🇪🇨 Ecuador 🇪🇨 As soon as my husband came across a recipe for llapingachos, he knew that that was what we needed to make for Ecuador, as they are essentially potato patties stuffed with fresh cheese, and can you really go wrong with that combination? 🥔🧀💚 Many times served as a side dish, we turned our llapingachos into a delicious full dinner by including fried eggs, greens, and avocado slices, as well as topping them with salsa de maní (a savoury peanut sauce), a pickled onion & tomato salad, and aji criollo hot sauce—all of which were recommended by @laylapujol on her website. . Mixed veggies soup in coconut milk🥥 . . It turned out to be delicious and very filling.👍 Ingredients & Instructions Saute about 1/2 a sweet onion in Olive oil Add half a tomato and a small diced potato. Add 1/2 a cup of water and let it cool till all veggies are soft. Add salt and pepper. Cool and blend the veggies. Take about a cup or more( 1 used 2 cups) Of mixed organic mixed veggies and add it a hot pan with 1 tsp of Avacado oil. Once the veggies have softened a little add shriracha sauce. Add the blended veggies mix and 1/2 can of coconut milk, adjust the consistency according to your liking. Let it simmer for 10 mins and add cilantro. Le ''pudding'' est de ma création personnelle, alors voici la recette;  Au mélangeur: -1 paquet de tofu mou ( pas le soyeux, il devient trop liquide) - 4 cuillères à table de poudre de cacao - 1/4 tasse sirop érable ( ou plus au goût) -1 banane mûre - Un peu de lait d'amande pour la texture, selon la force de votre mélangeur  Pour le granola, la recette est tirée du livre formidable de La cuisine de Jean-Philippe, je vous conseille vivement de vous le procurer, vous ne le regretterez pas. J'attends aussi impatiemment le deuxième !  Donc vous mettez votre''pudding'' au fond de votre bol et le garnissez aux choix: granola, fruits, noix de coco, graines de chanvre, noix ou autres,bref, tout ce que vous avez sous la main !  Avec ce type de déjeuner, vous allez avoir un bon regain d'énergie jusqu'au dîner, sans inquiètude et c'est telllllleeement bon, on ne s'en lasse jamais. Cauliflower Gnocchi With Browned Butter Sage Sauce 👩🏽‍🍳 Tonight I felt like making what I call a 'Fatty-Healthy' dinner. Replacing potato with cauliflower and white flour with sprouted wheat flour, I got some healthy additions in. The browned butter sage sauce is the only 'fatty' part of the meal. Life is about balance, right. Right? Anyways swipe ➡️ to see the steps, recipe below. . . . Pan Roasted Cauliflower Gnocchi 1. Cut into pieces and steam a cauliflower until a fork can easily poke through 2. Place in processor (or blender) until a rice consistency is achieved. Try to squeeze water out of the cauliflower before blending 3. Add 1 egg and 1.5-2 cups of flour to food processor. I opted for sprouted wheat flour by @kingarthurflour to get maximum nutrients.  4. Blend until a soft dough is achieved...aka, not sticky. Add more flour if it's sticky, or water if it's too dry. 5. Break dough into palm sized balls. Roll dough so they become like logs, 1" is preferable. Cut into small pieces. During the rolling, use flour to avoid sticking 6. Bring water to boil and place gnocchi in. They're done when they begin to float. 7. Remove floating gnocchi 8. Heat skillet with 1 tbs of butter on med-high, place drained gnocchi into skillet with melted butter, single layer. Cook until browned. 9. For sauce, heat 6-8 tbs butter on med-high until melted, add 18 leaves of sage. Stir until sage becomes brown as crispy. Season with salt and pepper. 10. Pour sauce onto gnocchi, mix and serve! You can also add parmesan or other cheeses on top. Bon appetit!

