Thursday’s Menu @madefromscratchcafe On a sunny and warm day, there is nothing better than starting your day with an ice cold smoothie bowl. We use frozen bananas and avocado as the base so you know it’s going to be thick, creamy and chilly!! Today we have pineapple available but you can mix and match to make your own combination. Toasted nuts seeds and some fresh fruit means you are not only getting good fats but also lots of texture and flavour. The colour and taste of the soup just shouts out ‘nourish me’!! It’s orange and all that beta-carotene along with proteins and complex carbs will do just that! Romesco sauce is a beautiful marriage of flavours from roasted peppers and tomatoes. It’s earthiness works so well with the freshness of the courgettie and the creamy, garlic and herb haricot mash. It’s curry for dinner tonight and we some more family favourites. Keema is spicy lamb mince. Do you eat the same veggies everyday? Carrots, peas, cucumbers, tomatoes, lettuce...... To have a healthy diet we need variety. Our bodies need an abundance of a variety of veggies to truly be well and healthy. We don’t use oil to ‘stir fry’ we use water to steam fry. Just spent an inspiring evening with @meerabhogal @madefromscratchcafe . I LOVED Meera’s event! It made me think about how others perceive foods, the branding that confuses us all and simple swaps we can all make to help nourish our bodies in a healthy way. It isn’t really that hard. As a dentist I know a lot about sugar and give advice all day long about how to have a balanced diet and avoid damaging our oral health. Meera has given me food for thought about how we can measure it, quantify it, and shock ourselves as to how much sugar we truly consume!! Then we can keep track of how we are doing. Colours from nature; salads are an opportunity to enjoy flavours and textures at their freshest. Salads are certainly not boring especially if you start liking for seasonal ingredients to add as well as nuts, seeds, sprouting veggies, beans or lentils, herbs and wild growing leaves. Look for colours and textures which keep the eyes and palette interested. Avoid using too much or any dried fruit; instead you could add a little bit of fresh fruit. Friday’s Menu @madefromscratchcafe Smoothie Bowls are a refreshing start to the day. They are loaded with good fats, minerals, vitamins and fibre. Lunch is something new. It’s important for your microbiome to have a varied diet; try new things and keep your gut busy! Venison is a lean meat which high in zinc and B12. I’m not a gardener at all and I cannot take credit for all this handy work. I have wanted to grow my own vegetables and herbs for such a long time now and my lovely gardener, Miguel,  has made this happen. We discuss what I want, what’s in my head and then he helps me by planting the plants. I then have the privilege of watching them grow and pulling them out of the ground. Seeing the cycle of nature is an extraordinary thing. From ground to plate is a totally humbling experience. These carrots will be going to the @madefromscratchcafe to be used in juices, salads and along with other veggies we buy. I’m already thinking of using both the carrots and parsley in a salad or perhaps a savoury muffin. Health is holistic and food is definitely designed to help us heal, be strong and be healthy. Saturday’s Menu @madefromscratchcafe Chia seeds are a complete protein and are loaded with fibre. It’s important to soak them before consuming them. We use them in vegan baking and also in our homemade ‘jam’ because they help create the ‘jelly like’ consistency. This breakfast is a dreamy combination of sweetness from the coconut, crunchiness from the chia seeds and the plethora of flavours from the compote. Today’s Soup is a vegan version of an old classic and it goes perfectly with Chia and Flaxseed bread. We will be serving lunch from 12pm onwards so you can even enjoy our homemade laksa for an early evening dinner. Last orders will be at 7.15pm. Friday’s Menu @madefromscratchcafe All our food is made in our kitchen and made from scratch. We use oats with gluten to make our porridge but we also have a gluten free option by using quinoa flakes and you can even choose from a wide variety of the milks we stock. The rhubarb compote has a sweet sharpness which works well with the creamy porridge. Our tomato soup is creamy  and it’s dairy free, vegan and gluten free. Lunch is a delicious combination of flavours and textures; Smoked haddock or tofu, creamy cashew nut sauce, delicate broccoli rice topping makes this dish gluten free, grain free, dairy free AND packed with flavour, protein, good fats and fibre, as well as lots of complex carbs. Another customer who is feeling the healing benefits of our homemade bone broth. @madefromscratchcafe We sell bone broth. It’s an ancient food which has helped me with my IBS and inflammation. I have to admit at the beginning I was very squeamish about the thought but once I saw the effects of how it was helping me I haven’t looked back. However there are some stipulations I adhere to; the bones I use have to be organic and where possible from animals which are either wild or are reared and looked after well. I feel that by using the whole animal I am playing my part in promoting a more sustainable way of living. This how it would have been before. If you eat every part of the animal or use it for something you don’t need to kill so many animals. A chicken can provide a meal for a week if it is used properly. Wednesday’s Menu @madefromscratchcafe I made the pesto with fresh basil and walnuts which are a high source of mono and poly unsaturated fats- these are the good guys plus being a valuable source of the essential fatty acid omega 3 and iron. Having it for breakfast makes a great alternative to adding it to pasta and a perfect start to the day. Give it a go it’s delicious. Asparagus are a good source of fibre, folate and vitamins A, C and K. This is how we think