Is it just me, or can summer be one of the busiest times of year? I don't know if it's that I feel like I need to take advantage of every moment of extra sunlight, that my running training is ramping up, or that there are more social events to go to, but it's one of those times of year where I'm most likely to be falling asleep by the time I get around to eating dinner. 😴 So, to help me avoid having to bounce to bed *immediately* after eating, I've started to reach for recipes that are super easy, super filling (hello, training appetite!), and -- ideally -- provide me with plenty of leftovers for nights and lunches to come. Here’s a peek at my plate today. 1 can tuna in water (drained) mixed with 2 ½ tablespoons light mayonnaise 10 Ritz Crackers 50 g carrots 50 g broccoli 1 ½ Little Salad Bar Homestyle Ranch Dip from @aldiusa This quick lunch took me MAYBE five minutes to put together, and I could easily meal prep this by making the tuna ahead of time. Either way, I think it's a good choice...It kept me full until dinner! 453 calories, 30P, 32C, 23F

Pea soup Teo loves his green soups so I try and play around with different combinations of greens. This green soup so far is our favourite it’s creamy, delicious and easy. - Ingredients 400g fresh peas 350g chopped baby marrows 1 large chopped sweet potato 1 vegetable stock cube Salt to taste One chopped onion 1 clove of crushed garlic 1 litre of water 1tsp xylitol - Method Sauté your onion and garlic with xylitol until translucent. Add your chopped vegetables, water, stock and salt bring to a boil and then simmer for 30mins until your veggies are soft. Once your soup is ready blend it until smooth. For the base, melt the coconut oil and mix the base ingredients until dough forms 2. Press into cupcake moulds and place in the freezer for 10 minutes whilst you make the caramel 3. Mix together the caramel ingredients in a pan and heat (low-medium) for 5 minutes, until boiling, and the sauce starts to darken and thicken. Stir continuously. 4. Pour into tart moulds 3/4 of the way up and freeze for 40 minutes until the caramel is slightly firm to the touch 5. Melt the topping ingredients in a bain marie and pour over the caramel layer, freeze for 15 minutes 6. Bite in and hide the remaining stash from your family, flat mate, partner or friends because these are simply too good to share 😉😂 *If you can't buy gluten free oat flour, you can substitute
How do you keep healthy? If you are a dedicated veggies in the blender kinda gal I commend you!! That takes some serious commitment and organization. . That works for so many people, but I have to be honest and tell you that's not for me. I am all about maintaining a healthy regime and if you know me, you'll know that I want to live a very long and vibrant life with those I love!! . So for me, the quickest, simplest way to get all that nutrition in me is something I found nearly 10 years ago! (That's why I don't feel like I'm 53 haha!!) . 30 seconds to a fully balanced meal that not only feeds and fuels my body, but also tastes ridiculous (in a good way!) Boil the spaghetti. Prepare sauce and veggies 2. Sauté onion and garlic on a heated pan for 1-2 min 3. Sauté red pepper, red cabbage, and mushrooms for 2-3 min 4. Add in and sauté tomato, parsley, and sauce for another 2-3 min 5. FROMAGE & EGG SALAD from the salad bar at Galleries Lafayette in Paris!🥬🍅🥚🧀🥕 🥗base: lettuce 🥗hard boiled egg 🥗fromage (French for cheese) 🥗tomatoes 🥗carrot/purple cabbage combo 🥗beets 🥗carrots in ginger sauce 🥗green beans 🥗dressing: olive oil & vinegar Although food court salad bars aren’t always the best, I’d give this salad bar a 10/10 for variety & for having large pieces of fresh cheese on it!!!
FRUIT POPSICLES. It is getting hot out there and I’m sure everyone is looking for a nice cool treat to enjoy! Here is one that my daughter loves! . 2 c. Frozen or Fresh Fruit. ½ c. Frozen or 1 c. Fresh Spinach. 12 oz. Vanilla Greek Yogurt. . 1. Blend all of the ingredients in a blender until smooth. 2. Poor into popsicle molds and place in the freezer for 4-6 hours. Enjoy! . TIP: I recommend making at least a ½ cup of the 2 cups of fruit blueberries or blackberries to help cover up the color that the spinach makes the mixture. Now it will be purple instead of green and they will never know there is spinach in them! You know kids eat with their eyes! . This recipe is so easy and the great thing about it is, that you can use any fruit you want or any flavor yogurt too. If your kids don’t like the taste of greek yogurt use vanilla or even strawberry flavored yogurt instead! . If you want to add some extra sweetness just use a little bit of honey. Note: if you have children under the age of 1 you can sweeten it with a little bit of vanilla rather than honey. . *This recipe makes about 20 fl. oz. Anyone else drink iced coffee year round? Or do you switch it up hot vs. cold depending on the weather? I’m into iced coffee all year round but sometimes I go cold turkey on coffee altogether for months at a time. Coffee is the best thing ever - so good we had to make a Mocha Chip flavor - but sometimes that over caffeinated feeling makes me feel like roadrunner spinning his legs just before he zips away. It’s a little anxious feeling, heart racing, too much to get done not enough time feeling that for some reason too much coffee can cause 🤷🏻♀️ so when I’m not enjoying an iced Almond Milk Latte I usually stick to loose leaf green tea, sometimes a Matcha Latte or even just good ole’ H2O.