If you are tired of rice-ing, gnocchi-ing, and pizza-crust-ing your cauliflower, may I suggest #aloomattargobi -ing it 😄 Aloo Mattar gobi - potatoes, peas and cauliflower sabzi/stirfry is something you can put together with things you already have in your pantry and fridge/freezer. That is if you are the kind that stocks up on some basic #indianspices too 🤭Do it, if you aren’t already!!! The spices used are warm spices like cumin and coriander, color from turmeric and chili or paprika. I have used store bought indian spice blend called #kitchenking , which is somewhere between a #garammasala and #currypowder . You can use either instead. In my opinion the flavors here come not just from the spice but by the mixture of onions, tomatoes, ginger and garlic pastes, which have cooked low and slow until caramelized and fragrant. That’s where the depth of flavor comes from. Dinner Dosa, you have my ♥️. Protein-packed crepes made with 2 (or maybe even 1) ingredient anyone?? Every time I make them I wonder why I don’t make them more often. TRY IT! ➕#Dosa: Soak 1c red split lentils + 1c white rice overnight (if you’d like you can use quinoa instead of rice or just double the lentils). Rinse and drain in the morning and add to a high speed blender with about 2c water (option to add 1/2tsp fenugreek seeds). Pour blended mixture into a bowl and leave it on the kitchen counter covered by a tea towel for the day (8 hours or so to ferment). Season with 1tsp salt (or to taste) and Lebanese 7 spice, garam masala or you favorite blend of spices right before cooking. Batter should be very thin, add more water if necessary. Kadai Paneer 😍🤗 -  A Punjabi dish that is rich in flavor and spices 😋. Takes you back home every time❤️❤️. Make it vegetarian or vegan, as you prefer, either way it’s a hit. To try it find the recipe below💁🏻‍♀️- Recipe (serves 3-4) Ingredients- 3tbsp cooking oil & 2 tbsp butter (or vegan butter) 1 large yellow onion (half diced and half chopped), 2tbsp ginger & garlic minced, 2 green chilies (use mild-medium), 1 medium green bell pepper diced, 200gm Paneer (or firm Tofu as vegan alternative) 2 medium tomato’s 1 bay leaf; 1 cinnamon stick  1tbsp tomato paste 1tbsp cumin seeds  1tbsp coriander seeds, powder & leaves (each) 1tsp cayenne powder  1tsp turmeric powder 1tsp Garam masala 1tsp cumin powder 1/2 cup water Salt to taste  3tbsp cream (coconut milk as vegan alternative)  In a pan, roast cumin & coriander seeds for 3-4 minutes, let it cool down & then crush it loosely using a mortar & pestle. On a high flame add 2 tbsp oil, add diced onions and bell pepper, sauté for 4-5 minutes & keep aside. Now add rest of the oil & butter, add chopped onions, chilies, ginger, garlic, bay leaf, cinnamon stick & roast for 5 minutes. Now add tomatoes, tomato paste, all powdered spices along with salt, and sauté for 5 minutes. Add water & cook for another 5 minutes. Now add the cooked onions, bell peppers, paneer & cream, crushed cumin & coriander seeds, cook it for 5 minutes .. and Kadai Panner is ready to be devoured. Garnish with some coriander (cilantro) leaves & serve it with a side of tandoori roti, Naan or Basmati rice. PICO DE GALLO SALSA (1 BOWL, 20 MINS) . INGREDIENTS 5-6 Roma tomatoes- Deseeded, Finley chopped 1/2 cup Onion-Finely chopped 1 Jalapeno -Deseeded if you want it mild, Finley chopped 1/3 cup Cilantro -Finley chopped 2 cloves Garlic- Finely minced 2 tbsp Lime juice 1 tsp Lime zest Salt- To taste Pepper -To taste 1/4 tsp Cumin powder-Optional . INSTRUCTIONS In a large mixing bowl, add chopped tomatoes, onions, jalapeno, cilantro, garlic, lime juice, lime zest, salt, pepper, cumin powder. Mix everything together until combined. Cover and chill for 20-30 mins in the fridge to allow the flavors to deepen. Meanwhile chop 1/4 onion in small cubes, put them in a bowl with 1 lemon juice. Slice 2-3 tomates, cubes also. Add some salt and mix. Continue chopping: cilantro, xoconoxtle and roasted nopales (first let them cool or you'll burn, like me). Mix everything. That's it. I have to eat protein so I add 90 gr of tuna that I boiled (medium rare, also you could eat it raw) and 1/3 avocado. I eat this separate but if you're not a vegetarian integrate them.
💮 CURRY DE COLIFLOR 💮... Siguiendo con el desafío pisciteriano de este mes probé hacer un curry con coliflor y la verdad es que hasta mis hermanas que odian esta verdura se lo comieron felices. En un sartén puse 2 cucharadas de aceite de canola, luego agregué cebolla picada y ajo, una cucharadita de curry, una cucharadita de garam masala, media cucharada de comino y sal y pimienta cayena a gusto junto a media lata de crema de coco espesa y media taza de cerveza pale ale. Se mezcla todo y se agrega la coliflor picada en trozos y se tapa por 15 minutos, luego agregar el apio en trozos y dejar por 5 minutos más destapado.
