RECIPE: VEGAN PAD SEE EW (aka SPICY NOODLES) by @alexafuelednaturally . INGREDIENTS: 1/2 yellow onion, thinly sliced 3 cloves garlic 8 ounces broccolini, chopped 1 bell pepper, thinly sliced 1 lb fresh rice noodles (found in asian market) or 1 lb dry rice noodles 5 tbsp soy sauce 1 1/2 tbsp sriracha 1-2 tsp chili pepper flakes (depending of preference of heat!) 8 ounces broccolini 2 tsp avocado oil (or oil of choice) METHOD: 1. If you’re not using fresh noodles and instead using dry rice noodles prepare the noodles according to packet instructions. 2. Meanwhile, mince the garlic and thinly slice the onion. Bring a wok or large pan to medium heat. Add the oil then add the garlic and onion and sauté for 4 minutes then add thinly sliced bell pepper and chopped broccolini. Sauté for 5-7 minutes. Add the chili pepper flakes and stir. 3. Add the noodles to the vegetables and mix… the noodles should softened after 2-3 minutes. 4. To a small bowl combine soy sauce and sriracha. Mix together then pour over the noodles. Fold gently to combine, for the sauce to coat the noodles evenly and to caramelize. Let cook for 4-5 minutes. 5. So this was a super random not thought of post. I just can't get over the colors in this salad I created. . When I was up in Byron I went to the general store and got a vegan super food salad, and when I came back home, all I wanted was to eat that salad over and over again. . So I took what I had available, and also I dont remember exactly what was in their version, and created my own. . The recipe is: 1/2 cup quinoa 1 bunch chopped kale 2 shredded carrots 1/2 butternut pumpkin 1/4 red and white cabbage 6 chopped radishes 1 chopped cucumber 1 chopped bell pepper Juice of 1 lemon 2 tbsp olive oil Salt and pepper to taste Top with almond slices and avo . This amount will last you about a week, its so filling and full of nutrients! Went to Netherworld with some friends last night, and we ended up getting a couple of plates to share. I got the nuggets again because I liked them so much last time, and this loaded fries was inhaled by us.

For dinner tonight, I tried out a recipe for Mexican pizza by @marleyficalora. It all started with a can of black beans. I empties it into a pot, seasoned it with pink salt, pepper, chili powder, and nutritional yeast, and mashes them up with a fork. I toasted corn tortillas in a 450 degree oven for five minutes. While they toasted, I got all my toppings ready: sweet corn, olives, tomato, avocado, onions, and jalepeño. Then, I assembled my pizzas, added lime juice and pink salt on top, and placed back in the oven for four minutes. The pairing of these flavors was intense. It was like that scene in Ratatouille. I'm an instant fan. I'll be making this again in the near future. For dessert, I made a blueberry banana smoothie bowl. I used blueberries, banana, and almond milk. I topped it with chia seeds, sliced strawberries, and non dairy chocolate chips. It was perfection. This was a perfect meal to get me over the hump. Been training real hard the past 6 weeks, So this morning i thought i would go for a PR up my local climb. Popped within the first five minutes and by the end could barely breath 👎🏻 I still PR'd, But about 59 seconds short of what I wanted. Maybe next month 🤷🏻♂️
Vegan ham and cheese melt on whole wheat bread with carrots, peas and berries. We try to limit how often we use substitute meat and cheese products but they're just soo good 🤷♀️ Little Man agreed. He would only eat some of his sandwich and refused everything else.
My new favorite meal at Disneyland ... cauliflower tacos At Rancho Del Zocalo. Substitute chips for rice and beans ask for no cheese and the whole thing is vegan. The green sauce on top is made with avocado, pasilla peppers, and tofu. It was a little spicy hot but so delicious. The cauliflower is also seasoned so well that it doesn’t even taste like you’re eating cauliflower. I’m already counting down to when I can eat this again. This was the best Sunday spent admits our new amazing friends, big and small at @thegentlebarn animal sanctuary. It was so humbling to meet this gentle soul named Forgiveness. His life started out as a byproduct of the dairy industry, like millions of other calves he was born to his dairy cow mother, was denied her milk that was meant for him, was forcefully taken away from her and kept immobilized in a veal crate to inhibit muscle growth so he would produce tender “gourmet” veal meat for human consumption. Luckily, him being weak, too sick to stand and deemed “unusable” for slaughter at 8 weeks old, turned out to be his blessing in disguise. He was rescued and brought to the amazing #thegentlebarn where he soon recovered and grew big and strong. He now stands at 7ft tall and weights over 3000 pounds. Not at all a natural healthy size, but he’s as healthy and happy as a commercial GMO cow of his kind can get. His gentle soul, his capacity for love and forgiveness is overwhelming and melts every heart he meets. Looking in his eyes, we wonder how we lived so long to blindly consume animals like him. Not bothering where it came from or what it took to land on our plates. Never truly questioning our traditions, our food culture and eating habits, being a victim of consumerism lured by marketing campaigns. But now we have come to look at the world through a different lens. It’s simple. We use our brains and we listen to our hearts. We choose compassion, we choose an open mind, we choose to learn the truth, to look beyond the norm, and we choose to change to live life by our core values.
