25 looks different when your 8 years old, am I right? ⠀⠀⠀⠀⠀⠀⠀⠀⠀ I thought I’d be graduated by now, married, maybe kids, house with the white picket fence. I never thought I’d be in debt from school, (wtf 8 year old self didn’t add that factor in? 🤣) ⠀⠀⠀⠀⠀⠀⠀⠀⠀ This week I’ve been caught up heavily in my emotions with the year ending. Did I do enough? I didn’t accomplish anything on my list. I’m 25 and feel more lost now then I did at 22. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ But I had to get myself out of that mindset. Yes, I should have worked harder, I should have did some things differently but I did the best that I could in that moment. 2018 was a year of growth and change for me. I know God gives us these seasons for a reason. It’s all apart of the plan, and that’s what I have to do is trust the plan. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ I’m going into 2019 as a different person. Living in a new state. Trying to find my way, but before that I have a huge goal I’m GOING to hit by the end of the year in my business. This is what I want to do forever, this is where my heart is. 2019 I’m ready to do the damn thing. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Remember you did the best you could, and you made it to where you are now. It’s all about of the big mans plan. Don’t stress, keep going and your time will come. Everything always works out.
GLUTEN FREE VEGAN CARROT CAKE MUFFINS 🧁 Okay so these were DELISHOOO ... and they make the perfect addition to your dessert spread at Christmas especially if you or your friends or family members are vegans or live a gluten free lifestyle (yes, they are gluten free as well!) 🙌🏽🎄🎅🏽 These little 🧁 are packed full of fibre, protein, good fat and even have a sneaky hint of veg in there too... what more could you want, right? You can also add frosting to the muffins to make it extra sweet (and pretty) but they taste just as delish without it! Check out my recipe below 👇🏽🎄 • 2 ½ cups rolled oats 2 tbsp flaxseed meal 2 tsp baking soda Pinch of salt 1 tsp cinnamon 1 tsp nutmeg 1 ½ cups almond milk 1/3 cup peanut butter (can use any nut butter) 2 tsp vanilla essence ½ cup maple syrup 2 large carrots, grated ½ cup chopped walnut, plus more for topping 6 pitted mejool dates, chopped 1/3 cup shredded coconut • Preheat oven to 180c and line a muffin tin with patty pans. Place oats in food processor (I used my nutribullet) until they are ground into a powder-like consistency. Pour into a large mixing bowl and add flaxseed meal, baking soda, salt, cinnamon and nutmeg and mix to combine. Add the almond milk, peanut butter, vanilla essence and maple syrup and mix well to combine. Once the mixture has become sticky, add in the carrots, walnuts, dates and coconut and mix well to combine. Scoop the mixture into the patty pans and add 1 walnut on top of each muffin. Place in the oven and bake for approx. 25 mins or until golden brown.

Pumpkin Cranberry Orange Muffins --yes please! They're what I like to call "Morning Glory". They are an early morning, warm cup of chai tea with a splash of eggnog, and a cozy-blanket-snuggle-on-the-sofa type of muffins. How perfect are these muffins for this time of year?! They're also great for a grab-and-go breakfast during this busy season. Let me know if you make them by tagging me @loveandzest #loveandzest Ingredients 1 cup 100% pure canned pumpkin ¼ cup coconut oil, melted 2 large eggs ¾ cup 100% orange juice ¾ cup pure maple syrup ½ teaspoon kosher or sea salt 1 teaspoon baking soda 1¾ cup all purpose gluten free flour (I used Enjoy Life Ancient Grains Blend) 1 cup dried cranberries Instructions 1. Preheat oven to 375 degrees F. Prepare muffin pans with coconut oil, cooking spray or paper liners. 2. In a large bowl, mix together pumpkin puree and coconut oil. 4. Whisk in eggs until combined; stir in orange juice and maple syrup. 5. Stir in salt, baking soda, and flour until combined 6. Fold in cranberries.Fill muffin tins ¾ of the way full and bake for 19-20 minutes or until slightly golden and tooth pick inserted into the muffin in clean. Allow to cool for 5-10 minutes. We sit through the movie, Brooklyn's deep blue eyes not leaving the massive illuminated screen, and mine not leaving her. How could they do that to her? How could I not know about this? I feel my face burn throughout the entire hour and a half, to the point of my fist shaking slightly. Why couldn't I have known about it and been able to help her? As a feel my cheeks start to turn red and my jaw tick, I feel a small cold weight on my wrist. I feel my gaze drift down to her, I stare as my blinding anger slowly stirs and fades. I slowly let her mesmerizing features sink in to mind. She leaves a small, lopsided smile imprinted in my memory before she stands. "Earth to Shawn?" She waves her delicate hand in front of my blinded face. I snap out of the zone and shake my head slightly. "I should have known about it. I should have been able to do something." Brooklyn stares back with a confused gaze for a split second, hen realises. "Shawn... you had no idea. That's not your fault by any stage. Plus, Shawn, it was nearly 3 years ago. It doesn't matter now." She smiles at my gently in attempt to calm me- but failing. "It doesn't matter whether it was 3 years ago or 3 days ago. They still did that to you, they made you feel like that." "Shawn. Please just forget about it. It's over. I seriously don't care about it anymore, neither should you," the girl pleas. "I will for tonight, so we can hang out, but I'm not gonna just 'forget about it'. Late late nights, many hours on the road, filling up the gas tank (again), Waiting for the escort to take me to the base. Meeting up with those who are not on duty, giving hugs (lots of hugs)(every visit starts and ends with hugs), meeting new ones(like one week in the unit),organizing lots of cookies and muffins,talking on the cold, giving more hugs and then waiting for the escort to get me out.
