I love onions and so I’ve been meaning to try these ✨Stuffed Onions✨ from @medicalmedium ! I made them fat-free (many of his recipes are interchangeable that way) as I am having a fat-free day today with kicked up detox (cue the irritability and depression lol!). What a bang-up option for dinner. . I steamed the onions in my steamer instead of using the oven and broiled them after they were stuffed. Paired it with a salad and 👍🏻! . . tomorrow i’m leaving to spend time at home for a bit this summer! so this is my Cleaning Out The Fridge meal;) a buddha bowl stuffed with numerous surprising pairings (brussel sprouts and kimchi lotus root???) anywho here’s what’s up: THE BEST tofu marinated in fermented red bean paste, garlic, ginger, and balsamic vinegar, then seared - artichoke heart - steamed broccoli and brussel sprouts - sautéed oyster mushrooms - roasted celeriac - homemade kimchi lotus root slices - olives - julienned carrots and chayote - brown rice - topped w scallions, cilantro, purple and white pansies, and budding flower pods (!!!) 🥦☀️🌸🥕would definitely not have tried to pack so many different things in one bowl if it weren’t for the need to clear out my fridge but i’m SO glad i did because this shit was 10/10!!!
Easy dinner idea: Rice pilaf with roasted carrots, dill and pine nuts. Not sure if I even needed the tahini but it was all very good! 🥕🥕🥕🥕🥕🥕🥕🥕🥕 . I leave carrot skins on, slice about 1/2” thick, roast in the oven at 375 for about 20-25 minutes until tender, flip halfway.
VEGAN QUESO-CHORIZO DIP from @honeybeesnyc, which is the newest vegan restaurant in the East Village. 🔥🔥🔥 Walk up the stairs from the entrance on Avenue A, and you will instantly feel like you stepped back in time to a speakeasy during prohibition. The decor is impeccable, and no detail is left unturned; down to the ceiling fans. A southern vegan restaurant, with cocktails featuring bourbon and whiskey. For #tacotuesdays decided to make a tempeh wrap🌱 ⠀⠀⠀⠀⠀⠀⠀⠀⠀ I air fried the tempeh, added greens, cucumber slices, roasted peppers, green olives and some hummus. Wrap is a sprouted whole grain herb and garlic tortilla😋 ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Quick and so so good. My fav type of meal to make 😁
