Inspired by @danielhumm @elevenmadisonpark Tartar of rump cap, Egg yolk, Radish, cress. . Tartar was season with Dijon, Shallots, Cornichons, Capers, Parsley and Raisins. . Egg was boiled for four minutes then separated from its white, seasond with salt. . Next time instead of sliced raw radish on top. Do variations. Such as pickled and confit. Still will keeps its crunch. Just adding more flavour then raw radish. Good refinement.

Rump cap has been a recent revelation and one of the tastiest things to come out of my smoker. I picked up this @stockyardbeef red rump cap from @the_meat_inn_place_ I trimmed all the fat from the top, used a 50/50 salt and pepper rub and put it into the smoker at 225f. Once this hit an internal temp of 125f it was taken off, double wrapped in foil and thrown into an esky for 20mins. In the meantime I threw some extra fuel into the firebox and got it super-hot for a sear. After 20mins rest to reabsorb the juices it was unwrapped and seared 20 seconds each side.
