Ende Februar hat für uns die neue Gartensaison wieder angefangen.  Der Mangold und Nüsslisalat haben wir überwintert, beide sind vom letzten Jahr. Tomaten, Chili und Peperoni haben wir für das bevorstehende Jahr ausgesäht.

A glorious weekend spent in London, feasting with family and friends. Testing out new recipes and cooking old favourites for an alfresco lunch 🌞 Beautiful marbled beef and calcots from #moens, both cooked on a searing flame. The Spanish onions (first time I’ve tried them) were tender and smokily sweet🌱Peppery watercress and truffled mustard. Smoky zaalouk (aubergines and tomatoes, with sweet smoked paprika) from  the Casablanca cookbook, with soft charred Greek pitta bread and Verdemada extra virgin olive oil.  A spicy cornbread from Simple, made with halloumi from Cyprus and cream and Greek yoghurt (as I ran out of sour cream). We had @seedlipdrinks alcohol-free G&Ts, which I’m getting a taste for, but can’t quite work out which fruit to add to complement the aromatics. That was Sunday. Asparagus Stuffed Salmon Rolls with Lemon Sauce 😋💗 . . 📷 @closetcooking 📷 Follow us @me.nfood ☑️ . . #ingredients 📕 4 (5 ounce) salmon fillets, skins removed salt and pepper to taste 1 (12 ounce) container ricotta 1/2 cup parmigiano reggiano (parmesan), grated 2 tablespoons basil, chopped 2 teaspoons lemon zest salt and pepper to taste 1/2 pound asparagus, trimmed 1 tablespoon butter 1/2 cup chicken broth 2 tablespoons lemon juice 2 teaspoons cornstarch —— #instruction 📖 Season the salmon fillets with salt and pepper to taste, lay them down with the skin side up, top with the mixture of the ricotta, parmesan, basil, lemon zest, salt and pepper, several spears of asparagus and roll them up before placing them on a grease baking sheet with the seam side down. Bake in a preheated 425F/220C oven until the salmon is just cooked, about 15-20 minutes. Meanwhile, melt the butter in a small sauce pan over medium heat, add the mixture of the broth, lemon juice and corn starch and heat until it thickens, about 3-5 minutes. Serve the salmon rolls topped with the lemon sauce and optionally garnish with more basil and lemon zest.

TUMIS JAGUNG MANIS By  @doctordailykitchen "Amankah jagung untuk penderita Diabetes?" Berdasarkan tabel nilai Indeks Glikemik Harvard Medical School, per 150 gram jagung memiliki Indeks Glikemik 48, dan Beban Glikemik 14, yang jauh lebih rendah dari nasi putih. Beberapa penelitian menjelaskan bahwa jagung AMAN bagi penderita diabetes. Karena selain memiliki Indeks Glikemik dan Beban Glikemik yang rendah, serat dari jagung pun dapat dicerna lebih lambat oleh tubuh, sehingga gula darah akan lebih terkontrol.  Bahan 1 jagung manis, sisir menggunakan pisau tajam 1 kol putih ukuran kecil, potong lebar 2 bawang putih, memarkan 1 bawang merah, iris tipis 3 cabe domba merah, iris serong tipis 3 cabe keriting merah, iris serong tipis 4 tomat ceri, potong jadi 4 bagian 1 bawang daun, iris serong tipis 1 gelas air 1 sdt garam Minyak secukupnya  Cara 1. Panaskan minyak, masukan bawang putih, dan bawang merah sampai harum. Masukan jagung, kol, cabe dan aduk hingga layu. 2. Tambahkan air, garam dan biarkan mendidih sampai matang. 3. Garbanzo & Clam Stew, made with these beautiful clams from @fishforitmy .#CookWithFishForIt . Ingredients: Clams, Garbanzo (Chickpeas), Tomato, Cabbage, Chilli Flakes, Salt, Cilantro, Water & Olive Oil. . 1. If using dried garbanzo, soak overnight and boil for an hour. 2. Sauté garbanzo in olive oil for 30 seconds. 3. Add tomatoes and season with chilli flakes and salt. 4. Mix in cilantro stems and shredded cabbage. Stir fry well for a minute then add the deshelled clams.  5. Pour in half cup of water and mix well. Simmer till liquid reduced. 6. THAI NOODLES (s/o to @eatsbyames for the recepie)! They really taste like Thai food (made me so happy)😭❤️ I used fettuccine (next time I’m gonna try it with egg noodles) and I added eggs and tofu 🥚 For veggies I had red bell pepper and snap peas and I think it was perfect👌🏼 Directions: sauté vegetables with olive oil and boil the pasta.  In the mean time make the sauce: -1/2 cup plain peanut butter (I only had sweetened one, so I simply grinded peanuts) -2 tbsp lime juice -1 tbsp honey -1 tbsp hot sauce (or more if you like it really spicy) -1 tbsp apple cider vinegar -1 tbsp olive oil -2 tbsp soy sauce -garlic (~2 cloves, but again, depends on how much you like garlic) -splash of water Top with peanuts and cilantro😊 Note: the sauce is what brings the Thai flavor, so don’t skip on that! 🌶 • • • • • • #thaifood#asianfoodrecipes#dailydinner#thaipeanutsauce#simplecooking#spicynoodles
I hate grilling but want succulent, fall off the bone ribs! These never last in my house! Here’s the recipe! Enjoy! 😋1 Rack or ribs pork or beef 1 tbs coriander 1 tbs pepper 1 tbs garlic salt 1 tbs paprika  1 tbs Italian seasoning 1 tbs season salt 2 bottles of bbq sauce 1/4 Brown sugar  1/4 cup Maple syrup  1/4 cup Tabasco sauce  1/4 mustard  1/4 melted butter Preheat oven to 300. Peel the silver membrane off the ribs. Combine all seasonings and rub on both side of the ribs. Place ribs on a cookie sheet and cover with aluminum foil.Bake for 4 hours.  In a bowl, combine bbq sauce, brown sugar, maple syrup, Tabasco sauce, mustard, and butter. Once ribs are done cooking, carefully pour sauce on top and under ribs. Broil uncovered for 10 minutes. Last night's dinner. Grilled ribs, asparagus and deviled eggs.  I seasoned the ribs with a glaze made from golden monk fruit sweetener (that I packed in my luggage), garlic salt, pep and paprika and avocado oil. I'm waiting for my new skillet top grill to arrive and our new house does not have an oven. So my cooking method options include a small grill and a two burner propane stove top! Meal prep Monday 🥘 💪🏻 what’s on this weeks menu?! . . Before we get into what I cooked wanted to share that in tonight’s IG story meal prep series I shared some really fun news that we are having a BOY!! It’s worth a quick peak at my story to see the video. Was really fun to share. Thanks for the love and support 💙 we are so excited! . . As for what I cooked this week. This all took me 1 hour and 15 minutes. (4:44-6:02 to be exact). If I can do this YOU can too!! . . 1. Whole chicken in Instantpot. Will serve with my Trader Joe’s roasted veggie mix of French green beans, shredded carrots and their shredded Brussels sprouts. It’s SO easy. Just open each bag, pile on a baking sheet and add avocado oil and salt. Then roast! Will also serve with brown rice.  2. Grass fed beef with sautéed onions, mushrooms and cauliflower rice. Will top over a baked yam and wilted spinach.  3. Wild sockeye salmon with steamed bok choy on top quinoa pasta. Will dress with toasted sesame seed oil and coconut aminos.  Others: steamed artichokes and soft boiled eggs. Have plenty of greens for salad lunches along with deli turkey for quick protein along with sardines  Also have tons of fruit this week as usual 👌🏻 . .
