Buckwheat soba noodles (found in the Asian food section of the supermarket- taking 3 minutes to boil), 1 can of tuna (or protein of your choice), sliced coloured salad and veg of choice, a splash of Tamari sauce, lemon juice and cracked black pepper ✨😋
The exact thing you were dreaming of to spice up these chilly fall days -> Soba Noodle Salad. It would also be the perfect thing to bring to a holiday gathering, switch it up a little the world has enough green bean casseroles, bring this instead✨ — Ingredients: Spicy Peanut Dressing 3 tbsp peanut butter 1 tbsp tahini optional 1 tbsp rice vinegar 2 tbsp sesame oil 2 tbsp honey juice of 1/2 a lemon 2 tsp minced garlic 3 tbsp Tamari or soy sauce 1/2 tbsp chili garlic sauce or more to spicy taste level 1/4 cup peanuts water to thin to✨ — Soy Ginger Dressing: 3 tbsp sesame oil 3 tbsp Tamari or soy sauce juice of 1/2 lemon 1/2 tbsp fresh grated ginger 1/2 to 1 tsp ground ginger can be used instead 2 tbsp honey 1/2 tbsp chili garlic sauce or 1 tsp red pepper flakes optional✨ — Salad: 8-10 ounces cooked soba noodles 1/2 cup shredded carrot 1/2 cup shredded red cabbage 1/2 cup sliced green onions 1 cup diced cucumber 1/2 cup cut snap peas 1/2 cup red or yellow sweet pepper julienned 1/4 cup sesame seeds✨ — Optional salad ingredients: diced cooked chicken sliced tender asparagas edamame cilantro bean spouts chopped peanuts✨ — Instructions: Peanut Dressing Add all peanut dressing ingredients except water.to small food processor or blender. Blend until well combined. Thin by adding 1 tbsp of water at a time and blend until desired dressing consistency. Set aside Soy Ginger Dressing Add all soy ginger dressing ingredients to blender or shaker. Blend or shake until well combined. Set aside. Assemble Salad Cook soba noodles according to directions on package. Do not overcook. Drain and rinse with cold water. Combine noodles and desired salad veggies in large bowl. Pour on your choice of dressing and toss to coat.

We just enjoyed our last meal in Singapore before we're heading off to Penang, Malaysia. To be honest, it was probably one of the tastiest dishes I've had here so far. We went to @soulalifesg where I had the green soba noodles with carrot, purple cabbage, edamame, tofu, beetroot and cucumber. All topped with a yummy sesame sauce. So good! 😍
