💓Heart Cookies via @panaceas_pantry Ingredients. 3/4 cup coconut oil 1/2 cup caster sugar 1 tsp ground cinnamon 1 tsp vanilla extract 2 tsp able cider vinegar 1 cup plain flour 3/4 cup almond meal 1/2 tsp baking powder 1/4 tsp fine salt Method 1. Line 2 baking trays and set aside. 2. Add oil, sugar and cinnamon to a mixing bowl and beat with electric mixers for 3 minutes, or until fluffy. 3. Add vanilla and apple cider vinegar and beat for a further minute. 4. Sift in flours and add remaining ingredients. Gently fold together. Divide dough into 2 even balls. Cover with glad wrap and then refrigerate 1 hour. 5. After 1 hour, roll out dough on a gently floured board (i rolled mine to approx 1cm thick). Use cookie cutters to cut desired shapes, and place on baking tray. Once all cookies are cut place the tray of cookies in the freezer for 1-2 hours. 6. Preheat oven to 180 degrees C. Cook cookies for approx 7-8 mins, or until just slightly coloured. Allow to cool 5 mins before transferring to a cooling rack. To serve, allow to cool completely the sandwich together with preferred jam. Enjoy!!
Vegan Flourless Triple Chocolate Cake Topped with Melted Chocolate Ganache via @gaspic_healthyberry ⠀ Ingredients:⠀⠀ Cake⠀⠀ 2 cups raw buckwheat groats soaked at least 4 hours⠀⠀ 1/3 cup unsalted peanut butter⠀⠀ 5 ripe bananas⠀⠀ 1/3 cup liquid oil⠀⠀ 2/3 cup coconut or muscovado sugar⠀⠀ 1 cup cacao⠀⠀ 1 tsp baking powder⠀⠀ 1 tsp baking soda⠀⠀ 1/4 tsp sea salt⠀⠀ 100 g chopped dairy free dark chocolate⠀⠀ ⠀⠀ Ganache⠀⠀ 100 g dark chocolate chopped⠀⠀ 4 tsp coconut milk⠀⠀ ⠀⠀ Instructions⠀⠀ Cake⠀⠀ Preheat the oven to 200°C⠀⠀ Process the buckwheat until you get a homogenous, creamy mixture. Add peanut butter, bananas, oil and sugar, process again until everything is integrated. Add the cacao, salt, baking powder and baking soda and process again.⠀⠀ Put the mixture in a bowl. Add the chopped chocolate and mix well. Put the mixture in a mold of 9x20cm approx. with parchment paper (butter paper) and bake for 20-25 minutes or until it is dry on the outside and just moist on the inside. When inserting a stick it should come out just wet⠀⠀ Let cool⠀⠀ ⠀⠀ Ganache⠀⠀ Melt the chocolate together with the coconut milk in a bain-marie or microwave, take care that the chocolate does not burn, put on the cake and leave in the refrigerator.⠀⠀ Enjoy
