declaring today Fun Friday because of these SWEET P BREAKFAST FRIES with ALMOND BUTTER YOGURT DIP! this is a fun way to switch up sweet potatoes. normally i see them in savory dishes but considering they are a SWEET potato — a sweet snack is necessary. ————————— preheat oven to 375°f and slice ends off sweet potato. slice into fry shapes and toss with about 1tbsp olive oil, @primalpalate sea salt and cinnamon. bake on one side for 15 minutes, flip, then roast for another 12-15 minutes. i love them when they get a tiny bit crispy on the outside and are soft on the inside. dip: a little vanilla yogurt + almond butter + cinnamon. 😋
TANUKI RAW @ Orchard Central; Certainly a place that is not unfamiliar on my page, tanuki raw has become one of my go-to restaurants after a long day at work. Their truffle sweet potato fries ($10.50) served with truffle aioli has been one of my favourite appetiser especially when served piping hot. The ‘Instagram This Maki’ ($13.90) however, was not one i’ll go back to. Described as a fried yakiniku steak, avocado, tamago and bacon maki, topped with melted cheese, smoky ketchup, umami mayo and onions, the sauces were too overpowering and the dish was one-dimensional. 📍: 18 Orchard Road, 04-01, Orchard Central, 238896

RECIPE INGREDIENTS 1 large sweet potato cut into thick chips, skin on 2 large zucchini’s cut in half and then quartered length ways 3 Tbsp. olive oil herbs (2 tsp. sweet paprika, 1 tsp. thyme, 1 tsp., dried rosemary, ½ tsp. white pepper & 2 tsp. salt) 1 Tbsp. honey 1 tsp. black pepper, ground 3 Tbsp. fine parmesan cheese INSTRUCTIONS SWEET POTATO FRIES: 1.Preheat oven to 180C and line 2 baking trays with baking paper. 2.In a small bowl mix paprika, thyme, rosemary, white pepper and 1tsp pf salt. 3.Place sweet potato chips in a large bowl with 1 ½ Tbsp.of olive oil and honey, mix well with hands. Add mixed herbs and combine. 5.Neatly place on baking tray and pop in oven for 20-30min or until golden brown. ZUCHINNI CHIPS 1.Place zucchini in a large bowl with remainder of the olive oil and mix well. 2.Add, 1 tsp. of salt, black pepper and parmesan cheese, combine well with hands. 3.Place neatly on tray and bake for 20-25min or until cheese is golden. 4.Serve with a dipping sauce of your choice.
