Melon, Lemon And Lavender After Dinner Daquiri INGREDIENTS 3 sachets Pukka After Dinner Tea 1 ½ cups of boiling water ¼ of one small honeydew melon 1 tablespoon of dried lavender Juice and zest of one lemon 1 tablespoon of honey INSTRUCTIONS 1.Cover the tea bags with the boiling water and brew in a covered container 2.Strain after 30 minutes 3.Cover and cool in the fridge for 2 hours 4.When the tea is chilled, put in a blender with the honeydew melon, lemon juice, honey and most  of the lavender 5.Pour into two glasses and sprinkle finely zested lemon and dried lavender on top to serve A great way to enjoy your tea and help with your digestion. I have been looking for some kind of flavored veggie mix that I can just throw in my skillet with what ever kind of meat I want, but it’s hard to find them with out any meat already in the mix. Who said comfort food has to be bad for us? 🙃 I went for a 6 mile run and was haaaangry when I got back so whipped up this hearty bowl. I love baking up a bunch of yams and having them avail in the fridge to re-heat on the fly. They’re a great source of beta carotene, prebiotics and fiber for the gut, potassium (more than bananas) and complex carbs for fuel. The noodles are a gluten-free vegan mac n cheese I whip up for Atlas that I also love. It’s super easy. I cook gluten-free noodles, add a little coconut oil while they’re hot, then add stone ground raw nut butters (@dastonybrand is my fave brand). I used macadamia nut and coconut butter this time. Add a few splashes of nama shoyu or braggs for saltiness, black pepper, and lots of nutritional yeast for that cheesy flava. I added fresh basil today too which was yum. I bought all of this ORGANIC produce (5x sweet potato, 2x cauliflower, 3x broccoli, 4x tomatoes, 2x beetroot, a lime and a bag of carrots) for $30! Not only that I got FREE oranges from another stall because my mum buys from him regularly and when buying some frozen bone broth I dropped one and the container broke (completely my fault) and the lady gave me a new one. When I joined my first boot camp 2 years ago I only bought the workouts. I knew about the superfood 🌱 meal replacements but I opted out because of the cost. 🥜 Peanut Butter Crunch Bites ⏲ Under 10 mins These healthy peanut butter babies only require a few minutes to make & even fewer ingredients to make! These are so much crunchier than I expected & just plain DELICIOUS. And oh, they’re healthy! Literally ate 3 pieces in 20 seconds right after taking my pics...🤫 ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Deets👇🏼 ▫️1 1/2 cup Pitted Dates ▫️1/2 cup Peanut Butter (@justins) ▫️1 tbsp Vanilla Essence ▫️3 tbsp Raw Honey ▫️1 cup Cornflakes (@specialk) ▫️1/2 cup Unsalted Peanuts Chocolate Coating- ▫️1/3 cup Dark Chocolate Chunks ▫️1/2 a spoon of Coconut Oil ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Start off by pulsing together the dates, peanut butter, vanilla & honey in a food processor. Using a plastic ziplock, first smash up the cornflakes into tiny pieces, remove, then smash up the peanuts.  Mix everything in a bowl & then press into a bread baking dish, lined with parchment paper. Bring a pot of water to a boil & rest a bowl to the top. Add in the chocolate & coconut oil. Mix until all the chocolate has melted. Pour the melted chocolate into the baking dish. Top with some more crushed peanuts. Freeze for at least an hour before cutting into bite size pieces! It’s so tasty & took minimal effort👌🏼 Parts of North Houston saw snow today!! 😱❄️ Very chilly for us tonight🌬 What’s the weather like for you❓Oh and Happy Taco Tuesday! 😜 ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Deetz👇🏼 ▫️1 Chickpea Flour Tortilla (@sietefoods) ▫️Refried Black Beans ▫️Fresh Hot Pico de Gallo (@heb) ▫️Sweet Corn ▫️1/2 Avocado ▫️Habanero Hot Sauce (@sietefoods) ⠀⠀⠀⠀⠀⠀⠀⠀⠀ I like to heat up the tortilla on a pan for a little but be careful with the chickpea flour tortillas as they crisp up hard really fast! Wanted to try them out but I think next time I’ll go back to their other types of tortillas 😬 For the refried black beans, heat them in a pan with some chili powder & salt. Roast the corn in a toaster oven at 350* for 5-6 mins. Load up the tortilla!! So many wonderful feels & the perfect quick meal to fill you up.
