My crockpot version of my Sicilian great-grandmother’s marinara recipe. 🍝🇮🇹 You’ll need: Crockpot (duh) 2 cans crushed tomatoes 🍅 2 cans tomato paste Italian seasoning (fresh herbs 🌿 if available) 1 diced onion 4 or 5 cloves garlic chopped (yeah, baby!) Extra light tasting olive oil (this type of olive oil is good for high-heat sautéing) Salt and freshly ground black pepper 1/2 cup cranberry juice (instead of red wine 🍷 and sugar) - Mix tomato paste, seasoning (however much you want) pinch of salt and pepper in bowl and set aside. - Heat oil in medium saucepan on medium high heat until hot and add onion. Sauté for 2-3 minutes until slightly translucent. Add pinch of salt and pepper. - Add garlic for about a minute until fragrant and slightly softened or until someone in the other room yells out “gawd, that smells good!” - Add seasoned paste and stir occasionally for 1-2 minutes or until well blended and the paste gets ever so slightly deeper in color. Take off heat. - Add 1 can of crushed tomatoes to crockpot. Add pinch of salt and pepper. Add paste and cranberry juice then add second can of crushed tomatoes.
