I tried to venture out from my usual lunches yesterday and try something new so I ended up throwing together this collard green veggie wrap 😋 I love eating with my hands, so anything that I can make into taco or burrito form then you know I'm in! I used @eatingbirdfood's collard green wrap recipe as inspo and it was so refreshing and delish! Just wrapped up some cucumber, carrots, zucchini, sprouts, onion, avocado and hummus into a collard green (burrito style) and called it a day. What's something new you've been wanting to try?
There’s nothing like a bowl of fresh fruit✨I also can never resist the urge to sing “fruit salad, yummy yummy” every time I eat a fruit bowl..anyone else or is it just me?😅 Yesterday I went into the city with my grandma & we saw pretty woman which was SO stinking cute. We had a blast, walked around & then got Chinese food at our fav restaurant. A few years ago, I would feel SO guilty about eating a “bad” dinner. What I’ve come to terms with is that food isn’t just to fuel us (while that is major component) eating also has a huge social component. I used to hate eating out in fear of over indulging. & while that still can be a struggle at times, creating memories with friends & fam is irreplaceable  One of the amazing things about food is that it brings people together & that is something to really appreciate. Tonight I’m going into the city again to get dinner & catch up with a friend  Then tomorrow I’m off to somewhere new & exciting! eeeek! Can you guess where?! It’s been too long since I’ve made a yogurt bowl 😍 I added a thick slice of my paleo banana bread (recipe in yesterday’s post) to make this bowl even more tasty and filling 🤤 Let’s Build-A-Bowl(™) again, shall we? 🥣 1️⃣ Scoop and swirl some yummy yogurt into a bowl. I used @kitehillfoods vegan unsweetened Greek-style yogurt; it’s my absolutely favorite because it’s thick and creamy (rare for store bought vegan yogurt) and has 11g of protein and live active cultures. I prefer the unsweetened one because my toppings make it sweet enough for me 😋 (not sponsored at all, just obsessed) 2️⃣ Add fresh fruit. Berries are my bliss. Here we have organic strawberries and bluebs 🍓🔵 hello antioxidants and fiber 🥳 3️⃣ Add a baked good: TRUST ME. This step shouldn’t be optional. My paleo banana bread is a great choice for this step, just saying 😏 4️⃣ Add some fat and crunch: Pumpkin seeds contain omega-3 and omega-6 fatty acids, antioxidants and fiber 🙌🏼 Any nut or seed would be good. 5️⃣ Spoonful and sprinkles of heaven: aka @traderjoes raw almond butter ✔️ and cinnamon cuz duh 💁🏼‍♀️ Happy Thursday! Creamy, savory and delicious scrambled eggs topped with fried garlic over spinach and shiitake grits from @dailyharvest ❤️ a great shortcut to a nutritious meal with minimal effort. . Tip on eggs: I scrambled the eggs with DF milk, salt and pepper, and cooked them at medium heat - eggs should come together very quickly (it should take 20-30 seconds) and you want to constantly fold the eggs towards the middle, then remove from heat immediately when the eggs are set but creamy. This mama is beyond tired today🙋🏻‍♀️ But I am pushing through with a double matcha latte. I have been getting up extra early to go to Pilates before my kiddos get up👧🏻👦🏻⁣⁣ ⁣⁣ My favorite part of being up early is having a cup of hot lemon water —all by myself✌️⁣ ⁣ See below for my matcha latte recipe in a blender🍵⁣⁣ ⁣⁣ Matcha Almond Milk Latte: serves one tired💆🏻‍♀️⁣⁣ ⁣⁣ 1 teaspoon of high quality matcha ⁣⁣ 1 scoop of @evolution_18 Overnight Vanilla ⁣⁣ 1 cup of hot water 175-185°*⁣⁣ 1/4 almond or preferred plant milk🥛⁣⁣ ⁣⁣ Instructions:⁣⁣ 1. Place the matcha and the Overnight Vanilla in a high speed blender like an @vitamix. Add the boiling water. Close the lid tightly and start to blend slowly.*⁣⁣ 2. Heat the almond milk in a small sauce pot, until warm (2-3 minutes). Or 30 seconds in the microwave. ⁣⁣ 3. Use a foamer, like a @bodum and foam the milk. Pour the foamed milk over the matcha🍵⁣⁣ .⁣⁣ Chef Carla’s Note:⁣⁣ 1. Most quality electric tea kettles have a temperature setting. Mine actually says 175° Green Tea. You could also you use a kitchen thermometer, if you wanted to. ⁣⁣ 2. This recipe doubles easily — see next note. ⁣⁣ 3. You always want to be careful with hot liquids in a blender. Make sure the lid is on tight and start to blend slowly. You can also fold a tea towel in quarters and place on top of the lid with your hand to make sure it’s secure. I’m back, honestly guys I have been going through some stuff with my mental health lately and just haven’t had the energy to post on here and have been debating back and forth if I want to delete this account or not. I just feel like this has become all about how many followers you have, how many products reached out to you, likes etc etc.. Specifically, people will follow you, likes all your posts and then unfollow you if you don’t follow them back? This should be based on if you share common interests with food and enjoy their feed.. not about followers.. I want this to be something I enjoy, an escape to something that makes me happy but to be honest that hasn’t really been the case. I’m going through a bunch of other stuff but this isn’t meant to be sappy. That being said though, I will be posting when I have a reason to post and when I have something to post. • • • This morning ➡️ 1/2 cup egg white scrambled with one egg, wilted spinach, mushrooms and onions. Seasoned with salt and pepper and garlic powder. One @fiberone multigrain muffin, topped with @earthbalance pb and sliced banana, the other topped with avacado and sliced tomato.  Have a great day🌞💛
I have returned to thee spaghetti squash life & I am very happy about it. Please do yourself a favor and whip up this sausage party of a dish. 🙃🙃🙃 Sure, cooking spaghetti squash is kind of intimidating, but once you do it once...you’ll be surprised by how easy it is. You’ve got this. Here’s the deets: preheat the oven to 450 and slice the squash in half and drizzle with @chosenfoods avocado oil, salt and pepper. Pop it in the oven face-down for 40-45 mins. While that sitch is happening, sautee @wholefoods mild Italian chicken sausage, onion and mushrooms in a pan with avocado oil, Italian seasoning and s&p. After your squash is done, scrape the insides of each half and place into two bowls. Top with @nellinossauce pasta sauce and sausage/veggie mix. Get ready for the party. Enjoy!

