Im off on the weekends so I do all my grocery shopping either Friday or Saturday. This past weekend I decided to go to Better Health #betterhealth and I found all these great plantbased items #plantbased. I also went to Kroger which is where I got the avocado oil spray❤. I was super excited to see #kitehill made almond yogurt tubes. Noah was stoked. I used the #beyondsausage To make a veggie fajita chili with roasted peppers. Super Yum👅 I can't wait to try the coconut rice pudding. I like rice pudding but it's usually made with dairy so this was a score😊😁 next was the #sodelicious cheddar jack shreds. Now I used to love cheese and that was and sometimes still is a hurdle for me especially since I have failed to find or make a vegan cheese like. This cheese though was actually ok it gives me a American cheese vibe but its edible 😁 I used it on my Chili and in a wrap for my son. No complaints it even tricked my family some thought it was actually dairy lol❤😂😁. It's been a while since I've done a #tuesdaytip and since I've been freezing ❄️ all day, it felt appropriate to feature one of my favorite kitchen ingredients .... Frozen Veggies!  While fruits and veggies are a fabulous way to boost your nutrients, they can be hard on the budget, especially if your family is still learning how to enjoy and use them.  We are great veggie eaters but I prefer to stock my freezer!  Frozen fruits and vegetables are actually often a better option than fresh since they are frozen at their peak freshness.  And some even cook better than fresh!  Look for options that do not have added sauce or fillers (starches, salt, sweeteners) as those are not as good for you and are definitely less versatile. ⁣⠀ ⁣⠀ These are the veggies that you will see in my freezer on any given day: ⁣⠀ • green beans (the skinny type, they cook faster 👌) ⠀ • broccoli crowns or florettes (=less stalk)⁣⠀ • riced cauliflower (instant side when sautéed with butter or oil and seasoning) ⁣ • sliced okra (perfect for a quick stir fry)⁣⠀ • bagged kale or baby spinach (the chopped kind in a bag, NOT the block you remember from childhood 🤢)⁣⠀ ⁣⠀ We use frozen veggies most often as a side with lunch or dinner, but also sautéed with eggs for breakfast, as a quick veggie for lunch, roasted on a sheet pan dinner, added to a smoothie, in soup or chili, and so many more ways. Nutrition is EVERYTHING! You cannot out work a bad diet. I have always since as long as I can remember been a junk food junkie! My diet primarily consisted of high carbs, high fat, high sugar! We always love the things that are bad for us right? I, however don’t love the fatigue, depression and disease that come along with it.  SHORT STORY: My mother under went a Triple Bypass (open heart surgery) last April and the feeling I felt knowing that I might not ever speak to my mom again was paralyzing, since I live in Florida, she lives in Washington State. I didn’t know what to do. I was scared and worried! I felt helpless. So I hopped on a plane and went to see her, I’m so grateful she is still with me today! Anyways, she made it through safe and sound (thank god and the skilled doctors on staff) and is doing well. I guess what I’m trying to get at is that she is part of the reason why I’m doing this, I do not want to fall victim to the diseases that come along with eating shit food and I’m hoping she will join me sooner than later!  I’m by no means a nutritionist, I don’t know all the answers, hell I barely know the basics! But I’m learning and you can learn with me! I’m excited to start doing what’s best for my body by nourishing it with all the good wholesome foods! Still on this Indian food kick! Last week my roommate and I ordered Indian food for dinner which was absolutely delicious but they also gave me SO much rice. So I saved the leftover rice and decided to make my own curry to go with it! I bought Madras curry sauce from @mayakaimalfoods at Sprouts and kind of made up my own recipe for this potato and pea curry 😍 It turned out super delicious and was so easy - not the prettiest to photograph but 10/10 would recommend! ~ ~  Madras veggie curry: 2 tsp minced garlic 1/2 yellow onion, diced 3 large carrots, sliced 1 medium yellow potato, cubed 2/3 cup frozen peas 2/3 cup Madras curry sauce  2/3 ish cup water Rice (for serving) ~ Sautee the garlic, onion, and carrots in a large pot with some olive oil until translucent. Add in the potatoes and cook for about 5-10 more minutes. Add in the Madras curry sauce and 1/3 cup water and simmer for about 10-15 minutes. At this point the potatoes should be fully cooked through. Add in the frozen peas at the end of the simmering time so they don't get too mushy and continue cooking until they are heated through. You can add more/less sauce and water as this point depending on how you like your curry sauce! (I ended up adding an additional 1/3 cup of water.) Then just pop it into a bowl with some rice and you're done! This makes about 2-3 servings.
