Even though we had leftovers, I was craving pizza! So... pizza it was! @papajohns was perfect! I ordered a medium (6$ carry out deal)! I typically get the pizza well done, but didn’t because I added vegan mozzarella and finished it off in the oven- it was perfect! Extra sauce, no cheese, with pineapple and onions! 🤤 I’m so happy for all the cheese alternatives because I would go CRAZY without it! 😝 Ilove cheese so much it’s unhealthy. I had a salad (garden mix) with some cashews, vegan cheese, and oil/balsamic for the dressing. 😋 it helped me not eat so much pizza... yes I know I still had 3 slices, but I typically could eat nearly the entire thing! Gross🤢🙄 healthy habits start with simple steps. Vegan Lemon Custard Pie 🍋🍋 ・・・ Via @veganbombs By @foodie.yuki When life gives you lemons, throw it back and ask for chocolate! 🍫 Or 👉🏻make this vegan lemon custard pie 🍋🍋 Here’s the recipe for you. It’s vegan, gluten free, soy free and so delicious! __ Ingredients for a 20 cm tart For the Crust: 175g almond flour 3 pitted Medjool dates 3 Tbsp coconut oil 1 Tbsp lemon juice 1/2 tsp salt __ Method: Preheat oven to 170 Celsius degrees. Place the almond flour, dates, coconut oil, lemon juice, and salt into a food processor. Pulse several times until the mixture resembles wet sand. Press the crust mixture firmly into a lightly greased tart pan. Poke some holes into the bottom of the crust with a fork. Bake for 8-10 minutes until fragrant. Remove and cool completely. __ For the Lemon custard: 350g full fat coconut cream 150g maple syrup or agave 35g coconut oil, liquefied Zest of 2 large lemons 1 tsp vanilla bean paste Juice of 2 large lemons 1 tsp agar agar powder 1/2 tsp turmeric powder __ Method: 1. Place all the ingredients in a small saucepan, then add agar agar. Heat on medium heat and bring to a brief boil. Reduce heat and simmer for a couple of minutes or until it starts to thicken. 2. Remove from heat and pour into the prepared crust. 🍜 Vegan Spicy Thai Peanut Ramen! 📷 by @rabbitandwolves 🚨🚨Recipe: 2 Teaspoons Olive oil 3 Cloves Garlic, chopped 1 Teaspoon Ginger, grated 1 Teaspoon Green curry paste 4 Cups Vegetable broth, divided 1 Can(13oz.-14oz.) Coconut milk, full fat 1/2 Cup Peanut butter, natural or organic 2 Tablespoons Soy sauce 2 Tablespoons Agave syrup Juice of 2 Limes 12 Ounces Ramen noodles  Instructions In a large pot, heat the olive oil on medium high. Then add the chopped garlic and grated ginger. Saute, reducing heat as needed for a minute or 2 to cook the garlic.  Now, add the curry paste, and stir it into the garlic and ginger. Cook for another minute.  Then add 3 cups of veggie broth and the coconut milk. Stir to combine everything. Reduce heat to low and simmer.  Next, in a medium sized bowl, whisk together the remaining cup of broth and the peanut butter. I find this makes it easier to incorporate the peanut butter.  Now, add the peanut butter and broth to the pot and whisk to combine.  Then add the soy sauce, agave and lime juice. Simmer on low for 5-10 minutes to develop the flavors. Taste and adjust seasonings. Add a pinch of salt if needed or more lime juice or agave if needed.  Right before serving, add the ramen noodles into the pot. Simmer them, cooking according to package directions. They usually only take a minute or two. Thai Tea Latte by @mymeatlessmeals 💛 Full Recipe:⠀⠀ Ingredients⠀⠀ Yields 2-4 servings⠀⠀ • 3 tbs Thai Tea Mix*⠀⠀ (Black Tea also works)⠀⠀ • 2 cups boiling water⠀⠀ • 2 cups almond milk or any kind of plant/ nut milk⠀⠀ • coconut sugar as sweetener OR maple syrup⠀⠀ (I add 2 tsp of coconut sugar per serving, but you could add more if you wish)⠀⠀ • cocoa powder for extra flavour⠀⠀ ⠀⠀ Instructions 1. Begin by making Thai Tea: add Thai Tea Mix to a French Press and make tea in a conventional way or add the tea mix to a large tea bag before pouring hot water over it as shown in the video. Steep for 1 minute; then pour tea mixture over the tea bag a couple more times to intensify the flavours and aroma.⠀⠀ 2. While steeping tea, warm up almond milk and getting it ready for frothing. Once your plant milk is heated through, use a frothing wand to whip in air and create large bubbles.⠀⠀ 3. Serve tea in a cup (fill the cup half way) before adding sugar or sweetener of choice, stir well and fill the cup with frothed almond milk.⠀⠀ 4. Sprinkle some cocoa powder on top if you’d like- just a pinch, prior to serving.  Enjoy! #vegfoodvideos

