On the outside, I presented myself to my work colleagues as a confident, successful Businesswoman, while on the inside I was scared of being found out, ashamed to admit I am disabled, worried what people would think if they knew and of being treated like a victim. . Recipe by @theendlessmeal Photo and recreation by @andapinchoflove ~ This insanely creamy Spinach Lemon Cauliflower Rice Risotto is all things delicious. It’s made with sauteed cauliflower and a healthy cauliflower cream sauce (dairy-free or regular, your choice!) and has lots of fresh lemon flavor. Top with some spicy garlic prawns for a simple to make dinner everyone will love! ~ 1 tablespoon olive oil 1 medium onion, finely minced 36 ounce Cauliflower “Rice” 1 cup vegetable broth 5 ounces baby spinach OPTION : CHEESY LEMON CREAM SAUCE 1 cup milk~1 cup white cheddar cheese ~1/4 cup grated parmesan cheese~1 teaspoon sea salt ~Juice of 1 lemon OPTION : DAIRY-FREE LEMON CREAM SAUCE 1 1/2 cups vegetable broth~1 cup raw cashews or pine nuts 1 tablespoon nutritional yeast~1 teaspoon sea salt~Juice of 1 lemon THE GARLIC CHILI PRAWNS 1 tablespoon olive oil or butter 2 garlic cloves, very finely minced 1 lb. uncooked, peeled prawns (tail on or off, your choice) 1/2 teaspoon paprika A pinch of chili flakes and sea salt Heat the oil in a large frying pan over medium heat. Add the onion and cook until it is transparent, about 3-4 minutes. Add the cauliflower and broth and bring to a boil. Cook the cauliflower, stirring occasionally, until it is soft, about 8 minutes. Remove the pan from the heat. If you’re using the Cheesy Lemon Cream Sauce: Remove 2 cups of the cauliflower and add it to your blender with the milk. Blend on high until smooth. Add the cheddar, parmesan, sea salt and lemon juice and blend again until the cheese has melted. If you’re using the Dairy-Free Lemon Cream Sauce: Remove 2 cups of the cauliflower and add it to your blender with the cashews, nutritional yeast, sea salt, and lemon juice and blend on high

Every So Often, I Read a Book That Blows Me Away ❤ Reading this story was definitely one of those times. Since so many of you have been asking for a review, I decided to write this post this week as I've just finished Educated + the FEELS are fresh in my mind. 👉Please note: I don't write these reviews because I think I'm a super book critic 🤣 I love writing, always have, + I love reading almost as much - sharing that with you guys has prompted requests to review what I read + I'm more than happy to! . . 🍀So. Educated. I won't spoil the story for those who haven't read it, in fact, I'm a little green that I can't start it all over again 🤣 It is the incredible story of Tara Westover, a young woman from Idaho from a Mormon family who tells the story of her life from childhood to adulthood, as she moves from the constraints of her family's belief system to the real world (present + past) she's never experienced until university. It's a story of hardship, grief, love, challenging norms + ultimately, education. . . 🍀 This book had me hooked from the first page. The ordeals Tara goes through, physical, mental + emotional - everytime you think you've read the worst one, you probably haven't. I think what stood out to me the most about Educated were 2 big take homes 👉 . . 🍀 1. The importance of learning who you really are, what you think + believe outside of the influences you grow up with, + having an independent mind. Much of that does stem from the privilege of having an education, but regardless the degree to which Tara struggled with + eventually overcame the battle between her own thoughts + those she grew up heading really stood out to me. The ability to challenge + change your mindset. . . 🍀 2. The value of education. I recently asked my dad what, if given one action only, would he do to reduce social + health inequalities in Ireland. It was a topic of my exam last week so i was studying the many options - more equal access to health

Some of my current faves (probably the weakest person but I’m trying 😅) I am in no means a fitness expert (clearly😂) but I just wanted to show u guys some of my favourite upper body exercises atm however I know this is pretty average I just want to encourage you to just go for it if you’re feeling nervous about joining a gym !! Piglet and Pooh have always made my heart melt . I am a born romantic and to be honest was always kind of embarrassed embodying that energy .I am learning to give and receive Love whole heartedly . I am learning to be in Love with Me 🤩. Have you ever just held space for a loved one , a friend , a coworker ? Just being in the environment, without projecting or expecting 🌳 Toddlers and kids often hold space for the adults in their lives . They just lightly brush against you , or keep their lil hands into yours , look into your eyes , or they just whisper your name ,giggle and carry on being themselves wholeheartedly . Let’s start everyday by holding space for ourselves first . We can do this by . -Slowing Down -listening without being in a hurry to respond -being ok with not knowing the answers to everything -practising mindfulness while doing routine tasks -Being present with our bodies # -dropping awareness from our head into our heart a few times a day. -turning our attention to our in breath and out breath -taking social media breaks a few times a day. ( yes!!!keep the phone away after reading this post and focus your attention on the sensations you feel in your hands ).
