Tempeh beets burgers are ready! Do you wanna try them? 💚 Here is another fun and yummy way to eat tempeh, pals! Recipe 👉🏼 227 g (8oz) organic tempeh (I use the one from Trader Joe’s), 3 tbspn flaxseed meal soaked in 5 tbspn water for 12 min., 1/2 cup organic chickpea flour, 1 medium cooked beet (about 2/3 chopped cup, swipe for beet picture to get an idea of the beet’s size I used), 1 tspn salt, 1 tspn taco seasoning, 1 tspn creole seasoning, pepper to taste, 1 tspn olive oil. Mix everything but the oil in the processor till you have small chunks (swipe for video of raw burgers), form 7 medium size patties (guessing this is perfect for 4 large ones), warm up your saucepan, add the 1 tspn olive oil and sauté the burgers for 3 min on each side. Even my hubby loves them and he is not into tempeh so much. Buckwheat Almond Crust Tart With Sweet Potato Chocolate Ganache via @delicious_and_healthy_by_maya Ingredients Crust 1 cup rolled or steal cut oats 1 cup raw buckwheat groats 1/2 cup almonds chopped (I used flaked and silvered ones) 2 tbsp coconut butter 3 tbsp agave or maple syrup 1 tsp maca powder (optional) 1/2 tsp pure vanilla powder 1 pinch salt Chocolate Ganache 2 cups cubed and steamed sweet potato 1/4 cup melted cocoa paste (or cocoa butter) 1 cup almond milk 1/2 cup agave syrup 1 tbsp coconut sugar 1/2 cup cocoa powder tiny pinch of salt 1 tsp lemon juice 1/2 tsp burbon vanilla powder 1 tbsp cashew butter x Method 1. Mix oats, buckwheat, almonds and salt and process in a food processor until buckwheat and almonds are coarsely ground 2. Add the rest of crust ingredients and process a bit more until the mixture is evenly moist. It will be a bit crumbly. Add more sweetener if needed 3. Press the mixture in a silicone mould (I used the bread tin) making the bottom thicker then the sides. The mixture will be pretty crumbly, mostly thanks to buckwheat groats and I was afraid it would all miserably fall apart, but the shells came out nice and firm and the buckwheat groats were beautifully crunchy after baking 4. Bake for 18 min on 175 Celsius 5. Leave it to completely cool and firm up 6. Prepare the ganache. 7. To prepare sweet potato, cut it in cubes and steam for 10-15 minutes, until soft. To melt cocoa paste, place it in the bowl and steam placing it on the pot with boiling water. The melting process shouldn’t last longer then 5 minutes 8. Now, place all the ingredients in the high speed blender and blend until completely smooth. Transfer into the crust and refrigerate for at least an hour. 9. If you’re after a super quick dessert, you can simply serve this ganache in cups, cooled overnight. It will get a mousse-like consistency. Incredibly delicious, and nobody will believe you that it’s sweet potato

Starting at the center of the pic is Wood Bone wings w/ seasoned fries. Island Mac & Cheese (left). Island cheese steak right. BUT the best sandwhich (WHICH I DIDNT TAKE A PICTURE OF 🤦🏻♀️) was Nyla’s sandwich. She ordered a fried Chk’n sandwich with tangy buffalo glaze. That sandwich was SLAMMING!! If you’re in Miami (little Haiti) try the chk’n sandwich. 😋
Zoodles are a great way to add volume to your bowl, but let’s be real, it doesn’t actually have that pasta texture/taste! . I would never recommend anyone only eating 40 calories of zoodles or a 60 calorie “pasta” option for lunch/dinner, but nothing wrong with adding these to increase the portion size without upping the calories. (I always use this in addition to a healthy carb source) They don’t have too much fiber like some low cal noodles, so no stomach aches over here 👍🏻 . 🍝Thank you @allnewdles for sending me a few different flavors of their low calorie, gluten & dairy free, low carb Konjac noodles. Each flavor comes with a vegetable packet and a sauce packet that you can add! I used with tomato flavored packet and added them to my sweet potato, tempeh, and veggies stir fry.

Let’s play a game! It’s called What’s In My Fridge. Lol I’m fresh off of spring break and had little to nothing in my fridge and freezer and I threw this lil gem together. I saw these shirataki noodles in my local grocery store a while back and decided I’d give them a try as I love pasta and have been looking for various noodle replacements. Zucchini noodles are my fav replacement but they haven’t been at my store recently 😭, brown rice noodles are always a solid bop but maybe not so much for those who are avoiding carbs. Well I’m happy to announce that these noodles have only 4g of carbs, 0 calories, 0 sugar, 0 fat content. The noodles have no taste on their own so you can cook them however you’d like to get whichever flavors you prefer. I sautéed my veggies in like a tsp of olive oil with garlic. The frozen green beans were this color coming out of the package (lol no I did not overcook them. They just been in that freezer for a lil too long) 😂😂✊🏾. As always I left the spinach raw to get the most nutritional value. I added a lil bit of cilantro, turmeric, minced ginger, thyme, ground cumin, parsley (like a lil lil lil), onion powder because I didn’t have any fresh onion or scallions, pink salt, Goya adobo (lol just a dash’ll do), and one tsp of @oceanshalo soy free sauce soy sauce. Stir fried and violá bon appétit!
#plantbased meatloaf made out of @beyondmeat , gluten free brown rice/quinoa breadcrumbs, peppers/onions, homemade flaxseed “egg” (gel), sautéed kale, mashed cauliflower, and homemade gluten free gravy. The sauce on the vegloaf is sweet baby rays because I was in a hurry. Looking forward to making a healthier homemade bbq sauce next time around. ☺️💃🏾
Curry On, nothing to see here but veggie curry & cilantro lime rice. Curry includes kidney beans, mushrooms, kale, spinach, carrots, cauliflower, garlic, cilantro, green onion. As always, add the leafy greens after everything is already cooked so that you’re keeping the most nutritional value possible. Just let the sauce wilt it heat isn’t needed.
