Baked chicken strips with corn & tomato salad (under 30min mid-week dinner option) ~ If you’re short on time (school, work, sports, social commitments ... we’ve all been there), it can be hard to make easy and healthy choices/meals. It is very tempting to reach out for convenience foods (not the most nutritious foods) that leave you feeling blah ... To avoid this happening, planning your meals for the week is a real time and health saver. ~ Your plan 🗒 ✍️Take some time each week (I usually do this on Thursdays) and plan your meals for the week 🛒 go shopping with your ingredients list 🍴prepare (if possible) some meals ahead of time 🤞and stick to this routine ~ Ingredients - makes 3 serves: 1 chicken breast 1 tbsp smoked paprika 1 cup cornflackes crumb 1 cup Greek yoghurt 1 tbsp dried mint 1 clove garlic (crushed) 1 can corn 2 tomatoes (chopped) 1/2 red onion (sliced) salt, pepper, olive oil ~ STEP 1 In a bowl mix yoghurt, garlic, mint, salt and pepper. Put 1/4 of the mixture into small bowl and use as a dipping sauce with strips. STEP 2 Preheat an oven to 200 degrees. Put crumbs and smoked paprika on plate and mix well. Cut chicken into strips, dip in yoghurt mixture and coat in crumbs. Place strips on the baking tray and lightly spray with olive oil. Bake until golden and crispy. STEP 3 In the meantime, prepare the salad. Place chopped tomatoes, onion and corn in a bowl and season with salt, pepper and olive oil.
Less than one month until we get married! Wedding planning has def not been one of my favorite things to do (prob last on the list), but one thing I thoroughly enjoyed is the food/cake tasting! I'm pretty pumped about what is going to be served at our wedding to say the least. I loved some of them so much, I'm recreating them on the blog - like this roasted carrot and arugula salad with avocado & feta! It def doesn't lack in the flavor department and so many great textures and flavors - creamy, salty, sweet, crunchy, and some acidity. It looks fancy, but is super easy and makes a perfect dish for the fall and holiday gatherings.
