KOUSMINE MONDAY - pt. 5 🌿 ————— In the last three chapters we have talked about nutrition. Let’s go on with the Kousmine’s method second pillar: acidosis & urinary Ph control 💧 ————— Acidosis is quite dangerous for our organism: it can causes chronic tiredness, bad concentration, cramps & muscular pain, joint pain, recurring inflammations, candida, osteoporosis, water retention & cellulite, kidney stones. Acidosis can be monitored with litmus tests (they are sold in pharmacies): all you have to do is urinating on the test (after breakfast & before lunch & dinner) & calculating your acidosis through the color of it. The Ph of a healthy organism corresponds to 7,3. Acidosis can be avoided with a good alimentation, but there are other causes, such as pollution, sedentary life, endocrine functional distress, physical effort, renal distress, chemical drugs & psychological states (anger, fear, etc.). Acidifying foods are: all the animal products, toasted peanuts, nuts, bananas, pasta, cornflakes. Anti-acidifying foods are: fruit (except for bananas & cherries), vegetables & beans. We don’t have to eliminate acidifying foods, we have to balance them with anti-acidifying foods. More informations can be found in: Thomas Remer, PhD; Friedrich Manz, MD, “Potential renal acid load of foods and its influence on urine pH”, in Journal of the  Dietetic American Association, July 1995, pp. 791-7. In my stories you can read some tables about acidosis & foods, but they are written in Italian. When I first went plant based I used Cronometer a lot to track nutrients. I did it on a few occasions when I nailed, or almost nailed, my daily dozen (from Dr Greger’s How Not to Die) and found that I hit my macros and micros all right ticking off the different foods off Greger’s list. Ticking off key ingredients is so much easier than weighing and measuring! I still use Cronometer occasionally but not when I know I’m going to be good with my daily dozen. Just WOW😍😱 ° ° ° So on the 14th me and my bestie @lydiajervis visited @eatgenesis to celebrate galentines day🌹 first of all the restaurant just looks great. I mean it PINK😍😊 second of all the staff were super super friendly.... Chocolate Hazelnut Cake by @klaraslife ❤️🍫 200 g hazelnuts, ground 200 g all purpose flour 60 g dark chocolate pieces/chunks 200 ml of vegan milk (oat, rice, almond, soy) 50-100 g of coconut blossom sugar 150 g softened vegan butter 1 tbsp of baking soda 1 tbsp vinegar 1 packet of tartar baking powder 2 tbsp apple sauce Chocolate frosting 80 g dark chopped chocolate, optionally with hazelnut bits 3 tbsp oatmilk  Preheat the oven to 180 ° C/350F, grease and dust the baking tin/cake form. Mix flour, nuts, chocolate, baking powder, sugar, baking soda in a bowl. Beat the butter with the hand mixer until creamy white (takes approx. 5 minutes) Add apple sauce and mix. Add flour mixture, milk and vinegar and mix quickly. Don’t over mix. Pour the batter into the cake form and bake for about 40-45 minutes. Toothpick sample before removing the cake from the oven. Allow to cool in the tin for 5-10 Minutes before turning out onto a wire rack to cool completely. Melt chocolate in the microwave or above the water bath. Allow to cool briefly and stir 3 tbsp oatmilk. Pour over the cake and let it cool. Slice to serve.

