My wife went with a colleague to the @dalimuseum today to get a break from “the kitchen project” while I finished a second coat of primer, replaced some outlets and covers, and unpacked more kitchen stuff. Then I vacuumed, decluttered, and put furniture back so we are ready for the work week. 🌱😎🌱 * Just as I was finishing up my wife shows up with this delicious burger 🍔 and coleslaw from @ciderpresscafe in St. Petersburg! She was surprised to see the house back in order, so I earned my burger. 🌱😂🌱 * No time for a video tour tonight but here are some shots of the amazing amount of storage, including the lazy Susan we were missing. My wife added a spice drawer next to the stove for me! Two pull out drawers with three garbage cans. One by the sink for food stuff (composting?) and two by the stove for recycling. Pantry purged, cleaned, and organized. All countertop appliances stored in cabinets. More to follow as we pick the wall color, unpack the remaining boxes 📦, and shop for a new coffee maker. (No more K-Cups!) 🌱✌🏼❤️💪🏼🌱
Meal Prep Salad Jars. Spicy Chickpea Salad and Quinoa Salad with Dill Hemp Ranch. It's always nice to have your meals prepped for the week. Stay ready so you don't have to get ready, right? Or, stay ready so you don't have to stare inside the fridge/pantry for an hour trying to figure out what's for dinner tonight. lol Trust me, I've done that more times than I can count. But, these prepped salads definitely help, along with the other quick and easy recipes from my @dopemealplanner. Dill Hemp Ranch 2 tbsp hemp seeds (soaked for 6 hours) 2 Brazil nuts (soaked for 6 hours) 3 tsp onion powder 1/2 tsp sea salt 2 tsp dill 2 scallions 2 key lime juice 1/4 cup to 1/2 cup water Add ingredients to a high speed blender and blend until creamy. Optional add in: 1/2 of a peeled zucchini for added nutrition and volume.
my brekkie the other day 😋 i usually go for a smoothie, but some days that just sounds too darn cold. ya feel? i cooked these oats with some coconut milk, vanilla, and cinnamon 😋😋 sweetened with maple syrup and topped with half a banana, blueberries, coconut flakes, peanut butter, and some goodies from @ontargetliving like cacao nibs, hemp hearts, and chia seeds— they hook it UP! i made some jelly simply by mashing 1 c frozen raspberries with 6 Tbsp water and 2 Tbsp chia seeds, letting in sit in the fridge overnight. so so yum and vibrant. i hope you’ve had a wonderful start to the week 🧡 happiest monday :)

Popcorn mushroom “chickn” or add salt, pepper & lemon for a calamari alternative 😍. • • • This recipe is so easy to make! You can pick any mushroom you like (cremini are my fav, but here I used baby king oyster mushrooms). 1. Prepare a bowl of unsweetened plantbased milk, add paprika, Cajun spice & onion powder. 2.Prepare a bowl of spelt flour or chickpea flour, add the same spices & with black pepper, chives & whole time herbs. 3. Wash and cut mushrooms in desired sizes. 4. Dip mushroom in milk, flour & repeat once more. 5. Mleko, sodę, ocet oraz olej wlej do osobnego naczynia. Następnie przelej do miski i szybko wymieszaj. Połączone składniki wlej do foremki i piecz przez 50 minut w 180°C. Uszykuj galaretkę. Add milk, baking soda, vinegar and oil to a separate dish, then pour into a bowl and mix quickly. Pour the combined ingredients into the mold and bake for 50 minutes at 180 ° C. Prepare the jelly (one glass of water per sachet). Whip cream, add to it the concentrated jelly and mix thoroughly with a mixer. Hollow a part of the sponge cake, and pour the prepared foam into it. Preheat oven to 350F. Line a loaf pan with parchment paper. 2. In a bowl, combine 1 1/2 cup oatmeal flour, coconut flour, baking powder, salt, and sugar. Set aside. 3. In another bowl, combine the mashed bananas, coconut oil, and apple cider vinegar together. 4. Pour the dry ingredients into the wet ingredients and mix well. 5. Coat the frozen blueberries with the 2 tbsp of flour that was reserved. 6. Gently fold the blueberries into the batter (reserve 2 tbsp for topping). Pour into the pan and top with the 2 tbsp of blueberries. 7. Bake for 50 minutes until toothpick comes out clean. Let cool before slicing and enjoy! . . . #astepfullofyou

