For a halal-version, omit the cooking wine and Chinese sausage.... happy cooking and enjoy! Chicken Rice in Claypot by Mama Ding's Kitchen Prep time: 1 hr. Cook time: 20mins. Servings: 1 Ingredients: A]For the rice ~ 300ml rice, washed and drained 420ml water B]For the marinade ~ 500g chicken, bone in, cut into 4cm pieces 1 tbsp ginger, peeled and finely chopped 1/2 tsp dark soya sauce 1 tbsp oyster sauce 1 tsp sesame oil 1 tsp salt 1/4 tsp white pepper powder 1 tsp sugar 1 tsp cornstarch C]For the drizzling sauce ~ 1 tbsp light soya sauce 1/2 tbsp dark soya sauce 1 tbsp oyster sauce 1 tsp sesame oil 2 tbsps cooking wine (Huatiao or any cooking wine) 2 tbsps water D]For the topping ~ 1 Chinese sausage, sliced thinly 2 shiitake mushrooms, soaked, drained and sliced thinly 1 stalk spring onion, sliced finely 1 small piece of salted fish(optional) METHOD: In a bowl, mix all ingredients B] and marinate for at least 1 hour. Mix all ingredients C] to make the drizzling sauce. Set aside. Rinse the rice until the water runs clear. Drain and transfer to the claypot. Add the 420ml water to the rice. Simmer over low heat with the lid on for 10mins. Uncover and spread the marinated chicken, shiitake mushrooms, Chinese sausage and salted fish(if using) on the top of the rice. Spread as evenly as possible. Drizzle sauce C] on it and cover. Cook over low heat for another 10mins. Garnish with spring onions and serve hot. *Note: We use a glazed Chinese claypot(20cm diameter) that comes with a lid to cook this dish. POST EASTER CHOCOLATE SMOOTHIE BOWL Hands up who are waaayyy too much chocolate over the break 💁🏼♀️ Growing up, Easter for me was all about fun times in the country with the family, trying to win the Northern Times Newpaper colouring competition, Easter egg hunts and eating chocolate until I couldn’t move. This year it was all about recharging, spending quality time with loved ones, yoga, family hikes and nourishing myself with delicious and nutritious food. My brother, sister and I thought it was hilarious that one of our friends would eat chocolate for breakfast, lunch and dinner over Easter- yes he actually put chocolate and milo on toast- to us this was so bizarre (keep in mind this is pre Nutella) 😋 Well now I enjoy chocolate for breakfast- in the form of delicious organic cacao smoothie bowls 😜 However you celebrated this time of year, I hope you created beautiful memories and showing love to yourself, friends and family. ▫️2 frozen bananas ▫️1 cup of @purecocobella coconut water ▫️1/2 cup of ice ▫️4 medjool dates ▫️1 tbsp. hemp seeds ▫️1 tbsp. Cod/Tilapia With Confetti Coconut Rice I've made this before using jasmine rice and it was one of my favorite rice dishes. However, since my wife is doing low carb I decided to try this with cauliflower rice. What I did differently was I sautéed the veggies first then added in the cauliflower rice, which I made using a cheese grater. Turn the heat to medium-high and bring to a boil. Cover, reduce the heat to low, and simmer for 10–12 minutes or until the rice is tender and the liquid has been absorbed. Meanwhile, season the cod fillets on both sides with the remaining 2 teaspoons of salt, the pepper, and McCormick Dried Cilantro Leaves. In a large skillet, heat the vegetable oil over medium-high heat. Once the oil is almost smoking, lay each fillet in the pan. Sear until fish releases from pan with ease and is golden brown, about 5 minutes. Using a fish spatula, flip each fillet and sear on the other side until cooked through, about 3 minutes. To serve, scoop rice onto each plate and top with a cod fillet. Serve with lime wedges.
French Onion Salmon - makes 2 . You guys, I think this may be my most successful Instagram Story Cooking experiment to date. I came in from the pouring rain and all I wanted was comfort food. Problem was I just bought salmon at the grocery store, which doesn’t typically scream comfort food. I thought about everything I had in my cabinets and came up with this concept. It’s so, SO good. Super flavorful without weighing you down. I served mine over croutons and greens because again, it’s what I had at home, but I also think it would go great with some wild rice or maybe cheesy pasta if you’re feeling dangerous. As always, slide into those DMs if you make it yourself and let me know what you think! . 2 4 Oz salmon filets 1 tbs unsalted butter 1 yellow onion, thinly sliced 1 tsp dried thyme 1 tbs brown sugar 2 tbs balsamic vinegar 1/4 cup beef broth Salt & pepper 1 Oz gruyere . Using an oven-safe pan, melt the butter over medium heat and add the thinly sliced onions, sautéing about 2 minutes before adding the thyme and then sautéing for about 10 more minutes. Add the brown sugar and balsamic and continue to sauté until the onions almost feel syrupy. Pour in the beef broth and continue to sauté until it’s mostly evaporated. Push the onions to one side of the pan and add the salmon to the center, seasoning both sides with salt and pepper. Cook the salmon for 3 minutes on each side. Meanwhile, turn on the broiler. Add the onions on top of the cooked salmon and top with one thin slice of cheese each. Broil for 2-3 minutes until cheese is melted. It’s so good I’m not kidding 😋In the past, I’ve made hibiscus flower mole tacos but tonight we go big! Here we go: first, boil your hibiscus flower (about 150g) for about 15-20 min, then rinse and squeeze the water multiple times until the water turns rose and is no longer dark red. In a pan sautéed your flower with 1/4 cup tamari sauce, 1 tsp garlic powder, 1/2 tsp paprika, 1 tsp agave or sweetener of your choice to remove any bitterness, 1/4 dry oregano, 1/4 tsp cumin, 1/4 tsp dry basil adjust salt and pepper to taste. Cook for about 10min! For my wrap: I’m using a massive homemade tortilla, I added guacamole, Pico de Gallo, beans, and sautéed bell peppers. Where did the spaghetti noodle go to dance?? ..The Meat Ball! 