Well figured since today is #throwbackthursday and I am officially competing in round 2 today for the #reloadgameofbones contest being held by @reloadrub thought this would be great time to share more of this amazing cook. Basically I smoked some beef shorties I found on sale but with a fun twist that turned out amazing. I started by rubbing these down with @threelittlepigsbbqrubs touch of cherry mesquite rub which is awesome by the way. Then started @primoceramicgrills until it reached 250. Then I added pan of underneath the ribs with cherry juice and water. Then created a spray combo of cherry juice and @evanwilliamsbourbon cherry to use as spritz for for these short ribs, while smoking with cherry wood chips and charcoal indirect. Once internal temps reached 165-168 range I pulled off and placed in pan with cherry coke, more cherry juice and some more cherry bourbon, covered with double aluminum and cooked direct until they reached 202-205 internal temp You may be thinking too much cherry but honestly those ribs took the color and flavor perfectly and served with baked sweet corn honey cakes for an amazing combo...the family was impressed!
Yep! And that’s how you slow roast a first class Australian grain fed Picanha from @vannivo_vlees ! Do you want to know how? This is what I did! 1. Trim off fat and cut the fat cap in with a nice patchwork ( not to deep) 2. Fire up the grill with charcoal and sear the fat side short and crispy. 3. Cool down and rub it in with your favorite beef rub and/or seasoning. 3. Prepare indirect grilling 120 c with smoke pallets (not so much) 4. Slow roast and smoke the picanha until 52 c in the middle. 5. Let the picanha rest in tinfoil for 15-25 minutes before u cut it. 6. Cut your slices thin across the grain with sharp knife. 7. The delicious dishes served by @eakerbarbecue made them one of my favorite stops at the @houbbq festival. I am gonna have dreams about those loaded fries with house made kimchi. This is a perfect example of why Houston’s barbecue scene is the most exciting in the country.

Who else only cooks whole chicken with the spatchcock method? • Since our first spatchcock cooked chicken we have never gone back to any other method. So much flavor and perfectly cooked too to tip. This baby was smoked at 180 on a @TraegerGrills 575 for a couple hours then up to 400 to reach temp. We used that cobranded @leinenkugels Traeger Summer Shandy. This baby was juicy and flavorful.