Earlier this month I talked about tips for healthy snacking. These snack balls were pictured and I’m finally sharing the recipe to help keep your snack attacks at bay.  INGREDIENTS -3/4 cups nuts -1/4 cup coconut oil -2 tbsp cacao powder -1 scoop chocolate protein powder (I used @botanicahealth ) -1/4 cup unsweetened coconut flakes -7medjool dates  Directions 1. If medjool dates are dried up place in a bowl and pour boiling over top , let sit for a few mins then drain. This will help plump them up.  2. Add all ingredients to a food processor and pulse until a sticky mixture forms.  3. Line a cookie sheet with wax paper. Roll mixture 1-2 tbsp at a time into balls and place on cookie sheet.  4. Place in the freezer for at least an hour and then transfer to a container or a bag.  5. Enjoy!

XANTHAN GUM | It is a popular food additive that's commonly added to foods as a thickener or stabilizer. It's created when sugar is fermented by a type of bacteria called Xanthomonas campestris. everything is better when loaded with chocolate chunks, agreed?🍫 okay so now that we’ve addressed that, who’s ready for some CHOCOLATE CHUNK BANANA CAKE?!🍌 had some ripe bananas but wanted to see if I could create something more cake-like than my go-to banana bread. this ended up being DELISH, especially when paired with a warm cup of coffee on a rainy day☕️🥰 ___ recipe: 3 medium, overripe bananas 1/3 cup almond butter (can use any nut butter) 2 eggs 1 tsp vanilla extract 3/4 c brown rice flour  1/3 c almond flour 1 tsp cinnamon 1 tsp baking powder GENEROUS amount of @traderjoes chocolate chunks (honestly, I didn’t measure the chocolate, because you measure that ish with your heart ❤️) ___ MASH bananas. COMBINE bananas, eggs, vanilla + nut butter. ADD in flours, cinnamon + baking powder. MIX until well-combined. FOLD in chocolate chunks. POUR batter into cake pan greased with coconut oil. BAKE at 350 degrees for 25-28 minutes or until toothpick comes out clean. ENJOY!💛💛
still have yet to make a recipe by @ambitiouskitchen that I haven’t fallen in love with. these paleo + vegan banana bread muffins with lots of added @lilys_sweets_chocolate chocolate chips were no exception! the only sweetener used in the base is bananas, and you won’t miss any added sugars with this one. for some subs, I used @bobsredmill hazelnut flour and @georgiagrinders hazelnut butter. i would love to invite you guys over for one, but they definitely aren’t lasting much longer here 😏 have the best Thursday ♥️ // #matchaandmargs

