💡The difference between dry-aged and wet-aged 🥩: When the meat is dry-aged, the lactic acid which is breaking the dried proteins in the meat down, drip down and the proteins are broken down instead of the natural enzymes. Wet aged maturing gives a more sour, but juicier meat than dry-ageing since the meat becomes sourer in a vacuum. This is because the lactic acid cannot evaporate/drop down.
