Seasonal and Soooo Delish! 🎃🎃 : : : Pumpkin Scallion Pancakes with Scrambled Eggs, Avocado, Spinach, Marinated Onions & Tomatoes *yummy recipe inspired by @spoonforkbacon 🙌😘 : : 2 cups all purpose flour 1 1/2 teaspoons baking powder 1 1/2 teaspoons baking soda 1 teaspoons salt 2 cups buttermilk 2/3 cup pumpkin puree 2 large eggs, lightly beaten 3 tablespoons unsalted butter, melted and cooled 1 cup grated cheddar cheese 3 green onion thinly sliced * In a mixing bowl, whisk together flour, baking powder, baking soda, and salt. In a small bowl combine buttermilk, pumpkin, eggs, and butter. Add the wet to the dry being careful not to over mix. Gently fold in the cheese and green onions. Place a skillet over medium heat and add 1 tablespoon of butter. Pour 1/4 cup of the pancake mix into the skillet and cook for 3 to 4 minutes or until you see small bubbles forming on the top of the pancake. I was so thrilled to see that my husband brought home these chanterelle mushrooms from the store, two pounds of them.  What would you do with them? ⠀⠀⠀⠀⠀⠀⠀⠀⠀ I immediately thought of making mushroom risotto, a fall favorite of mine, a recipe from The New Vegetarian Epicure by Anna Thomas, a cookbook I've had for many, many years. I've tweaked the recipe enough I could probably make it my own. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ So I made the long-anticipated mushroom risotto I have been dreaming about since last fall and winter. I thought I'd take some pics. Once it was ready, the daylight was fading fast, so I rushed through taking photos of it. It seems that risotto doesn’t lend itself that well to being photographed, or maybe it's just me since it’s best eaten as soon as it’s ready! The longer it sits, the more liquid is absorbed, and it loses that delicious creaminess that is characteristic of risotto and arborio rice. Oh well, perhaps  I will try photographing the risotto another time. Until then, I have these chanterelles for you, just taken out of the packaging and tumbled into place. mid-day snack 🥨 hummus recipe below👇🏼 ⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Chocolate Hazelnut Hummus 1 can garbanzo beans, drained and rinsed 1/2 cup roasted hazelnuts 1/4 cup cacao 1/4 cup maple syrup  2-3 tbsp water pinch of sea salt cacao nibs and chopped hazelnuts, for topping ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Add all ingredients to food processor and process until smooth. Who wants some chili?!?!?!?!?! 🌶🌶🌶🌶🌶🌶 The pic isn’t fancy but don’t judge a book by its cover. Nom 😋 nom 😋 nom 😋  I saw this plant based Italian sausage brand @noevilfoods at the @sacfoodcoop and had to try it. I will try just about anything in the hopes that I find something new and tasty to add to my list of non-meat options. 👊👊👊👊👊 I usually don’t ever add sausage to my chili but thought I would give it a shot. 😬  I used 3 out of the 4 sausages in the chili 🌶 and cooked the 4th one in an iron skillet. I like to taste things au naturel first. (The 2nd photo is prior to cooking) It was super tasty! So much that I need to go get more because I think it needs to be the star ⭐️ of a dish. Like pasta or something 😁  I’m excited to try their other products. Give this a try! Already missing my moms always insane Sunday brunch spreads. The best part was this giant frittata she made with no crust in a pan on the stove (for quicker cooking time). We added spinach, tomatoes 🍅, asparagus, broccoli 🥦, and green onions 😋 + 8-10 @vitalfarms eggs. Let it cook until it’s solid all the way through on low to medium heat. Perfect weekend in Chicago, now off to the busiest two weeks of my life in Dallas🙈
