ROUND 2 DAY 1: Meatloaf Muffins with sweet potato topping! So fall! 🍁 • Day 1 is here!! I’m so excited to hopefully feel like I did after my last round. Today wasn’t too bad, craving and energy wise. I’ve been buying mostly compliant groceries since my last round...What I’ve struggled with the past month and a half is eating gluten and having alcohol when out! • I’m a HUGE fan of these Meatloaf Muffins. I got the recipe off Pinterest, dm me if you want it! It was only 7 ingredients and super easy to make. I love the combo of sweet potato with the meat loaf. This is also an awesome dinner to meal prep. I made 12 muffins and it will be my lunch/dinner for a few days! If I haven’t finished them by Wednesday I’ll freeze them and enjoy them later in my round. I love making healthy meals that I look forward to!! • What fall recipe have you tried recently?