🍎 Spiced Apple Toasts ⏲ Under 5 mins | Serves 1 Another cold front blowing in so I’m bring out some more winter classics. These spiced apples are SOOO freakin good & an excellent way to wake up my sleepy butt. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Recipe📝 ▫️1/4 large Red Apple ▫️Coconut Oil ▫️Cinnamon ▫️Nutmeg ▫️Vanilla Greek Yogurt (@siggisdairy) ▫️Honey ▫️French Bread ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Cube the apple & sauté in coconut oil with a dash of cinnamon & nutmeg. Cook for just a few mins. Top sliced toasted French Bread with Greek Yogurt & spiced apple. Drizzle with some honey & sprinkle some hemp seeds.
🍫 Chocolate Maple Brown Oatmeal ⏲ Under 5 mins | Serves 1 So I haven’t gone grocery shopping all week since I have been sick so all I have been having for breakfast everyday is oatmeal...not complaining! Thought I’d switch things up today though and add some cacao powder 🤤 Happy Friday peeps!✌🏼 ⠀⠀⠀⠀⠀⠀⠀⠀⠀ What’s in my bowl 🥣👇🏼 ▫️1/2 cup Quick Oats (@heb) ▫️1 cup Unsweetened Almond Milk (@lovemysilk) ▫️1 tsp Light Brown Sugar ▫️1/2 tbsp Maple Syrup ▫️1 tsp Cacao Powder ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Combine all ingredients together in a microwave safe dish. Microwave for 1 1/2 mins - 2 mins. Top with banana slices, sliced almonds, cacao nibs, & hemp seeds👌🏼
🥜 Criss-Cross Peanut Butter Cookies ⏲ Under 15 mins | Yields 25 Cookies Only 5 ingredients required for these babies & they are just oh-so delicious 😋 So easy to make & bake! ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Recipe📝 ▫️1 cup Peanut Butter (@justins) ▫️3/4 cup Rolled Oats (@bobsredmill) ▫️5 Dates, pre-soaked ▫️1 Cafe-Free Brown Egg ▫️2 tbsp Honey ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Chocolate Coating (optional) - ▫️1/2 cup Chocolate Chips, melted (@enjoylifefoods) ▫️Coconut Oil ▫️Sea Salt ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Preheat oven to 350°. In a food processor, add in the oats & process until fine & flour-like. Set aside in a bowl. Then add in the dates & pulse until they are evenly chopped. Add the oat flour back in as well as all the remaining ingredients (excluding the “optional” ones). Then use a 1 tbsp measuring spoon to scoop out the batter & roll into balls. Add to a parchment lined baking sheet & press down with a fork, creating a classic “criss cross” shape. Place the baking dish in the oven & cook for 8-10 mins. Meanwhile, add the chocolate chips & a little bit of coconut oil to a bowl & melt in the microwave. Once the cookies are baked, dip them in the bowl of chocolate & sprinkle with some sea salt. 🍔 Spicy Sweet Potato Burgers ⏲ 20 mins Prep Time | Yields 5 Patties Currently sick so I have not been in the mood to cook...can barely stand 😷 So for dinner today, I decided to whip out these patties I made from the freezer. Literally took 5 mins to put together & now my sick self is pretty happy✌🏼 ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Patty Deets👇🏼 ▫️1 medium Sweet Potato ▫️1/2 cup Tricolor Quinoa ▫️1/4 cup Green Lentils ▫️1/2 Jalapeño, finely chopped ▫️1 tbsp Whole Wheat Flour (@bobsredmill) ▫️1 tbsp Olive Oil ▫️2 tsp Crushed Red Pepper ▫️1 tsp Chili Powder ▫️1/2 tsp Garlic Powder ▫️1/2 tsp Smoked Paprika ▫️Salt & Pepper ▫️1/2 Cup Panko Breadcrumbs ⠀⠀⠀⠀⠀⠀⠀⠀⠀ First, preheat the oven to 425°. Then, wash the sweet potato & poke with a knife. Line a baking sheet with foil & roast in the oven for roughly 45 mins. Meanwhile, cook the quinoa & lentils in 1 1/2 cups of water. Once those two things are cooked, in a bowl, mash together the potato & quinoa. Add in the following ingredients- jalapeños, flour, olive oil, & seasonings. At the end, mix in the breadcrumbs. Using a 1/2 measuring cup, scoop out the mixture & place on a baking dish with a slightly greased parchment paper. Shape into 5 patties. Bake at 350° for roughly 40 mins, flipping halfway. Store them in the fridge or freezer & heat up in a pan right before eating! 😊 {Recipe video tutorial in story highlights} ⠀⠀⠀⠀⠀⠀⠀⠀⠀ For my burgers, I used 100% Whole Wheat Burger Buns. Then I added mashed avocados, pepper jack cheese, lettuce, & ketchup!