Good morning everyone 🌅 . . I realized that making my own pancakes 🥞 is enjoyable/easy to do, so here are some fluffy homemade *vegan* banana pancakes that I made recently. . . It only takes 6 ingredients to make these pancakes: mashed ripe banana, unsweetened almond/soy milk, pure maple syrup, only 1 teaspoon of canola oil, all-purpose flour, and baking powder. Oh hello donuts 🍩 currently sitting at the doctors doing a lactose intolerance breath test & I’m dreaming about this situation ✨ last weekend Mitch & I went to Portland Maine & stopped at this cute little donut shop that had GLUTEN FREE options!! 🙊🤗 the donuts in the box were gluteny, but the chocolate one in my hand was gfree ❤️ before this I hadn’t had a donut in like 6 years!!! 😭 to be honest my taste buds aren’t used to anything that sweet/ oily so I could only eat a couple bites 🤷🏼‍♀️ but still, it was delicious & SO fun to explore the city & try something new 🍩 YUM!! New seasons of life are HARD. Living in a different state from my family soon is going to be HARD. But I’m reminded day after day that I don’t have to worry about any of it. I can place all of my anxious thoughts into God’s hands during these unknowns & be filled with a peace that only He can offer. Grateful is an understatement 💕 No matter what I walk through, I know that He’s walking right beside me.  I don’t have to look at the big picture, but just the next step. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Life is a crazy ride, but I’m ready. Ready to embrace change & new opportunities. Through it all, I turn to God. I run into His arms that are open wide. There is absolutely no hesitation in His love and affection for us 🙌🏼 He promises to equip us with everything we need each and every day & the plans He has for our lives far exceeds the plans we have for ourselves! Who’s thought this? 😂 ~ If it’s one thing I know to be true, nourishing your body is a marathon, not a sprint. The time and love you put into it, is the longevity and vibrancy you’ll get out of it! I used to legit only care about a flat stomach or I wasn’t eating healthy enough or working out hard enough. Little did I know about all my gut imbalances, food sensitivities, and the fact that a washboard stomach isn’t the key to... well, anything. 🤣 ~ 🥳 Celebrate your body at every stage, baby. It hears you and does so much for you on the daily that’s far superior than what you perceive it to measure up to (like in a bikini). ~ Instead, measure your health in happiness, energy, freedom and not inches and weight. We think we will let that all go once we achieve "perfection", but honestly, you have to let that notion go first and let your body shine.

BBQ Jackfruit Bowls have made there way into my regular meal rotation. They are really easy to put together and are soo good! I use canned jackfruit from @traderjoes roast it in bbq sauce and it tastes like pulled meat. Put it over a bed of riced cauliflower and added tomatoes, roasted bell peppers, cilantro, and guac. Blueberry Sauce—> I put a cup of blueberries in a pot on the oven & add a splash of water, & heat for about 5 min until blueberries ooze into a juice. Mix 2Tbsp of cornstarch with 2Tbsp of water together in bowl. Good morning and happy Thursday ! I've been a little lax about meal preppin latley but was feeling the struggle this week after getting back from holidays. Always so hard to jump back into "routine" and day to day chaos with kids after being away. Although my week is almost over I find I need meal preped options available on the weekend as much as the weekdays ! So made up a few of these stuffed breakfast peppers to see me through till Sunday ( if they last that long 😉) .  Vegitarian Stuffed  breakfast peppers🍳  4 small to medium size bell peppers cut and de seeded  6 eggs (3 with yolk 3 whites)  Chopped spinach  Diced red onions Cherry tomatoes cut into slices  Hot banana peppers  Green onion  Roasted red pepper hummus  1-2 tbsp nutritional yeast (optional) Salt and pepper to taste .  Whisk eggs  with a dash of milk (nut or soy if needed )  and add to the diced veggies. Add salt, pepper and nutritional yeast. .  Take your egg mixture and pour (carefully) into your bell peppers . Place your peppers into a baking dish or large muffin tin to stop them from falling over while cooking. Pre heat oven to 425° and cook covered  for approximately 30- 35 mins or until eggs are set. .  Additional add ons cheese for topping, ground turkey or chicken, veggie sausage or sliced avocado when ready to serve

Every 60 second you spend being upset is 60 seconds of your happiness you cannot take back. So what will you choose? ⠀ ⠀ Will be enjoying Friday Jr. with this easy Lemon Bundt Cake (Vegan, GF). May your day be filled with positivity and surprises.⠀ ⠀ Easy Lemon Bundt Cake 🍋⠀ -2 1/2 c + 2 tbsp gf flour,⠀ -3/4 c organic coconut sugar,⠀ -1/3 c maple syrup,⠀ -1/3 c coconut oil, melted⠀ -1/2 c fresh lemon juice,⠀ -1/4 c unsweetened apple sauce,⠀ -zest of 2 lemons⠀ -1 c cashew milk,⠀ -2 tsp baking powder,⠀ -1 tsp baking soda,⠀ -pinch of salt⠀ ⠀ 1. Preheat oven to 350F. Lightly spray a Bundt pan with some oil.⠀ 2. In a large bowl, combine flour, sugar, baking powder & soda, and salt.⠀ 3. In a separate bowl, combine maple syrup, coconut oil, lemon juice, apple sauce, lemon zest, and milk together. Slowly add in flour mixture and combine until there are no lumps.⠀ 4. Pour into pan. Bake for 45 min or until toothpick comes out clean. Let cool before removing from pan. Enjoy with a cup of tea or coffee!⠀ ⠀ #astepfullofyou