Dank Vanessa kam dabei mein erster erfolgreicher Action Shot heraus.♥️😄 ♥️♥️♥️Dafür braucht ihr:  100g (glutenfreie) Haferflocken  1 Banane  Circa 300ml Milch nach Wahl (bei mir Hafermilch) 150ml Wasser  Optional Süße Zimt 2 EL (Soja) Quark  1 Handvoll Schoko Chips  1 Handvoll Blaubeeren und Müsli als Topping ♥️♥️♥️Die Banane mit der Gabel zerdrücken und mit den Haferflocken kurz anrösten. Mit so viel Wasser/ Milch aufgießen, bis alles gut bedeckt ist. So lang köcheln, bis die gewünschte Konsistenz entsteht. Anschließend Schokochips dazugeben, 2 Löffel Quark unterrühren und mit Zimt und Reissirup abschmecken. Als Topping gab’s noch Blaubeeren, Müsli und Erdnussbutter. Das war so lecker und das gemeinsame Fotografieren mit Vanessa hat so viel Spaß gemacht!😍Ich kann echt noch einiges lernen!😂Was steht die Woche bei euch an? (German below) Tagliatelle are my best pasta friends🤗. I love them al dente and when the sauce lays itself around the pasta, I’m in heaven😍🤤. Today I made them with a champignon cream sauce. What is your all time favorite pasta sauce? . The mushroom sauce is made very easy: chop 500 g champignons as you like, dice one onion, dice one garlic clove, chop some parsley. Then sauté the champignons in vegan butter, add the onions, then the garlic. Sauté, until the ingredients start to get brown. Season with soy sauce, pepper, thyme, juice of a half lemon. Add 2 cups vegetable broth, let simmer and reduce for about 10 minutes. Add 1 cup soy yogurt and 150 ml oat cream (cuisine). Don’t boil anymore! Garnish with parsley and put the tagliatelle in the sauce. Give it a stir and then enjoy with a green salad 💚🤗🤤. . . Tagliatelle sind meine liebsten Pastafreunde. Ich liebe sie al dente und wenn sich die Sauce so schön drum legt, bin ich im Himmel😍🤤. Heute hab ich sie mit einer Champignon-Rahm-Sauce gemacht. Welche ist eure allerliebste Pastasauce? . Die Pilzsauce ist ganz einfach gemacht: schneidet 500g Champignons so, wie ihr mögt, würfelt eine Zwiebel, würfelt eine Knoblauchzehe, hackt eine Handvoll Petersilie. Bratet die Pilze in etwas veganer Butter an, gebt dann die Zwiebel, danach den Knoblauch dazu. Anbraten, bis alles leicht bräunlich wird und mit Sojasauce, Pfeffer, Thymian und Saft einer halben Zitrone würzen. Gebt zwei Tassen Gemüsebrühe dazu und lasst alles etwa 10 Minuten einkochen. Gebt eine Tasse Sojajoghurt und 150 ml Hafersahne dazu. Bitte nicht mehr kochen! Nun noch die Petersilie hinein und eure Tagliatelle auch. Alles in der Pfanne verrühren und dann mit einem grünen Salat genießen 💚🤗🤤.

Salut toi,  Cette semaine va être riche en post vegan food et je vais te partager toutes les petites adresses que j’ai découvert ces dernières semaines voir dernier mois.  On commence aujourd’hui avec @utopia_restaurant_vegitalien qui est un nouveau restaurant vegan qui a ouvert ses portes il y a 1 mois à Nice.  J’en avais entendu parler grâce à ma copine et esthéticienne @joly.cindy (@cind_ethique compte pro) 😜 et il me tardait d’y aller.  J’ai profité du séjour de mon petit frère sur la côte pour tester 2 plats en une fois et ça a été un sans fautes !  J’avais pris un faux filet et lui des pastas alla carbonara et nous avons été totalement conquis par ces deux plats.  Ça a été un bonheur gustatif ! La cuisson, le goût, les saveurs étaient parfaitement maîtrisés.  Et je ne vous parle pas de l’ambiance qui est juste superbe. Les gérants sont adorables et gros point positif le restaurant est ouvert le soir! Also I couldn’t wait to show u this recipe that I got from the one and only @biancazapatka, she is incredible. Load of drooling and delish recipes on her feed🌱♥️ so I gave a try to her pancake 🥞 recipe 🤗  INSTRUCTIONS . 