One of the reasons I admire Japan so much is that they are so technologically advanced yet have managed to keep a huge importance on their culture and identity. Being able to ride a high speed bullet train and yet get off in a funky alley with street food was such an interesting experience. You can notice this also by walking through the streets next to some giant sky scrapers and then finding a small garden right next door. It is something I haven’t really seen in many big cities. Usually there is a loss of cultural identity when a city gets so advanced... what do you guys think on this subject?? 📸 by @moretti
Homemade empanadas. Buttery hand rolled dough stuffed with goat cheese, cilantro, and roasted red and green chilies. Plus ground beef sautéed with garlic, onions, chilies, and spices. Both oven roasted and served with a lime and avocado sauce. Plus a bottle of undoubtedly the best tequila I’ve ever tasted.
Hatsunezushi 2019.03, 1st visit after renovation . . . Shari making . シャリ切り . 画外音：通风口在上方 . . . Hatsunezushi is one of the most unique sushi shops in Tokyo area right now. Besides being a jukusei sushi shop (not edomae), the ambience here is also different from most serious high end sushi shops in Tokyo. The chef and all the staff are extremely energetic and conversational, also very friendly to foreigners. . Awarded by two Michelin stars and applauded by local foodies, it was one of the most popular sushi shops in Japan and hard to get in. Luckily they started to operate three rounds per day this year, which brought up opportunities for new customers. . Many know that Hatsunezushi actually closed early last year because of the health issue of Chef Katsu Nakaji' wife. Fortunately, Mrs. Nakaji recovered later last year and the restaurant reopened as “Newborn・Hatsunezushi (新生・初音鮨)” after a complete renovation. . Besides the astonishing new look of the sushi counter, it is very surprising to see that they add a new counter for a very Zen experience after the sushi show.
