Cucumber dosa/Toushe polo It is a simple, tasty and a nutritious variety of dosa prepared with rice, coconut and flavoured with cucumber. Add grated cucumber of required quantity to batter.( choose a tender ones ) Add salt, mix well. Batter doesn't require fermentation. Pour batter on a hot griddle. Needs to be roasted on both sides. Serve hot with a spicy chutney.

Throwing back to this hearty bowl of soup I had made some time back. This is my favourite soup. Its light and very tasty. I had a lot of this during confinement last year. I have fond childhood memories of my mum serving this with fried rice it was the perfect combo. 🥣🍗 CHICKEN AND VEG SOUP 🥕🥣 📝 My Mum 📷 @a_tale_of_sauce_and_spice 1 big or 2 medium sized chicken fillets 1 onion chopped Oil / ghee for cooking 1+ ½ tsp Garlic paste 1 tsp green chilli paste 1 carrot finely cubed 1 small green pepper finely chopped 1 pack noodles / little spaghetti ½ tsp ground cumin pwd ½ tsp ground coriander pwd ½ tsp crushed black pepper 1 pack knorr soup (cream of chicken / mashroom / veg ) Salt to taste ½ can sweetcorn Spring onions /coriander for garnish Method Boil the noodles / spaghett and keep aside. Put chicken fillets in a pot with 4 to 5 cups water let it boil and cook till chicken is tender remove from the water and shred the chicken using two forks. DO NOT DISCARD THE WATER USED TO BOIL THE CHICKEN WE WILL USE THIS STOCK FOR THE SOUP. (You may add bay leaves garlic cloves pepper corns etc when boiling the chicken to add flavors to the stock I just leave it plain). Cook onion in oil till soft don't let it turn brown add in garlic and green chilli paste braise then add the carrots and green pepper cook till soft add the boiled noodles (I used rice noodles here) shredded chicken with black pepper, cumin and coriander pwd mix well cook on low heat. Empty the knorr soup packet in to a bowl add in ½ cup water or little more dissolve well then add it to the pot along with the reserved chicken stock. Add more water if the soup looks too thick add salt adjust any seasoning add in the sweetcorn mix well let it come to a boil then lower the heat and let it simmer for 3 to 4 mins. I hope everyone had a wonderful Easter dinner. I’m still stuffed from our delicious meal. My husband and I worked together on this spread, and we made a pretty good team. He smoked the lamb to perfection, and then flash seared it on the grill just before serving! Omg the flavor was out of this world. I whipped up a green charmoula sauce to go on top of the lamb thanks to the @berberandq cookbook (recipe- butterflied leg of lamb with green charmoula dressing) we enjoyed @skinnytaste scalloped potatoes, side salad, my delicious deviled eggs (recipe to come soon) bunny rolls, 2 Greek macaroni salads, and asparagus.
