My remedy for a migraine is super duper spicy Lao-style papaya salad, along with slow broiled chicken thighs, Laotian cauliflower soup and fresh bamboo with jeow kapé (spicy shrimp paste dip). Home cooked meals are always the best medicine.
With Khao Soi, I like to load up on noodles, veggies and a lot of the meat sauce while keeping the broth to a minimum. This way I can enjoy the full flavour of the sauce. It makes noodle slurping all the more satisfying, especially when they’re homemade! . If you’re on the west coast, keep your eye on my friend @iamsaeng if you want a taste of this dish!