💃 💃 🤣 ‘’ “” “”” 1. Chop up mushrooms, half a green pepper, and half a Spanish onion. 2. Heat a cast iron frying pan on medium temperature , and set oven to 400°F 3. With 2 tablespoons of olive oil, add the chopped veggies to the pan and fry covered. 4. After 4 minutes, add one package of unfrozen lean ground beef meatballs to the pan. I bought mine freshly made @sobeys 5. In a separate pot bring 2 cups of water to boil 6. Once boiling add spaghetti noodles and cook as per package directions 7. Once noodles and meat are cooked, strain the noodles and add into the meat and veggie mixture 8. Top the mixture with spaghetti sauce. I used Classico Roasted Garlic and Onion. 9. Mix well, and then top with shredded cheese. I used triple cheddar 🧀 10. Easy Chicken Patties 👍👍 These delicious, homemade, lean patties are simple to make and are always a hit at our house. My little ones think that they're chicken nuggets 😉 Call them what you want; sliders, chicken burgers, nuggets or patties. They're super versatile and perfect for wraps, salads, burgers and more! Also delicious on their own or as a side dish, dipped in your favourite sauce. . INGREDIENTS: **** Chicken Patties **** ◾Approximately 1lb/0.5kg of ground chicken ◾1 egg ◾1/2 teaspoon of salt ◾1 teaspoon of onion powder ◾1 teaspoon of garlic powder ◾1 teaspoon of paprika powder ◾Pinch of pepper ◾1/3 cup of breadcrumbs + 2 tablespoons ◾2 tablespoons of parmesan cheese **** Breadcrumb Coating Mixture **** ◾3/4 cup of breadcrumbs ◾2 tablespoons of parmesan cheese ◾1/4 teaspoon of salt . DIRECTIONS: **** Chicken Patties **** 🔹️In a large bowl combine all ingredients for chicken patties. Mix together well with a spoon then using your hand mix again until all ingredients are very well combined. 🔹️Scoop out approximately one heaping tablespoon full of mixture and using both hands form/create a patty shape. Place patty on to a plate. Repeat until all mixture is used. Set patties aside. 🔹️In a wide/shallow bowl combine all breadcrumb coating mixture ingredients. Mix well. Toss each patty in the mixture, coating both sides. 🔹️Stovetop heat a large pan and coat with cooking spray, olive oil or vegetable oil. Reduce to medium heat and place patties on the pan. Cook for approximately 4-5 minutes on each side. If required (depending on the thickness of your patties) flip again and add an additional minute to each side. Enjoy 😋 . Even if I had a full fridge and pantry (which I’m not even close to having, still 🤦🏼♀️ 3 days home from vacation ) I would (and will!) go back to this pasta dish again and again 😍 Started by sautéing spinach and @yankeechickenco homemade chicken sausage, then I made a Parmesan cream sauce with a basic roux, added homemade chicken stock for some flavor, @mountaindairy whole milk, and grated Parmesan cheese and then thinned with pasta water until it was perfect 👌🏻 #quickandeasymeals
Low-Carb Cottage Pie 🥧 ** 1. Pre-heat oven to 350° 2. Chop up half an onion, half a jalapeño, half a green pepper, and half a package of white mushrooms 3. Place a cast iron frying pan on the stove and heat to medium with two tbsp. of extra virgin olive oil 4. Once the pan is heated, add your lean ground beef and break it up using a spatula. 5. Add all veggies except mushrooms to the pan. 6. Cover the pan and fry for 12 minutes, stirring often 7. Break up a full head of cauliflower, and remove the large stem sections 8. Boil the cauliflower for 10 minutes. 9. Drain the excess fat from the beef and veggies once the meat is completely browned. 10. Add your mushrooms and one pack of shepherds pie seasoning mix to your beef and veggies 11. Strain the cooked cauliflower well, mash with a potato masher and drain excess water. 12. Mash half a block of light cream cheese into the cauliflower 13. Top your beef and veggie mixture with the mashed cauliflower and sprinkle with shredded cheese of choice 14. Steak & Simple Sides ‘’ 🥩 🥒 🍅 🍚 ‘ 1. Brush steak with a few tbsp. of extra virgin olive oil and then sprinkle both sides with steak seasoning 🧂 making sure to use a fork to press the spices into the meat. I used @thekegsteakhouse 2. Rinse basmati rice until the water runs clear. Follow Package instructions to cook the rice using a rice cooker. Approx. 15 minutes 3. Chop up a cucumber and two tomatoes and place in a salad bowl. Add two tbsp of olive oil, salt, pepper, oregano, and parsley flakes. Mix well 4. Heat a frying pan to medium heat 5. Place the steak inside heated pan and let cook for 5 mins 6. Flip steak and cook for another 4-5 mins 7. Remove the steak from heat, and serve with rice and salad as side dishes ‘ Bon Appetite 👩🍳 ❤️
