Desk lunch ain’t boring when it looks like this! I’ve found my new favorite lentil salad, tossed with so many veggies and herbs and flavors, and so easy to scoop into some Tupperware and top with a grilled chicken breast. Also great for a summer pot luck...now to get someone to host one 🙏 - 1 c green lentils, dry 2 c baby spinach, sliced into ribbons 1/2 red onion, diced small 2 cucumbers, seeds removed and diced 2 red bell peppers, diced 1/2 c sliced green olives 1/2 c mint, chopped 1/2 c parsley, chopped 2 T capers 2 T olive oil 1/4 c red wine vinegar 2 T mustard Salt and pepper - Put the lentils in a saucepan with 4 c water. Bring to a boil and cook 15 mins. Drain, put back in the saucepan, and add the sliced spinach. Toss to wilt. - In jar or small bowl, combine the olive oil, vinegar and mustard. - Put all of the veggies, olives, capers and herbs into a large mixing bowl. Add the lentils and dressing - toss to combine. Season with salt and pepper to taste.

My pick for day 1 is Easy Ottolenghi by obviously @ottolenghi It’s not even a book but a free booklet that came with a copy of @guardian on 16 April 2016. That was the day when I realised that I could cook Ottolenghi rather than eat at Ottolenghi. That was also the day when I realised that cooking could potentially be something I enjoyed doing rather than something I needed to do for my family. At that point I still didn’t have any UK cookbook so that was essentially the day it all started. That is why this little booklet is special. By the way this booklet is a kind of prototype for Ottolenghi’s latest cookbook Simple and many of the recipes in it have made into the book. For some reason, though, my most memorable dishes (pic 2,3) haven’t. It’s been a while but I will soon make them again and post them here as they are really great dishes. Before Spring Leaves Us!!! You must take advantage of all the pesto alternatives, all the variations on pesto you can do! Simple, easy and delicious! What you need is a great olive oil from a maker you trust, for me it's my local @mcevoyranch just over the boarder in Marin County. A hard Italian Style Cheese like Pecorino Romano ( it has the most flavor for this sort of thing!) some nuts, for me this time it's Pine Nuts but Pistachio would be awesome with all this spring time goodness, and finally a base! This time of year you can combine seasonal peas and fava beans with fresh herbs like Dill (talking to you @akatrielle), mint, lovage, and chives, even store bought organic basil (@traderjoes makes a great organic one! Shhhh .. ) mixed in for consistency helps to unify the pesto story...oh and of course some garlic for good measure!! Foraged garlic, dandelion greens and wild nettle all add a nice nutty component. I love freezing it in ice cube trays for later, especially those nights I, or my spouse want something homemade but don't want to work for it! Pasta is obvious but topping broiled fish, roasted chicken or a finished grilled flank steak works too! And absolutely do NOT forget the veggies...BBQ carrots with feta and pesto, roasted cauliflower or baked potatoes..the list is endless!!!!