🥒 Zucchini Enchiladas ⏲ Under 30 mins | Serves 4 For this recipe, I really didn’t “measure” a lot of things. I just added in however much I wanted & eyeballed a lot of the seasonings. Sometimes you just gotta have fun with it & not have such a structured recipe! So here’s a quick how-to on some delicious & healthy zucchini enchiladas 😋 ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Deetz👇🏼 ▫️2 Zucchini ▫️1/4 Onion ▫️1 Jalapeño ▫️2 cloves Garlic ▫️Refried Black Beans ▫️Sweet Corn ▫️Red Enchilada Sauce ▫️Mexican Blend Cheese ▫️Seasonings - Chili Powder, Smoked Paprika, Cumin, Salt & Pepper ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Preheat oven to 375°. First off, slice your zucchini with a mandolin slicer or a peeler. You want them to be uniform & thin. Then in a food processor, add in your onion, jalapeño, & garlic. This makes chopping super easy & pain free. It’s also a great way to use up the hard to cut “core” of your onion. Make sure to not over pulse as you just want everything roughly chopped. In a pan, sauté the 3 veggies for a few mins & then add in some refried black beans & corn. Once it is cooked, start preparing the “enchiladas”. You want to lay out 4 strip of the zucchini, each overlapping one another just a bit. Then sprinkle in some cheese & add in a spoonful of the bean mixture to one end. Using both hands, carefully roll up & place into a baking dish (add a little bit of enchilada sauce to the base). Continue until you have used up all your zucchini. Cover the enchiladas with more sauce & sprinkled cheese. Place in the oven for 15-20 mins, until cheese has melted. 🍠 Sweet Potato Breakfast Plate ⏲ Under 15 mins | Serves 2 Sometimes all you need is a simple breakfast plate to make it through a Monday...oh and LOTS of coffee ☕️😴 Puffy eyed & congested today because since I’ve woken up today, I’ve sneezed at least 20 times. Hope you’ve had a better start to your day than me 🤧 ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Deetz👇🏼 ▫️1 small Sweet Potato ▫️1 Avocado ▫️2 Cage-Free Brown Eggs ▫️Refried Black Beans ▫️Seasonings - Chili Powder, Smoked Paprika, Cumin, Onion Powder, Garlic Powder, Salt, Peppa ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Start off my scrubbing your sweet potato & poking a few holes. Then microwave for 2 mins. This will soften it up, making it easier to cut & cooking it faster. Once it’s heated up, let it cool before chopping it into little cubes. In a pan, sauté the potato with some avocado oil & all the seasonings. Cook for 5-6 mins. Cook the eggs according to your preference, I love mine with a runny yolk! So I cook them sunny side up ☀️ Add some of the refried beans into a pan & season with some chili powder & salt. Cook until evenly heated.  Serve everything in a plate, along with some avocado 🥑
🍂 Pumpkin Almond Butter Oat Muffins ⏲ 15 mins Prep Time | Yields 12 Muffins I struggled with what to call these...soo many yummy ingredients in these muffins! Pumpkin, pumpkin spice, almond butter, banana, oat meal...Regardless of what I call them, I just know that they are DELICIOUS & healthy 😋 The perfect muffins to go with your morning coffee! ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Dry Ingredients - ▫️2 cups Rolled Oats (@bobsredmill) ▫️1 tsp Baking Powder ▫️1 tsp Baking Soda ▫️1 tsp Cinnamon ▫️1 tsp Nutmeg ▫️Pinch of Salt ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Wet Ingredients - ▫️1/2 cup Almond Butter (@justins) ▫️1/2 cup Pumpkin Purée ▫️1 Banana ▫️1/4 cup Honey ▫️1/2 cup Greek Yogurt (@siggisdairy) ▫️1/4 cup Almond Milk (@lovemysilk) ▫️1 Cage-Free Brown Egg ▫️1 tsp Vanilla Extract ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Almond Butter Drizzle- ▫️1 1/2 tbsp Almond Butter (@justins) ▫️2 tbsp Maple Syrup ▫️2 tbsp Almond Milk (@lovemysilk) ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Preheat the oven to 375°. Start off by grinding 1 cup of the oats in a food processor until it is fine, flour like. Pour out into a mixing bowl & add in all the dry ingredients. In the food processor, pulse in all the wet ingredients. Once it’s well puréed, pour out the mixture into the bowl with the dry ingredients. Mix everything well. Pour the batter into a muffin tin. Top each with a pecan. Bake for 15 mins. Meanwhile, to make the drizzle, mix all the ingredients together! 