More one pan sheet pan action 📸  If it calls for less dishes, count me in 🙋🏽‍♀️ this is kitchen friendly to anyone who wants things done simple. 👍🏼 First, I will clean & cut the potatoes and boil them on the stove until fork tender. While that’s going, I’ll add the chicken and cleaned veggies to the foiled pan. Once the potatoes are done, I’ll drain and add them to the pan, then drizzle everything with avocado oil and seasoning (this time I used salt, pepper, and a mixed Italian seasoning of basil, thyme, oregano, and garlic). 🍽 I’ll stick it in the oven at 450° for about 30-40 mins. The chicken will cook in about 20mins, so I always have to take it out sooner, or you can add it to the pan about 20 mins in and have everything come out together! 😋
Dinner!!! 😋 was craving the avocado 🥑/guacamole and something spicy so roasted jalapeños 🌶 stuffed with guacamole 🤤 and sprinkled on some paprika 🤤 also roasted on the side a zucchini 🥒 and made turnip fries 🍟 🤤: Jalapeño stuffed guacamole recipe: 6 jalapeños cut in half (total 12)• Homemade or your favorite store bought guacamole recipe• Sprinkled with paprika•  Turnip and zucchini fries recipe: 1 whole zucchini• 1 whole purple Turnip• 3 TBS olive oil• 1 TBS pink Himalayan salt• 1 TBS paprika• 2 TBS mixed dried Italian herbs• 1 TSP cumin• 1 TSP turmeric• 1 TSP chili powder• Fresh cracked pepper to your liking 😊 •Roasted it all at 400 degrees Fahrenheit for 40-60 min, took the jalapeños out at 40 minutes and let the veggies keep roasting for 15-20 min extra 😋  #vegan #veganfood #vegandinner #veggies #veggiesmost #avocado #avocadoclub #green #veganrecipes #veganfoodshare #veganshare #veganfoodporn #easyvegan #postworkoutmeal #parsnip #zucchini #jalapenopoppers #jalapeno #roastedveggies #dairyfree #meatfree #crueltyfree

I love fruits and veggies though I definitely don’t eat them everyday... nor eat nearly enough.  Ryan takes his Opti greens religiously. I know the great benefits of taking them daily, but I’ve honestly never been able to get past the taste.  But adding a few raspberry tea drops to it makes them actually tasty. So cheers to taking them on a daily basis now and also less nagging from the fiancé. ♥️

La típica 😅😅😅: empiezas el lunes con ganas de volverte fit 💪💪💪. .  Pero luego te da hambre y empiezas a pensar en que vas a almorzar. 🤔🤔🤔 Como siempre 🙄🙄....lo primero que se te viene a la mente es el típico pollo a la plancha con ensalada.🤨🤨🤨 Que no está nada mal, pero si quieres variar un poquito o ya te cansaste lo mismo de siempre esta receta es para ti. 😋😋😋😋. . . Ingredientes: ▪140 gr. de pechuga de pollo (a la plancha o sancochada) ▪1/2 palta pequeña ▪80 gr. de lechuga ▪40 gr. de tomate ▪40 gr. de champiñones ▪20 gr. de espinaca ▪10 gr. de cebolla blanca ▪1 limón (zumo) ▪Culantro (a gusto, pero le da un buen toque 👏👏👏) ▪ Sal y pimienta (a gusto) * Las cantidades pueden variarse para ajustarse tus necesidades nutricionales. . Receta: Picar los vegetales en la forma que más se prefiera. Mezclar el zumo de 1 limón con un poco de agua, sal y pimienta para hacer el aliño de la ensalada. Mezclar los vegetales con la mitad del aliño y separar. Aparte empezar a deshilachar el pollo (para hacerlo más fácil se pueden ayudar de una batidora eléctrica, suena raro pero funciona 😅😅😅😅). Mezclar el pollo con la palta y agregar el resto del aliño. Mezclar con el culantro y la cebolla (de preferencia cortada en cuadritos). Finalmente servir el pollo junto con la ensalada (mezclar a gusto para poder disfrutarlo 😍😍😍). . . Información nutricional:  421 Cal▪36gr. Proteína ▪20 gr. Carbohidrato ▪24 gr.
