So, I did this thing. I signed on with this company because I have this really amazing, powerful, intelligent, beautiful friend who decided I needed to be a part of her team. I am so grateful she made that decision for me before I even knew. • Following me even for a short time, you’ve probably learned that I am obsessed with health, nutrition, beauty, and wellness. COMFORT FOOD I love simple cooking that tastes good too and as my friend Deb and fellow NT @rootstolivewell calls it 'food that hugs'. This is a recipe I have been making each week since I bought the book #eattobeatillness by @doctors_kitchen, the aubergine, walnut and lentil ragu. Here I have used it as the base for a plant-based or vegan shepherds pie. It actually tastes better than any meat based pie I have ever had, when I used to eat meat and is definitely more nutritious . The mash is cauliflower instead of potato with some added parmesan and black pepper for extra umami flavour. You can omit the parmesan if eating a vegan version and perhaps try nutritional yeast instead. Perfect for a weekend supper with a nice glass of red wine. Ooi, gente! Tudo bem? :) Hoje trazemos uma receitinha MARAVILHOSA que é a cara da infância/do Natal/da doçura! 😍 BISCOITINHOS AMANTEIGADOS! 💜 Essa receita é suuuper fácil e HIPER barata!! A gente gastou 80 centavos de ingredientes!! Isso mesmo!! Só 80 centavos! E uma receitinha rendeu 37 biscoitinhos. Numa conta simplificada, cada biscoito saiu por mais ou menos 2 centavos! INCRÍVEL, né? Então, vamos à receita! *Ingredientes: - 1/2 xícara de margarina - 1/2 xícara de açúcar - 1 xícara e 1/2 de farinha de trigo Lembrando que nossa xícara tem 200ml de capacidade. Outra informação importante é: o biscoito é conhecido por sem bem docinho, mas nós não gostamos tanto assim de coisas super doces, então usamos essa quantidade de açúcar. Vocês podem fazer com 1 xícara de açúcar se quiserem, aí vai ficar bem doção! Vai de gosto 😉 *Modo de preparo: Em uma tigela, misture a margarina com o açúcar até ficar homogêneo. É interessante que a margarina esteja bem gelada pra não atrapalhar o ponto da massa. Então, acrescente a farinha e misture até o ponto de amassar com as mãos. Você pode precisar de mais farinha. A ideia é que a massa não grude nas mãos. Unte uma assadeira com óleo e enfarinhe. Pré-aqueça o forno a 200°. Molde pequenas bolinhas e achate-as com um garfo. Você pode molhar o garfo no cacau pros risquinhos ficarem de outra cor! IMPORTANTE: não faça biscoitos muito finos, senão eles podem ficar duros depois de assados. Distribua os discos de massa na assadeira e leve ao forno por 15 minutos até que estejam levemente dourados na parte de baixo. O biscoito vai ressecar um pouco mais depois que sair do forno, então não deixe muito tempo! Creamy Lemon Alfredo by @rainbowplantlife 💛 Recipe: Ingredients 12 ounces tagliatelle or fettuccine ⠀ 1 tbsp olive oil⠀ 1 yellow onion, diced ⠀ 4 garlic cloves, crushed⠀ 1 tbsp fresh thyme leaves ⠀ 2 lemons: 1 lemon with the rind shaved into long strips; 1 lemon zest⠀ ⠀ Cashew Cream:⠀ 1 cup raw cashews, soaked in boiling water 1 hour ⠀ 2 garlic cloves⠀ 2 tbsp nutritional yeast⠀ 1½ tbsp lemon juice⠀ ½ teaspoon sea salt + more to taste ⠀ ½ cup + 2 tbsp water⠀ 1. Cook the pasta and drain. ⠀ 2. Heat oil in a large skillet over medium heat. Once hot, add onions and cook 8-9 minutes until soft & lightly caramelized. Add garlic, thyme, lemon rind for 2 minutes. Remove the rind. ⠀ 3. Pour in the Cashew Cream, followed by the cooked pasta. Toss gently to coat and heat through. Off the heat, add the lemon zest, tomatoes, basil, and pine nuts. Enjoy!

Flatbread Melts by @plantbased.traveler 💛 Recipe: ⠀ Ingredients:⠀ 2 whole wheat flat breads⠀ 1/2 block organic tempeh ⠀ 1/2 cup pinto beans⠀ 1/3 cup pineapple salsa ⠀ 1 cup chopped kale ⠀ 1/4 cup vegan cheese ⠀ 1 tbsp taco seasoning⠀ 1/4 cup pineapple⠀ ⠀ Instructions:⠀ Grind up tempeh to achieve a minced texture and chop up kale and pineapple. ⠀ Add tempeh, taco seasoning and salsa (if you don’t have pineapple salsa, any other kind will work as well) to a non stick pan and cook for a few minutes on medium to high heat. Stir in pinto beans, kale and pineapple. ⠀ Split vegan cheese and tempeh mixture onto one half of each flatbread, flip the other side over and bake in a non stick pan on both sides (medium heat) until golden brown. I have a bit of a broccoli obsession 😍🥦 really love it. This was stir fried broccoli (which I steamed at first over the rice while it cooked) with red onion, mushroom and cashews. I pressed the tofu and coated in flour before frying it until crispy and golden, then coated in sesame seeds. The sauce was soy sauce and some rice vinegar 😋 sometimes I add some cornflour to thicken if needed.
