Amongst the world of leafy greens, kale is king 👑 for a number of reasons. One cup of raw kale has vitamins A, K, C, B6, manganese, calcium, copper, potassium and magnesium in substantial quantities. Kale is also known for its powerful antioxidants.  It does bake down, so when making kale chips, pop an extra tray in the oven as well! To make them, preheat the oven to 425 degrees Fahrenheit or 220 degrees Celsius. First, thoroughly wash and dry your kale. Next, cut out the hard stem and chop the leaves into bits. Toss them onto a baking tray, season with a dash of salt and pepper and drizzle ever so lightly in olive oil. Turn over half way through baking. Bake for 20 minutes, till crisp at the edges and 💥 ! Today’s delicious array of goodies include: 💗Breakfast: 1 slice sprouted bread, ½ avocado, 2 boiled eggs 💗Morning snack: Mixed nuts + grapes 💗Lunch: Brown rice and roast veggie salad with feta 💗Afternoon snack: Cucumber + roast sweet potato dip + apple 💗Dinner: Grilled chicken, roast potato bites + mixed bean salad (leftovers) 💗Dessert: 3 squares dark chocolate  Remember our number 1 tip is to focus and getting all the good stuff in - are you eating enough fruit, veg, quality protein and whole grains. Don’t think about what you need to restrict or exclude. By focusing on the good stuff, there won’t be much room let for crap 👍😁💯

Last week we showed you how to revamp sweet potatoes 🍠 and today we’re showing our friends white potatoes some attention. __  __  This 👆spud is made with 100% leftover fridge finds and took less than 5 minutes to prepare. It makes a hearty breakfast, lunch, or any time meal on-the-go all for just under 300 calories. Leftovers like these are so good they may become your menu regulars.  __  __  Spud dEats: •roasted Yukon gold potato (350 for 40-45 mins)  __ •scramble ingreds: 2 eggs, 1/3 cup fresh spinach, 2 tbsp chopped bell pepper, garlic (powder or fresh), salt and peppa __ •1/2 tbsp shredded parm or asiago cheese and hot sauce (optional but highly recommended 😜) __  __  Directions: roast potato (or reheat pre-cooked spud). In a small sauté pan heat olive oil over medium heat. Add bell peppers, garlic, salt and pepper. Cook for 2-3 minutes or until peppers are slightly tender but still crisp. Add spinach and scrambled eggs and cook, stirring frequently, until eggs are cooked. Remove and stuff into potato. This dinner was super simple but when I gave it to my 7 year old she said, “oooohhh yum! This smells delicious” 😋 She wasn’t wrong. It was scrumptious! These sausages were organic and grass fed, which is the way you want to go when it comes to red meat 👍 And cabbage is a superfood. The purple pigment supports gut health and all cruciferous veggies are important for healthy estrogen detoxification 👱🏼‍♀️ As is the onion, which was also in this dish.
