Hope everyone had a nice Saturday ๐Ÿ‘๐Ÿผ ๐Ÿ’œ this share via @ veganstars Zucchini Pancakes Makes 8 pancakes: ๐ŸŒฑ 1 big zucchini, grated and drained ๐ŸŒฑ 2 king oyster mushrooms, shredded ๐ŸŒฑ 1 clove garlic, use garlic press ๐ŸŒฑ 1 small red onion, finely diced ๐ŸŒฑ 2 stalkes green onions, sliced ๐ŸŒฑ 1 stalk celery greens, finely diced ๐ŸŒฑ 1 1/2 tsp salt (or according taste) ๐ŸŒฑ pepper to taste ๐ŸŒฑ 1 tsp chili flakes (optional) ๐ŸŒฑ 1 tbsp nutritional yeast ๐ŸŒฑ 150 g flour  In a bowl mix everything together until combined. Heat a pan on medium heat, spray with some oil, add 1-2 tbsp batter to make one pancake. Bake both sides until golden brown. I recommend to eat the pancakes with homemade tzatziki made from yogurt, grated cucumber, garlic, salt, pepper and a squeeze of fresh lemon juice. Makes about 25-30 70%+ dark chocolate  1/2 cup shredded coconuts ๐Ÿฅฅ  1/2 crushed almonds a mold . In a glass container place desire chocolate to melt in the microwave for about one minute, once is out carefully with a hand mitten take it out and stir the melted and unmelted chocolate with a table knife ๐Ÿด, the heat from the glass will continue to melt the chocolate that wasn’t melted inside.  Carefully but quick enough pour just a bit of chocolate into mold to allow yourself to add little bits of crush almonds and shredded coconut, you canse the “story” for that. After cover the rest of the individual molds  With more melted chocolate, *if you take too long the chocolate with slowly get cold and will start getting dried and chunky again.  Finally scrape the rest of the chocolate with the table knife and clean it back into the glass container with the rest of the chocolate. Refrigerate NOT Freeze โ„๏ธ for about 30 minutes and enjoy. Note: if you freeze, water particles get stuck on the chocolate before it dries and you will be left with gooey/sweaty chocolate ๐Ÿซ ๐Ÿ˜‚ so don’t do it. I was craving some golden crispy candied nuts but didn't want to wait for Christmas market to start. So I heated a pan added coconut sugar, some coconut milk and slowly melted the mixture on medium heat. I have added some cinnamon but you could also add cacao powder, turmeric and cayenne pepper or other spices of choice. Then add the walnuts and mix until they are covered with the sugar mixture. Beet salad ๐Ÿฅ— has anyone tried this Russian salad, navegan recipe below: 6 medium beets  4-8 garlic cloves (depending on how much garlic you like)  Salt & pepper to taste  4 tablespoons #veganise . Boil the beets for 60 to 80 minutes a little less than 1:20 hours, once boiled wait for them to cook down to the point where you can grab them and start peeling them. Shred them all in a vegetable shredder and add the garlic as well, shredded. Add salt to taste and a teaspoon of pepper and mix well until desire saltiness. Place the halves, flesh side down, on a parchment paper-lined or aluminum foil-lined baking sheet. Roast in the preheated oven for 30-40 minutes until completely tender and lightly browned. Once the pumpkin or squash is cool enough to handle, scoop out the flesh and discard the skin.  3. To steam the pumpkin or butternut squash in an Instant Pot or pressure cooker, pour 1 cup of water into the inner cooking pot and lower a compatible steamer rack or the trivet that comes with the Instant Pot into the inner pot. Place the pumpkin or squash halves in the basket or on top of the trivet, close the lid, and cook at high pressure for 12-14 minutes (for the Instant Pot, you’ll select the Pressure Cook or Manual button). Once the timer is up, perform a quick pressure release by manually releasing the steam valve. Once the pumpkin or squash is cool enough to handle, scoop out the flesh and discard the skin.  4. While the squash is cooking, bring a large saucepan of water to a boil and salt generously. Cook the pasta according to the box directions until al dente and drain in a colander.  5. Measure out 1 1/2 cups of the roasted or steamed pumpkin or butternut squash flesh. Reserve the rest for another use, such as a smoothie, curry, oatmeal, or a baked good.  6. In a high speed blender, add the 1 1/2 cups of the pumpkin squash flesh, along with the remaining ingredients (except for the pasta). Blend until the sauce is completely smooth and creamy, about 1-2 minutes. Taste for seasonings and adjust accordingly, adding more salt as needed, more miso paste for more umami, or more lemon juice for more acidity.  7. Return the cooked and drained pasta back to the saucepan and add the cheese sauce. Heat over medium heat until the sauce is well combined with the pasta and warmed through. Season mac and cheese

