Egg fanatics who has been making enough excuses to go Vegan, please try making yourself an epic Tofu scramble on toast 🙋. . . . I made this yum toast by sauteing onions, bell peppers (all colors I could get my hands on), few chopped garlic, added salt, pepper, some Sriracha sauce for a spicy zing and chilli garlic sauce. To which I added tofu broken crushed bits and after nicely mixing it, I finished it with some vegan cheese ( which is fully optional and can be swapped with nutritional yeast or leave as is). Serve with toasted bread 🥪🥪🥪🥪. . . . So usually I add Indian masalas to my tofu scramble, but this time I was up for an experiment. Laab/Larb is one of our favorite dishes in our household. It’s often made with chicken, beef, duck, fish, pork or mushrooms and is commonly eaten in the NE region of Thailand (where my Mama is from). It is flavored with fish sauce, lime juice, toasted ground rice, and fresh herbs. The meat is minced and mixed with spicy chili, lime juice, fresh mint, cilantro, and assorted vegetables — often served as a salad or on top of jasmine rice. It’s so flavorful and yummy and I make it often because my husband loves it so much. And it’s soooo easy!
😦 this salad was so big I literally had to take a break half way into eating it. Tofu marinated in sriracha, roasted chickpeas, homemade croutons and made v ranch as a dressing! The rest are just veggies. Croutons are so easy to make!! I used some bread I had kept in the freezer so I had to defrost it in the toaster first. But cut the bread in small squares and pour some olive oil mixed with rosemary, garlic powder, onion powder then some salt and pepper. Bake at 350 for 10-15 minutes depending on how soft you like them. I’ll put the recipe for the ranch and roasted chickpeas in a future post!
Stir-fried noodles with sriracha-base spicy sauce! Japanese style ramen noodle stir-fried in Viet or Chinese spicy sauce base to mimick Korean instant spicy noodle. Quite pan-asian, right? 남은 식재료 중에 일본식 생라멘이 아직 남아서 뭘 할까 하다가 불닭볶음면과 같은 자극적인 볶음라면을 만들었다. 죄책감이 들어서 나름 야채라고 아스파라거스를 굽고 음식을 버리면 안된다 생각하여 지난날 구웠던 삼겹살을 얹고 프로틴(파하하!!!)도 생각하여 체다치즈가 들은 소세지를 구워서... 1회 식사를 하기로 한다. 🍲🥢 #panasian#stirfry#noodle#먹방꿈나무#sriracha#loveit#단탄지
