Enjoy! . . . CHOCOLATE PEPPERMINT ALMOND BUTTER TARTS: Ingredients: ALMOND BUTTER TART: 1 cup @bobsredmill almond flour 1/3 cup @bobsredmill coconut flour 1/4 cup shredded coconut 1/3 cup almond butter 3 TBS coconut oil, melted and cooled 1/2 tsp baking powder CHOCOLATE GANACHE: 10 ounces chocolate chips 1/2 cup almond milk 2-3 candy canes, crushed - METHOD: Preheat oven to 350 degrees F and spray a tart pan with nonstick spray. In a food processor, blend together tart crust ingredients until fully combined into a soft dough. Add crust to the pan and press down to form an even layer. Bake in oven for 12-15 minutes, until golden brown and firm to the touch. While crust is baking, bring the almond milk to a simmer. Add chocolate chips into a small heat-safe bowl and pour steaming milk over the chips. Cover for five minutes, then stir until all chips are melted. Pour chocolate on top of the tart crust and spread with the back of a spoon. Sprinkle with crushed peppermint. Refrigerate for ~30 minutes until chocolate sets, then slice and serve! . . . #floraandvino#vegantart

Lately I’ve had occasional restlessness at night and can’t seem to settle down this has been going on for like seriously three weeks now. Last night I was like enough is enough and decided to have a long soak in the tub with lavender and Epson salts and added some lavender to my diffuser. I was out for the count best sleep ever. Roasted cauliflower soup and orange kale salad for dinner tonight. 😋 • I’ve had a headache all day for some reason. 🤕 I never get headaches...except for the morning after I have one too many. 🍷 It makes me feel tired and crabby. But this dinner made me feel just a little bit better. 😌
FATS OR CARBS FOR THE ENERGY SOURCE?! 🤔🌱REAL TALK PART 1 - Vegan fitness industry forced high carb diet, which seems very tasty & fun with a lot of carbs like 🍕🍔🌮🌯. The fact is that pizza will always has more attention than broccoli 🥦 , and health/fitness influencers know that Very well!! So, I follow that and try for very long time to get my shredded body and lean abs back like I’ve had before when I was eating low carb/high protein... and it just didn’t work for me. To be honest, I don’t even like that much carbs, I’ve never been a “carb person”😂. But I kept doing it because I didn’t think it’s possible to follow low carb vegan diet, because almost nobody promotes that 🤷🏼♀️ Well, a few day ago I run to @iamthevegantrainer Instagram and saw the opposite! OMG, I felt so relived!!! I’m all about healthy fats, greens & protein! So, I’m going to give a try and let you know how my low carb plant based HEALTHY FITNESS journey goes! STAY TUNED🤗 - On of my favorite low carb/KETO meals is this 🌱KETO SUPER BOWL: 1️⃣1 cup frozen spinach or kale 2️⃣1/2-1 cup frozen (cooked before or raw) cauliflower or zucchini or coconut cubes 3️⃣1tsp spirulina 4️⃣optional: 1/2 scoop vegan vanilla protein @pure_charge_nutrition (optional, you can also just add stevia or other natural sweetener for better taste because let’s be real, cauliflower and spinach don’t taste good🤢) 5️⃣1/2-1cup coconut unsweetened milk 6️⃣TOPPINS: I was so surprised when I found out that pumpkin & hemp seeds are so high in protein and amazing for fitness performances, on top of that I added raw almonds, nut butter and a handful of blueberries! - I’m also fasting every day for 16h, which is great because fats and IF go perfect together. This may not look like much, but it was honestly one of the best lunches I’ve had in a while and so easy! Sweet and purple potato with buckwheat pasta, pine nuts, cashews and pesto 😍😍 went down a treat!

Back in my healthier days, I used to be able to run 10k. Now I’m bagged after 3 🤪 You can let it discourage you, or you can let it motivate you. My goal is to get back to 10k in 2019, half marathon by 2020 💪🏻 PS. My husband just bought this treadmill for the fam and in rainy Vancouver it’s honestly going to be a game changer for my fitness goals.
My mind is spinning as I continue to dive deeper into the power of plants. I have gained a lot of insight about the benefits of lavender at the @bridestoweestate in Tasmania.