Simple fries paired with some romaine and organic ketchup. Seasoned with black pepper, garlic powder, onion powder, and some turmeric. Slice potatoes, soak for 15-20 minutes in water, rinse, season and bake for 35-40 minutes in a 450 degree oven.
Taking advantage of a three day weekend to get our house fully functional again and @mommy_flaurie and I are exhausted! We worked from 9am to 7pm on Saturday and from 9am to 9pm on Sunday. Monday was supposed to be a day of rest but too much left to do! 🌱😳🌱 * We have spent so much on takeout food the past couple of weeks but trying to keep it healthy. Always keeping it vegan! Breakfast is easy at home with almond milk and cereal. @kashi and @silk are vegan magic! The toaster oven has been busy too lately. This customized Mediterranean Veggie sandwich from @panerabread is one of my favorites for lunch. I like to add @fieldroast Chao cheese and banana peppers to spice things up. 🌶😜🌶 * Today I worked on the guest bathroom. Relocated a light fixture, patched the old hole, and glued our custom mirror that we made 10 years ago back to the wall. Then it was up and down the ladder priming the walls and trim in the kitchen. @mommy_flaurie cleaned all the dusty cabinets and the pantry, and unpacked over 20 boxes and bags of glasses, dishes, pots and pans, etc. Awesome tunes playing all day. Time for a beer 🍻 or two! 🌱✌🏼❤️💪🏼🌱

Dumplings with a sweet & sour cabbage-mushroom filling and chili broth on top by @beferox 💛 Via @letscookvegan Via @veganbombs #veganbombs ・・・ Recipe:⠀ For the sweet & sour dumpling filling:⠀ Heat 2 tbsp canola oil in a pot over low-medium heat, added 1 small onion (chopped), 3 cloves of garlic (minced), a ca. 2 cm long piece of ginger (minced), 1/2 small cabbage head (finely chopped) and let everything cook for about 3-4 minutes before adding 200g chopped mushromms.⠀ ⠀ Then, let everything cook for another minute and added 1 tsp salt, 1 1/2 tbsp. flour, 1 tbsp dark soy sauce, 1 tbsp apple cider vinegar and 2 tbsp brown sugar.⠀ Stir everything together and after ca. 5 minutes the filling was read.⠀ This recipe makes enough filling for ca. 26 dumplings.⠀ ⠀ For the chili broth that goes on top of the steamed dumplings mix together 100ml vegetable broth, 1 tbsp canola oil and 1 tsp chili flakes. Cauliflower meet Dukkah...Dukkah meet cauliflower. Love at first bite 😍 This is a match made in heaven, and a fast weeknight dinner packed with flavour. Cauliflower, red onion and chickpeas roasted in olive oil, dukkah, and paired with delicate crispy kale chips. Getting back into the groove this weekend and roasting up a bunch of these tri-colored beauties to munch on 🐰 Most of the time I love doing a simple roast with just olive oil, salt & pepper, but today I’m going to spice things up by adding a little chili powder and cinnamon to the mix 💃🏼 Roasted carrots are one of my fav snacks because I like them hot or cold, they are naturally a little sweet, and still have a bit of a snappy crunch. Extra excited about this sweet and spicy combo we’ve got going on over here 🥕👌🏼 #goodmoodfood

Let cool down completely.⠀ 3. Place spinach in a food processor and process until creamy. Add in little by little flour and splash of water and process until the dough sticks together. ⠀ 4. Cover the dough and let rest for 30 minutes.⠀ 5. for the filling, place the nuts in a bowl and cover with boiling water. Set aside for 30 minutes. ⠀ 6. Rinse the nuts and Place them in a food-processor. Add in a splash of water, truffle oil, salt and nutritional yeast and process until perfectly creamy. cover and set aside.⠀ 7. Using a pasta machine roll out the dough until it’s about 2 Millimeters thick. ⠀ 8. Press a glass into the ravioli sheet and set the ravioli circles over a floured surface.⠀ 9. Each raviolo is made of 2 circles; put 1 tsp of truffle cream in the middle of a circle, moisten the edges of the dough with a pastry brush and cover with another circle. ⠀ 10. Press the edges with a fork so that it wont open while boiling.⠀ 11. if you want them to be a little “al dente” let them dry out overnight on a floured surface.⠀ 12. Cook in boiling water for 5 minutes and serve with a dash of truffle oil and some macadamia cheeze.⠀ 13.
