Had half a head of iceberg lettuce in the fridge and it actually was frozen! ☃️ So the idea of salad for dinner went right out the door BUT then we remembered Julia Child cooking all sorts of lettuces and decided to give that a try! Coconut Lentil Curry ✨ _____________________ Confession: I’ve eaten this meal every day this week 😳 It’s a perfect one pot meal for leftovers/meal prep/feeding a fam & I swear it gets better after sitting for a night 🙌🏼 Its filling from the lentils, but the coconut milk for creaminess ensures it doesn’t feel too “heavy”. & would you just loooook at that color 😍🧡 _____________________ METHOD: Start by heating a little neutral oil in a large skillet or pot. Add 1 tbsp cumin seeds, 1 tsp ground coriander, & a pinch of cayenne 🌶. Let toast for a min. Then add a couple cloves minced garlic & some minced ginger & cook another min. Pour in a 28 oz can crushed tomatoes 🍅 , 3 cups water 💧 , 1 cup dried lentils (I used green - rinse first), & 1 tbsp turmeric. Stir, cover, & simmer for 30 mins or until lentils are tender. Uncover & add 1 can coconut 🥥 milk plus salt 🧂 & pepper to taste. Let simmer for a couple more mins to reduce slightly. Turn off heat & stir in some fresh lemon 🍋 juice & cilantro 🍀. EXPLAINING why bad things happen to good Christians 🤔 I've heard WAY too many times that God "allows" bad things to happen to us, or even causes them to I believed this so strongly that I turned to atheism 🙄 But then I learned about FREE 👏 WILL 👏 God gave us as humans the right of free will 🙆 God so loved us that he didn't want to force us to love or follow him This also means that we have the free will to do bad things, and others have the ability to do bad things to us 🙅 Your illness may have been caused by circumstances or people in your life that were made with free will Your ex was horrible because he chose to be 🙄 You didn't choose to struggle with anxiety or depression, bit a CIRCUMSTANCE of free will may have caused it (chemical embalances are also something that happens because of MANY different things)♥️ God isn't CAUSING these things, but he did give us free will, allowing them to happen Why doesn't he stop it? The only way to end all evil is to end the human race To send Jesus down here and finish it, and God's not ready to do that♥️ As a friend of mine once explained "imagine God's plan like a cup, God's plan is inside of the cup. is the air stuck in the cup? No it can get out or can stay in and roam around. In that cup you can make decisions that alter shift where you are in God's plan for you, you can also get out of the cup and do whatever you want. Other air can get in and disturb that cup. Germany takes cake very seriously. Since regermanicizing I've learned how to cook vegan versions of foods I've never actually eaten before. This is one such case. Now, none of the cakes in shop windows ever appealed to me visually aside from this. It's called 'Bienenstich', that means Bee Sting. It's a yeasty dough filled with some kind of cream, and topped with a crisp honey candied toasted almost topping... Since vegan honey is so easy to come by now, we gave it a go. Instead of cream, this one is filled with kind of a faux almond honey meringue. :) Experiment successful.
Did someone say Jaffa nicecream?🍊🍫 You guys are going to want to make this one!🤪 I was honestly never much a fan of Jaffa as a child as I found the orange flavour a little too intense, but this was DELIIISH🙏 Thick, creamy, chocolatey with a hint of orange🤤 Recipe below✨ Blend 3 frozen bananas, 1/2 an orange (peeled), 3 tbsp of cacao powder and 2 tbsp of choccy protein (you can totally sub this for extra cacao!). Enjoy!🌈

Herbes de Provence Sprouted Red Quinoa, Flax, and Fava Bean Flatbread with Creamy Homemade Soy and Hemp Ricotta, Tarragon and Roasted Radishes. (Recipe post!) . 100% whole-food, plant-based, refined salt, sugar, and oil-free; gluten-free; and a 100% perfectly delicious dish for a Spring brunch! . This is probably one of the easiest flatbread recipes I know. It's pretty hard to mess it up and is so versatile. . To make the flatbread: 1 1/4 cups of red quinoa 1/2 cup of fava bean flour 1 Tbsp white miso 2 Tbsp hemp seeds 2 Tbsp ground flax seeds 1/4 tsp freshly ground black pepper 2 Tbsp Herbs de Provence Soak quinoa in water for 12 hours. Drain, rinse, and allow to sprout for another 12 hours. Rinse quinoa and add it with the remaining ingredients to a high speed blender with enough water to create a thick pancake batter consistency. Blend and then allow mixture to rest for 15 minutes. Pour mixture onto silpat or parchment-lined baking sheet and bake at 375F for about 25 minutes or until no longer moist in the center, flipping once during baking. . Tip: I've found it's easier to bake two long, slender flatbreads (as pictured in this post) instead of one larger, round flatbread to ensure flatbread cooks thoroughly in the center without burning the edges. . Top baked flat breads with plant-based "ricotta"-style cheese (I made my own soy and hemp ricotta!), fresh herbs like tarragon and halved radishes. Broil in oven on high until the radishes are just beginning to brown. Allow to cool to room temperature and serve with lemon wedges, chopped almonds, and fresh tarragon leaves. . Simple. Seasonal. And the only reason there's any opportunity here is because this land was stolen from the original people and then later built by those who enslaved! Just because other countries have problems doesn't mean this country isn't still absolute shit. Maybe it wouldn't be such a cesspool if it wasn't full of bigoted, racist, homophobic, xenophobic, sexist, misogynistic, White Supremacist mass shooters. Just a thought. People in this country need to learn tolerance and understanding. Just because someone's different from you, doesn't mean they're wrong or bad. They're just different. There's 9 billion other people in the world and not everyone is like you! Get the fuck over it. I try to be a really understanding and a non judgmental person, but I have no tolerance for discrimination. The crazy thing about this whole thing is I'm not even Muslim. I'm just studying Islam. I still believe in God, but I don't subscribe to one specific religion per si. Regardless, it shouldn't matter what I choose to believe. I'm 27 years old. I'm a fucking adult. I'm allowed to make my own choices now. When we are born, our parents pick everything for us. Our name, our lifestyle and of course-our religion. But, when we get older, we get to decide for OURSELF what is right for US. Not our parents, not our family, not our country, not society. Us and us alone. I am not obligated to be a Christian. Or any other religion, for that matter. I have a right to use the brain that God gave me to decide what is best for me. Let me just be clear. Calling someone a "fucking rag head" is a statement made out of ignorance, bigotry and racism. And when I say ignorance, I mean severe levels of it. Imagine calling yourself a Christian, then turning around and in the same breath calling someone a racial slur. Yeah, you're really the emulation of Christ. I aspire to be just like you. 🙄 And just for the record, Christian woman wear hijabs, TOO! Mary wore a head scarf, for God's sake! I'm talking about the mother of Jesus, who is the figure head of the entire Christian faith!! Christians also used to cover their heads up until recently. Muslims just keep up the tradition.