about food. What is it going to do for us ? How is the food we eat going to nourish us, fuel us and help us to be healthy and strong?. A day in the life of the @madefromscratchcafe  Vegan Ramen packed full of flavour and nutrients. We used chagga mushroom powder as well as fresh mushrooms to add depth to the vegan broth and a vegan miso paste. The mixture of fresh and cooked vegetables gives your body a variety of goods to digest as well as giving your taste buds new flavours and textures with each bite. I’m taking a position of the chicken broth version home for dinner. The second picture was a ‘flexible’ meal which we created after speaking to our customer and finding out what he wanted. Toast topped with spicy aromatic mince lamb, fried eggs, some vegetables and a delicious farm sourced chicken sausage which is 100% meat. Tuesday’s Menu @madefromscratchcafe I love salmon and poached eggs with asparagus but what’s exciting me more is the vegan version!! The spiced beetroot and tomato is so full of flavour and packed with nutrients. Topped with pan seared tofu for protein and why not add some asparagus for a crunch! Yum!! Carrot, ginger and coriander soup is a classic and we don’t use any lentils or grains in our soups so they are simply and truly filled with vegetables- nothing to ‘bulk’ them out! Top your soup with pan seared tofu or chicken for added protein and a slice of your choice of bread. Lunch is one my favourites last Ramen MFS style! We now sell our chicken broth which is cooked over 36 hours and made with love and patience. We use this in our ‘meat’ version of Ramen and add lots and lots of vegetables to add crunch, texture and added goodness. This is definitely not a finite list merely a sample of some foods we may not consider when we think about SUGAR. I’m holding a workshop on 20th May @madefromscratchcafe Which is located @darwinwellness  to help you learn a skill which will make a huge indifference to how you buy food and what you eat. Reading food labels is important because we need to cut out the ‘noise’ made by the marketing teams, the producers and manufacturers claiming things are healthy, low sugar, low fat and throwing figures at us in the hope that if one our favourite processed foods is now 70% less sugar we will feel better about eating it because we are reducing our sugar in take. In this workshop we will be looking at the foods you are eating and identifying the actual amount of sugar being consumed. I will be asking you to keep a food and drink  diary for a day leaving up to the event and To bring in the packaging of what you have eaten or drunk. This is all about you and together with 4-6 other like minded people, we will learn how to circumnavigate the maze of misinformation we are told about food.  We will be looking at the RDA and getting a visual guide to a so called ‘unhealthy diet’ loaded with processed foods and comparing it to what we are lead to believe is a healthier diet. They provide fibre, vitamins, minerals and chlorophyll which is a powerful anti-oxidant which can help with liver function, improve healthy skin  and helps with digestive issues.  We make sure it’s included in our meals whenever we can. Fried eggs?? Surely not on a healthy menu!! Actually yes! We normally steam fry and if you like fried eggs but have stopped eating them because you feel they are unhealthy think again; try using a small amount of coconut oil or high quality ghee such as Rock Rosebay ghee and that way you get in some good fats and have your fried egg! We make our laksa From Scratch, so no jars or bottles and certainly no processed foods or ingredients. Our meals are gluten and dairy free and we have great options for those who are vegan or alternatively who enjoy meat. Our meat is organic and where ever possible sourced directly from the farm. Our sausages have nothing but meat in them and the bacon is cured on the farm. Sunday is Brunch day @madefromscratchcafe Smoothie Bowls are a fun way to get vitamins, minerals and good fats into your diet. The waffles are gluten and dairy free, made with quinoa flakes instead of oats. Try them either savoury or sweet. We are using wonderful seasonal wild garlic to make wild garlic pesto. Have this as a dip or as a topping on our flat breads topped with Halloumi, crumbled tofu or mini chicken and basil meatballs. We have three delicious salads in our Buddha Bowls which can be topped with a variety of protein options, from organic farm sourced ‘nothing but meat’ sausages, chicken meatballs, seared tofu or Halloumi. For some of us it’s a fabulous time of year but for many teenagers it’s nearly time for exams. Thai can bring on so much anxiety and stress which can manifest itself as in not being able to sleep well, eating too much or too little, feeling insecure and lacking confidence. When I spoke to Anne and found out that she works closely with teens to help them create a sense of calm in what can be a chaotic world, I was keen to bring this opportunity to the @madefromscratchcafe Our cafe is a space in which we would like to help everyone access learning and share learning from people who are passionate to share their expertise. Health is holistic. The three day workshop is a sequence of 1.5 hour session which are interactive and set up in a way which is informal and accessible. Each session will follow from the next and the content will build up each time. By the end we hope that each person will have a few new tools to use when they need them most. A 27 year study has revealed lots of fascinating information because the study followed 15 different food groups across 195 countries. Some of the findings are not new but provide further evidence that eating a diet high in whole foods is the way to reduce the risk of disease related deaths. We are so focused on aesthetics, quick fixes, quick meals, because we are too busy!!! However I would add to this that looking at food in isolation doesn’t tell the whole picture.
