FONDANT INGREDIENTS AND FUNCTIONS . . LIQUID GLUCOSE: helps to prevent crystallization of sugar, improve texture and keep the fondant soft. . GELATINE acts as a stabilizer. That makes your fondant pliable and contributes to its dough like consistency . GLYCERINE: keeps fondant soft and makes it really soft. Also keeps the fondant from drying out quickly in extreme weather by helping it retain moisture. . CMC/TYLOSE/GUM TRAGACANTH: Basically does the same thing. Act as a fondant stabilizer. Gives it the very much needed stretchy feel. However, excess can make your fondant hard, over stretchy and not pliable making it difficult to use in covering a cake. . EGG WHITE: replaces gelatine in it's own recipe so it acts as a binder/ stabilizer in fondant. . . Any questions😊👇👇👇👇 . .