🍳 Chilaquiles Verde ⏲ Under 15 mins | Serves 2 One of my favorite things...breakfast for dinner!! I’ll eat eggs anytime of the day 😋 Tried my hand at some chilaquiles & it was a success! I had chilaquiles for the first time 2 weeks ago & I fell in love. I knew I just had to make it myself 😍 ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Deets👇🏼 ▫️1/4 cup Onion, chopped ▫️1 Jalapeño, chopped ▫️1 clove Garlic, minced ▫️10 oz can Green Enchilada Sauce ▫️Tortilla Chips ▫️Mexican Shredded Cheese ▫️4 Cage-Free Brown Eggs ▫️Feta Cheese ⠀⠀⠀⠀⠀⠀⠀⠀⠀ In a cast iron skillet, sauté the onions, jalapeño, & garlic for 3-4 mins. Then pour in the enchilada sauce. Cook on low-medium heat so the sauce can thicken up a bit (roughly another 3-4 mins). Once the sauce has thickened, toss in a couple handfuls of tortilla chips (you want enough to fill you up & enough to coat all the sauce evenly). Mix the chips in carefully, coating them in sauce. Then add in some cheese & let it melt. Meanwhile, cook the 4 eggs - sunny side up ☀️ Remove the skillet from heat & add the eggs on top. It definitely got warm down here again but that won’t stop me from still enjoying my hot comfort meals 😋 ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Recipe📝 ▫️1/4 cup Onion, chopped ▫️1 cloves Garlic ▫️1 can Kidney Beans ▫️1/2 Zucchini, cubed ▫️1/2 Jalapeño, chopped ▫️Frozen Corn ▫️1/2 cup Crushed Tomatoes ▫️1.5 cups Vegetable Broth ▫️1/2 cup Cauliflower Rice (@greengiant) ▫️1/4 cup Green Lentils ▫️Seasonings - Chili Powder, Cumin, Smoked Paprika, Salt & Pepper ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Prepare all your veggies. Then in a pot, add in some avocado oil & sauté the onions, garlic, & ginger for 3-5 mins. Then add in all the seasonings. (Add lots of everything since you will be adding a lot of veggies & liquids & you don’t want the flavor to end up being bland). Mix everything in well. Then add in the kidney beans, zucchini, jalapeño, & frozen corn. Sauté for 1-2 mins. Add in the crushed tomatoes, vegetable broth, cauliflower rice, & lentils. Stir together, cover, & let simmer for 15 mins. (If you have lost too much liquid, add water or more broth). Oh hey. It’s me! 👋🏼 In my primal state, casually eating a big ball of curly fries the size of my head & sipping my Rodeo margarita. It’s true what they say, everything is bigger in Texas 🤷🏽‍♀️ This picture was taken from the Houston Rodeo back in March & I just though it was about time you guys got a glimpse of me! I occasionally enjoy eating greasy fried food & sipping on some delish slush like margaritas. 🌶 Beet Hummus & Avocado Toast ⏲ Under 5 mins Finishing up the last of my beet hummus on this super filling breakfast toast 😊 Had trouble sleeping last night but hoping to make it through this day 👍🏼 Happy Monday everyone!☀️ ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Recipe📝 ▫️1/2 can Chickpeas ▫️1 tbsp Beet Powder (@wholefoods) ▫️1 tbsp Tahini ▫️1/2 Jalapeño ▫️1 Lime, juiced ▫️1 clove Garlic ▫️3 tbsp Olive Oil ▫️Seasonings - Chili Powder, Cumin, Salt & Pepper ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Blend all the ingredients together in a food processor. It’s that simple! Throw em all together & make a stew 👌🏼 Loving this warm delicious stew just as the days are finally about to get sunnier down here in Texas☀️ We’ve had a couple of dreary weeks & I’m excited to see the sun again 😊 Ready to enjoy the outdoors this weekend🚴🏽‍♀️ ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Recipe📝 ▫️1/4 Onion, chopped ▫️2 cloves Garlic ▫️1/2 tsp Ginger ▫️1/2 can Chickpeas ▫️1 small Sweet Potato, cubed ▫️1 cup Butternut Squash, cubed ▫️1/2 Jalapeño, chopped ▫️Frozen Peas ▫️1 cup Crushed Tomatoes ▫️2.5 cups Vegetable Broth ▫️1/2 cup Quinoa ▫️1/4 cup Green Lentils ▫️2 handfuls Spinach ▫️Seasonings - Chili Powder, Cumin, Smoked Paprika, Salt & Pepper ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Prepare all your veggies. Then in a pot, add in some avocado oil & sauté the onions, garlic, & ginger for 3-5 mins. Then add in all the seasonings. Stir together, cover, & let simmer for 15 mins. (If you have lost too much liquid, add water or more broth). After 15 mins, the quinoa should be cooked.
