Who wants fluffy pink nice cream? 😁 Rainy season really has kicked in here which means spending more time in our kitchen 🤩 Have you tried nice cream yet? 😋 INGREDIENTS - 6 frozen bananas (3 medium) - 1 cup frozen papaya (frozen mango works as well) - 1/3 cup frozen pitaya - 1/3 cup plant milk (You can also check out my YouTube for a tutorial) Add all ingredients into a high speed blender (preferably with a stick/tamper to press down the frozen fruit with while blending, 1000W+ is a high speed blender), or use a food processor. Have patience, you will have to stop a few times to scrape the sides of the blender or let out air bubbles from the bottom of the blender. Keep going until it’s smooth ✨ . Lemon curd and blueberry loaf 🌊 - who wouldn’t love this combo? 🏔 You can Serve this loaf warm or cold, as is, or sliced up then pan fried and served with vegan yoghurt and fresh berries (a delicious, festive breaky idea!). It’s such a delicious and versatile recipe- you’ll love it! 🌊 If you’re yoghurt is very thick, I would thin it down with some nut milk, or else the result will be too thick (and lacking air/a nice texture- but it will still have a great flavour). Xx ❤️ Ingredients. 🏔 190g (1 1/2 cups) plain flour. 2 tsp baking powder. 1/2 tsp good-quality salt. 2 Tbsp finely grated lemon zest. 3/4 cup thick vegan yoghurt. 1/4 cup lemon juice. 1/2 cup coconut sugar. 1 tsp vanilla extract. 1/2 cup rice malt syrup. 1/3 cup olive oil. 1 1/2 cups fresh blueberries. 🏔 Method. 🌊 1. Preheat oven to 180 degrees C and grease and line a small laid tin. Set aside. 2. Sift dry ingredients (flour, baking powder, salt) into a large mixing bowl alongside the zest and mix well. 3. Ina separate bowl, add all remaining ingredients except blueberries- mix until well combined. Pour this wet batter into the dry bowl and mix until Just combined. 4. Gentle fold through blueberries, pour batter into prepared loaf tin, and bake for 45-55 mins (I did 50). 🌊 Allow cake to cool for 10 mins before turning into a cooling wrack.

Breakfast in bed this morning! It was too cold to leave my cosy bed. So myself and Brad decided over two weeks ago to see if we could live on and enjoy a plant based diet for two weeks, and if we’d like it we’d continue with it. The reason we don’t call it a veggie or vegan diet is because we said of on an odd occasion if we fancy a little bit of locally sourced meat or some dairy (Brad doesn’t like cheese much but I REALLY do), then we can, so long as it’s not too often. So say for Christmas, we can have turkey. Or if we’re out for a meal with friends, we can have something then. So far we’re both really enjoying it (and to be honest we only had meat once or twice a week before, so we don’t really miss the meat), so we’re continuing. Our skin’s much better and we have more energy.