I am so appreciate that 24-Hour Fitness is all over the country. Well, not Arizona but I’ll live. Lol I travel quite frequently from Seattle to Los Angeles to San Francisco to Vegas to Denver to NYC and to Boston. So, it’s a life saver that I can pop into a gym almost anywhere and not lose any momentum on my daily workout HABIT. I’m losing a steady 2-4 pounds a month and with the Keto Vegan diet am not counting calories. I rarely eat carbs at all and I now get my protein solely from nuts, avocado and olive oil. I feel energized. I do 18-hour intermittent fasting every Monday, Wednesday and Friday. I feel my body losing a ton of fat. I feel fit, strong, and in perfect health. My driver license says that I am 41 but I feel and look like I’m 25. My goal is to live to 151. My life is NOT half over. I go another 140 years left. Yesterday was my dad’s birthday, and we decided on @olivegarden for dinner. I haven’t been to Olive Garden since I became vegan, so I did my research to make sure I’m good here, and I’m pretty much set here.  The breadsticks are in the clear (thank goodness there would have been a problem if they weren’t), as well as their minestrone soup and as for the salad, you would have to order with no croutons, cheese, and change the dressing to oil and vinegar that they will put on the side for you. There is a special meal combining these three where you get unlimited of all three of those items. I decided to get that instead of ordering the other option which is getting any pasta with either tomato or marinara sauce with or without veggies as I wanted something that will keep me satisfied and not bloated. Not all days are easy when you are following your dream. From the birth of the idea to the actual tangible brick and mortar has been a journey. The process has tested my mental strength. There are days that I struggle to make the right decision and days where I agonize whether I’m on the right path. Earlier today me and my boyfriend tried the @coopuk incredible burgers- these were super tasty and very similar to no bull burgers (they even stay the same reddish/pink inside after being cooked). But, I would 100% recommend!🍔 Another thing I did notice was the instructions say to pan fry these for 20 minutes and they deffo didn’t take that long🌱 Topped with @kokodairyfree which I finally got to melt (by grating it), pickles, home grown lettuce, onion and homemade burger sauce using @also free from mayo😋 We also had a side of homemade wedges but they took a little longer to cook💚

Pour onto parchment paper making a tortilla shape and dehydrate at 115 for 6 hours. 👌I have a @excaliburdehydrator dehydrator. ✨ . . I filled my raw taco shell with roasted cauliflower + roasted chickpeas + dehydrated veggies 🌶 + avocado 🥑 + cabbage 🥬 + @nomadveganeats cheese sauce. 🥰 You can fill yours with whatever makes your belly happy! 🙌 . . 🌸 repas coloré avec le joli soleil du jour 🌸 . . Dans mon dernier article sur le blog, je donne le conseil de manger les légumes en quantité. Et franchement j’avoue qu’avant, et bien c’était souvent compliqué. Je le faisais sur un repas, mais pas sur tous et pas le plus souvent. En général, les pâtes étaient la base 😋. . . J’aime toujours beaucoup les pâtes, et il y en a, j’ai juste revu les proportions 😉. Donc pour augmenter facilement la part de légumes, c’est intéressant de commencer le repas par des crudités. En plus l’avantage, on mangera doucement, il faut bien mâcher contrairement aux aliments cuits qu’on peut engloutir haha... ils sont riches en vitamines, et je les ai saupoudrés de levure de bière en paillettes. . . Ces petites paillettes sont super intéressantes au niveau gustatif mais également au niveau nutritionnel. Riche en protéines, vitamines B1 B2 B3 B5 B6 B9 zinc fer. Bref on ne va pas s’en priver 😉. . . Ensuite avec les pâtes j’ai fais mijoter des tomates du jardin avec un peu de pâte de curry, et j’ai ajouté des épinards en fin de cuisson. . . C’est un repas tout simple, mais délicieux et rapide à faire. . Am in sunny West Hollywood doing the Mad Rey Kettle Bar exercises (listed if you scroll down on my IG). Sat next to someone who had the flu. In the past two years, I would have gotten sick. But I’ve been training my body and subconscious mind to fight off flus. So when I first woke up yesterday I felt like I got hit my a bus and was hard hit by the flu. But I went back to sleep and taking a lot of elderberry and zinc and vitamin C... I was doing the intermittent fasting and Keto Vegan diet the day before. So my body was able to focus fully on recover. I took Zyrtec so I would not get any nasal congestion which would extend the flu to my throat and lungs. When I woke up the second time, I felt 80% healed. Today, I am back to 100% healed. I didn’t do anything yesterday except sleep and drive 3-hours to LA from San Francisco. There was no Whole Foods in between SF and LA and so I went to Walmart and got mushrooms, carrot and broccoli veggie pack and almonds and dipped in the all natural guacamole. Got some Keto Bars as well as 3 L of water and bought probiotics/immune boosting packets to go into the water.
