How I turn my summer salads into winter salads: warm up the non-salad ingredients 🙈 Especially when there’s sweet potato involved 🍠 This salad is kale, bbq black eyed peas, roasted sweet potato, tomatoes, and pepitas, with a smoky cashew ranch dressing! 🥗
This. Dinner. Is. Lit 🔥 Wow... it was so EASY too! I’m about to be working A TON the next two weeks, so meal prepping is going to be necessary. Trying to balance healthy eating with holiday goodies mixed in isn’t so hard if you plan ahead! #whatsonmyplate: Sweet potato stuffed with garlicky kale (tossed in a pb, lemon, maple syrup and olive oil sauce), roasted chickpeas (smoked paprika & cayenne), feta, dried cranberries, & crushed red pepper flakes • lemon chicken w/ Everything But The Bagel Seasoning by @traderjoes • grape tomatoes 😋 👇👇👇For more healthy meal ideas + travel tips follow @goodafeats👇👇👇
🌮 Sweet Potato & Chickpea Tacos ⏲ Under 30 mins | Serves 3-4 These tacos are so easy to make & just so delicious! Probably my new favorite meal & I loved how minimal effort it took🙋🏽♀️ ⠀⠀⠀⠀⠀⠀⠀⠀⠀ What’s in my tacos👇🏼 1 can (15 oz) Chickpeas, rinsed 1 medium Sweet potato 2 tbs Soy sauce (@kikkomanusa) Fresh corn tortillas (@heb) Fresh cilantro Chili powder Garlic powder Spicy Guac: 2 Avocados Fresh pico de gallo (@heb) Lime juice Salt & pepper ⠀⠀⠀⠀⠀⠀⠀⠀⠀ I like to start off by boiling my sweet potato in some water for roughly 10 mins because I HATE cutting hard sweet potatoes. Who’s with me?🙋🏽♀️ After boiling it, cut into cubes. In a pan, add avocado oil, chickpeas, & the sweet potatoes. Add soy sauce, chili powder, & garlic powder. Cook for roughly 10 mins. For the quick & easy guac: mix avocado, pico, lime juice, and salt & pepper. Serve on corn tortillas and garnish with fresh cilantro & sesame seeds!
🥗 Southwestern Salad Bowl ⏲ Under 15 mins | Serves 1 Threw this delicious #lowcarb#lowcalorie salad bowl together this morning & kept it in my lunch bag to bring to work🏃♀️It's simple & ready to go with just a little preparation from the night before. And it's a hot kale salad! Say whaaaat❓Because who likes rough, bitter, cold kale? Honestly, heating up this salad makes it taste so much better & the melted cheddar cheese on top is definitely a plus 🤤 ⠀⠀⠀⠀⠀⠀⠀⠀⠀ What's in my bowl🥣 ▫️Handful of Kale ▫️1/4 cup Cauliflower stems ▫️1/4 cup Kohlrabi ▫️1/4 cup Sweet Potato ▫️1/3 cup Black Beans ▫️1/4 cup Spicy salsa (@heb) ▫️Cheddar cheese (@kraft.naturalcheese) ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Cube vegetables - cauliflower, kohlrabi, & sweet potato. (I like to make use of leftover stems from cauliflower & sometimes I'll throw in broccoli as well). Fill a pot with salted water & bring to boil. Add the vegetables & cook covered for roughly 10 mins. Wash kale, chop roughly, & add to salad bowl. Add in vegetables, black beans, & spicy salsa. Mix together & heat in microwave for 3 mins to soften. Top with cheddar cheese. (I usually mix everything together beforehand, except for the cheese & salsa. And store it in a tupperware so it's ready to take to work in the morning.) ⠀⠀⠀⠀⠀⠀⠀⠀⠀ It's Monday y'all so here's to another busy week! 💁🏽♀️