How could I say no to empanadas? ๐Ÿคญ . Empanada Dough -- 2 cups mashed sweet potato, 2 cups white whole wheat flour (feel free to use regular white flour if that’s what you have), 1/2 tsp salt, 1/4 tsp turmeric ๐ŸŒป . Lentil Filling 1 cup cooked lentils 1 package @uptonsnaturals_us chorizo seitan  1/2 cup frozen peas 1 tsp adobo seasoning 1 tsp maple syrup ๐ŸŒธ . Sautée seitan and lentils in a pan over medium heat until warmer through, about 3 mins. Add seasonings, sautéing until fragrant, about 2 minutes. Add peas, stirring and allowing to cook for 3 minutes to thaw. Set mixture aside to cool while preparing dough.๐ŸŒฑ . Add all dough ingredients to a medium mixing bowl and begin mixing first with a spoon and then with your hands until a smooth dough ball forms. If dough is too sticky, add a little flour at a time until smooth. If it's too dry, add 1 tbsp at a time of water until dough is firm and not sticky to the touch. Divide dough into 10 even balls. Take one ball to a floured surface and roll into a thin circle, place filling about 1/3 of the way on the surface on the dough, and carefully fold over so that one edge of the dough meets the other. Trim off any uneven or rough edges and seal edges with a fork by pressing the fork into the dough. Place prepared empanadas either in a preheated oven set to 400F for 20-25 minutes or in an air fryer for 3-5 minutes (3 minutes for smaller empanadas, 5 minutes for bigger empanadas). Melt the vegan butter (or margarine) and stir into graham cracker crumbs with the coconut sugar. Press into a springform pan about halfway up the sides. Place in the fridge until ready to fill (you can also bake this if preferred on 375 degrees for 10 minutes) Make the filling: Throw all the ingredients in the food processor or blender, and blend until smooth. Mexican Stuffed Peppers by @veguary.co ๐Ÿ’› Recipe: Ingredients: 2 cups cooked quinoa 2 1/2 cups salsa 1 cup corn kernels 1 (15 ounce) can black beans, drained and rinsed 2 teaspoons cumin 1 teaspoon ancho chili powder 1/2 teaspoon smoked paprika 1/2 teaspoon garlic salt 1/4 teaspoon salt 4 large bell peppers (any color), tops, seeds, and veins removed, and cut in half 1 very large or 2 smaller avocados juice from 1 lime 1/4 teaspoon salt 1/2 teaspoon hot sauce (optional) Water 1/2 cup chopped cilantro Lime wedges . Instructions: In a large bowl, mix together the first 9 ingredients well. Fill each pepper half with the quinoa mixture. Place each pepper half in the slow cooker and cook on high for three hours. While the peppers are cooking, prepare the avocado topping. Mash the avocado well in a bowl.  Add the lime juice, hot sauce, and salt and whisk until very smooth. Feliz Día de la Independencia de Mexico ๐Ÿ‡ฒ๐Ÿ‡ฝ disfruten enchiladas veganas ๐Ÿ˜ƒ . “Vegan Enchiladas ๐Ÿ’š" 4 potatoes chopped into pieces and boiled  3 carros chopped into pieces and also boiled  10-12 chopped mushrooms uncooked 1/2 tsp chili powder 1/2 tsp cumin, ground 3 Poblanos  2 jalapeño peppers ๐ŸŒถ  4 large white Swiss chard leaves kalewurks as well ๐Ÿƒ  1 cup vegan (mozzarella) cheese, divided Avocado and cilantro for garnish, (optional) Enchilada Sauce: 6-8 tomatoes (boil tomatoes and blend them to make the sauce along with  1 tsp cumin, ground 1 tsp garlic powder 1/4 tsp salt 1/2 tsp black pepper, ground 1/2 onion  Directions  Preheat oven to 425 degrees F and line rimmed baking sheet. In a small bowl, mix cumin and add to boiled potatoes, chopped mushrooms and boiled carrots with the mixture. Place on prepared baking sheet along with poblanos (3 green bell peppers + 2 jalapeños). Bake uncovered for 15 minutes. Remove from the oven, transfer potatoes + mushrooms, carrots to a medium bowl and peppers to another bowl Let them  cool down. Meanwhile, rinse swiss chard and shake off water. Lay flat on cutting board and remove the membrane, cut into 2 parts. Repeat the same steps with remaining leaves. You should end up with 8 "tortillas". With your Enchilada Sauce layer 1 cup on the bottom of 8" x 11" baking dish.  Remove the stem, seeds (leave some in, they are not very hot) and skin from poblanos (3 green bell peppers + 2 jalapeños). Some skin left on is fine. Cut into wide strips and set aside in a bowl. Bring out  cooled down potatoes mushrooms and carrots  mix with 1 cup Enchilada Sauce. To roll enchiladas: Place one "tortilla" at a time on a flat surface and fold in half lengthwise. For the Filling use 1/4 cup potatoe mixture and top with 1 - 2 poblano strips + 1 tbsp cheese and roll. Place into previously prepared baking dish and repeat this step with remaining Enchilada Sauce and 1/2 cup vegan cheese. Bake for 10 mins. Remove from the oven,

Made with roasted buckwheat and hazels, raw cacao powder / butter (@therawchocolatecompany), a small amount of coconut palm nectar, vanilla, rock salt. I used one of those flat-bottomed enamel bowls as my mold, putting the roasted buckwheat in first then melted cacao mixture topped with halved hazels. Result: a perfectly round, very crunchy and satisfying 'bar'. And for dinner a grain pasta leave a heart to be tagged on the recipe once I get it from the creator @matteocooking ๐Ÿ .Boil the water for the pasta and cook the spaghetti until “al dente” Put a drop of evo oil in a pan and heat it, then add some garlic and at low heat cook it for a few minutes until golden brown but not burnt, then add the colorful tomatoes (cut in halves) to the pan and sauteè everything for a few minutes. Once the pasta is cooked drain it (but keep some of the water where you cooked it) and add the pasta to the pan with the tomatoes, add some water (Two spoons to start) then sautee everything until it’s creamy and the water is turned into a light sauce (two minutes max) turn off the heat, add the grated Parmesan (how much you like) and mix everything until homogeneous.
