cut into strips (or chicken tenders) 2-3 bell peppers cut into similar sized strips 1 sweet onion cut into strips 1/2 Tbs cumin 1/2 Tbs chili paste (I use Huy Fong Chili garlic sauce) 1 tsp oregano 1 tsp garlic powder 1 tsp salt 1 tsp pepper 2 Tbs oil Preheat oven to 425 F In a large mixing bowl, combine all ingredients making sure everything is coated. Pour mixture into baking dish in an even layer (you may need to use two dishes). Bake in oven for 25-30 minutes until chicken justices run clear. Flatbread #pizza was #whatsfordinner Monday night. My number 1 #stressrelief is #cooking. #pumpkin#butternutsquash sauce went on 2 of the flatbreads. I put crabmeat, apple smoked turkey, applewood smoked ham, red bell peppers, portobello mushrooms, sweet onions, mozzarella cheese and 2 made with spaghetti sauce. Can you say #yummyinmytummy. Of course I had to complete the meal with wine 🍷 The wine of choice was Red Cat by Hazlitt from the Finger Lakes. It paired perfectly with the meal!
