I found black soy beans that only have 1G net carb per serving, so what better to try them other than chili? It was sooo good and as always my non-keto boyfriend loved it! . . . This entire pot had (give or take) 42G net carbs and I was able to get 6 servings. So, roughly 7G net carbs per serving! Not too shabby for my first keto chili try.. . . . I used 1 lb of ground meatloaf mix and 1 lb of ground 85/15 beef. Flavored the meat with my own chili mix (found on YT via #laurainthekitchen). Added 1 medium onion, 1 medium bell pepper, and 2 habaneros. Used 1 small can of diced tomatoes and 1 small can on chicken broth. Added some Worcestershire sauce, salt, chili flakes, and garlic powder to taste. Finished it off with the Eden’s organic black soy beans. Keto Stuffed Peppers 🍴 These were a hit! psst - this silicone baking pan is from Dollarama - check out my most recent blog for more keto Dollarama finds. Link in bio! . I forgot i had a few bell peppers in the fridge until I was rushing to figure out dinner one night. I also happened to have some ground beef on hand and whipped these up quick. They were delicious and filling, definitely making an appearance on the menu rotation. 1 Pound of Beef 1.5 Cups of Shredded Mozzarella 2 cups of spinach Sprinkle of Parmesan 2 Bell Peppers Spices to taste: -Trader Joes All Purpose Seasoning - Garlic Powder - Dried Onion Flakes - Salt - Pepper Brown beef in a pan and add desired spices and spinach. Cook and drain most of the fat. Add 1 cup of mozzarella to cooled beef. Cut peppers in half and remove seeds and stems. Stuff each pepper generously and place in a baking pan. Cover with foil and bake for 40 minutes at 350 Degrees. Remove foil and top with .5 cups of mozzarella and parm. Broil for 5 minutes or until golden brown. I got a bit dramatic with my keto pad thai. #shrimpy#ketolicious#ketopadthai#asianketo#makeitketo#wednesdaydinner Recipe: 2 packages of tofu linguine. 1 pound of shrimp. 1 pound of chicken 3 eggs 4 cloves of garlic 1/2 cup tamarind sauce red pepper flakes to taste. handful of crushed peanuts fish sauce about 1/4cup. handful of green onion handful of cilantro. 1 tablespoon of sweetener of your choice. bean sprouts Prepare everything before you start to cook and just combine... avocado oil in pan, add chicken and cook then stir fry in garlic and eggs, sauces, some of the green onion, red pepper flakes last the shrimp get tossed in! Plate and add some more cilantro, lime, peanuts, bean sprouts. I finished it off with some crunchy garlic red pepper source I found at H Mart... yum yum 😋
This is seriously so good! We make hash brown casserole every Thursday in our house, unless something else comes up. I was getting tired of it a couple months ago, until I ran out to frozen cubed hash browns, and I substituted them for the shredded hash browns from Costco. They come in little cartons, and you just hydrate them in their containers by pouring boiling water over them, and letting them sit for 12 minutes before use. This time, I also made it in layers. Here’s how I did it: Grease a large casserole dish and add: Layer 1: One carton of hydrated shredded hash browns (hash browns) Layer 2: Cooked Italian sausage (removed from skins prior to cooking, and mashed up into ground meat.) Layer 3: Mozzarella cheese Layer 4: One carton of hash browns Layer 5: Chopped, cooked mushrooms with cayenne pepper and black pepper added to taste. Half a bag of PC Organics frozen leafy greens (kale, spinach, collard greens.) Layer 6: Chopped, cooked zucchini with minced garlic, and ground black pepper added to taste. Layer 7: Raw grape tomatoes cut in half lengthwise Layer 8: Mozzarella cheese Layer 9: One carton of hash browns, drizzle of heavy cream (about 1/2 - 3/4 cup) Layer 10: Mozzarella cheese, chopped green onions, salt and ground black pepper. Bake in oven uncovered at 375 degrees for 30-40 minutes, depending on heat of your oven. The cheese should turn a nice golden brown when it’s done. “I can’t do keto, man, it’s too hard to find good keto recipes.” 🤦🏻♂️ I get this all the time, and it’s really not true. You just have to apply a little brain power to take the carbs out. You can do it, I promise. Here’s a simple keto-fied idea. Pulled pork tacos, just on lettuce shells, and no rice or beans 🤯 I know. Pulled pork, guacamole, sour cream, Mexican blend cheese, taco sauce. 4 net carbs per serving. Boom! #lowcarbiseasierthanyouthink
I’m not really sure what to call this dish. It was born out of a desire to make risotto, but contains no rice. Cauliflower mash and mushrooms doesn’t evoke how incredibly moreish and decadent it is. “Faux-sotto” sounds like I’m trying too hard. 🤔 I simmered cauliflower in chicken stock and white wine before blitzing with a hearty parmesan, using traditional risotto flavours helped give the cauliflower that creamy richness of risotto. I then sautéed a mix of mushrooms (this time shitake, shemeji and wood ear) in plenty of garlicky butter, and finished off with a squeeze of lemon and lots of parsley. This was good, like, high-fiving myself sort of good!