1 and 1/2 cups whole wheat flour (200 g) 1 tsp baking powder 1 and 1/2 to 2 cups soy milk (375-500 ml) 1 tbsp coconut oil 1 tsp vanilla extract Half cup flax seeds . . Blend everything together until smooth, safe 1/4 to mix with pesto sauce. Start by drawing lines of pesto/pancakes mixture then add the normal pancakes batter. Pan fry until golden brown. Cook spinach until soften and add vegan yoghurt and garlic, fill the crepes with the spinach mixture and top with mushrooms and tahini 🌱 . . Cette petite baie vient du Brésil et est considérée comme un super aliment car elle est gorgée d’antioxydants, de fibres, de vitamines et minéraux. L’avantage avec les bowls c’est que vous pouvez y ajouter tous les toppings qui vous plaisent afin de créer des recettes hyper gourmandes et très instagramables! This bowl is a caprese pasta - so easy and so fresh especially when I used our homegrown tomatoes and basil 🍅🌿If you want to invoke feelings of summer try this! You can also make it as a salad if you want. While I put on the gf spaghetti to cook, I added the following to a bowl: 5 plum tomatoes diced ; small handful finely shredded basil leaves; 1 tbsp capers; some torn vegan bocconcini; 2 tbsp olive oil and 1 tbsp balsamic glaze. Mix the ingredients and when the pasta  is cooked and drained add it to the caprese mix and stir through. Divide between bowls and before serving, crack some pepper over the top and add sea salt and/ or vegan parmesan if needed. INGREDIENTS for the sauce; 1/2 red capsicum 1/2 brown onion 1 clove garlic 1 can chopped tomatoes 1 tsp Italian herbs 1 tsp chilli flakes 1/2 tbsp maple syrup 1 tsp apple cider vinegar Salt & pepper to taste DIRECTIONS; Place all ingredients into a blender and pulse on high until smooth. Cue the drool 🤤 • • •  Vegan muffins by @gerarddms 💛 Recipe:⠀ Ingredients 1 cup flour⠀ 1/3 cup cacao⠀ 1/3 cup vegan yogurt⠀ 1/3 cup plant based milk ⠀ 1/2 cup cane sugar⠀ 1 tbsp baking powder⠀ pinch of salt⠀ chocolate chips⠀ ⠀ How to make:⠀ In a bowl mix flour, baking powder, cacao and salt.⠀ In another bowl mix yogurt, sugar and plant based milk.⠀ Add wet ingredients to the dry ones and stir until well combined. Add chocolate chips to taste, the more the better ⠀ Spoon the batter into the muffin pan (less than half or for a big muffins, fill right to the top) , add more chocolate and bake at 180ºC (350ºF) for about 15-20 minutes or until a toothpick inserted into the center of a muffin comes out clean. Enjoy!

Spread on a baking sheet, and bake for 30 to 40 minutes, until browned and crunchy. Watch carefully the last few minutes to avoid burning. VEGAN GARLIC BREAD 🍞 ⁣ Garlic bread is the best isn’t it? I mean is there anyone who doesn’t like garlic bread? If so, I’ve never met them.⁣ It’s just a pity when you realize that a lot of restaurant garlic bread is not vegan! What to do? Make it yourself !!⁣ Recipe below 📝👇🏻⁣ ⁣ INGREDIENTS:⁣ 🔻2 large garlic bulbs⁣ 🔻1/2 cup plus 2 tablespoons olive oil, divided⁣ 🔻1/4 cup fresh basil, optional, or parsley⁣ 🔻1/2 teaspoon salt, plus more to taste⁣ 🔻Dash red pepper flakes, optional⁣ 🔻1 loaf vegan Italian bread⁣ ⁣ INSTRUCTIONS:⁣ 1. Preheat the oven to 400°F. ⁣ 2. Remove one garlic clove from one of the bulbs and set it aside.⁣ 3. Cut the tops off of your garlic bulbs, then arrange each on a sheet of foil. Drizzle each with a tablespoon of olive oil, then loosely enclose in the foil.⁣ 4. Roast the garlic until the cloves are soft and browned. ⁣ 5. Remove the garlic from the oven, loosen the foil, and allow the bulbs to cool for a few minutes. Leave the oven on.⁣ 6. When the garlic is cool enough to handle, squeeze the bulbs to extract the roasted garlic. It will be super soft.⁣ 7. Place the roasted garlic into the bowl of a food processor along with the raw garlic clove, 1/2 cup of olive oil, and salt. Blend until smooth.⁣ 8. Add the basil and pulse the food processor until it is finely chopped. ⁣ 9. Taste test and season with red pepper flakes and additional salt if you like.⁣ 10. Unlike fossil fuels, it is difficult to look for alternatives: people have to eat. A substantial reduction of impacts would only be possible with a substantial worldwide diet change, away from animal products.” _ Professor Edgar Hertwich, the lead author of the report, said: “Animal products cause more damage than producing construction minerals such as sand or cement, plastics or metals. Biomass and crops for animals are as damaging as burning fossil fuels.” _ The recommendation follows advice last year that a plant-based diet was better for the planet from Lord Nicholas Stern, former adviser to the Labour government on the economics of climate change. _ The panel of experts ranked products, resources, economic activities and transport according to their #environmental impacts.
