Cauliflower “Mac & Cheese” Ingredients: 1 head of cauliflower, chopped 1 cup heavy cream 2 tbsp cream cheese 1 1/2 cups shredded cheddar 1 tbsp Dijon S & P Garlic salt Instructions: -Add cauli to boiling water & cook until it can be pierced with a fork. Once it is cooked, strain and put in casserole dish -bring heavy cream to a simmer in a saucepan & then whisk in cream cheese & 1 cup of cheddar & Dijon -add sauce to cauli and mix well -too with remaining shredded cheddar and bake at 375 for 15-20 minutes (until the cheese is melted) - I added S & P and garlic salt to taste

Remove the core and let the cauliflower dry completely. 2. Roughly chop the cauliflower into florets, and place half the cauliflower in a food processor. Pulse until the cauliflower is small and resembles couscous. Set aside and repeat with the remaining cauliflower. 3. In a large skillet over medium heat, heat the olive oil, then add the onions and garlic and cook until soft and translucent, about 5-7 minutes. 4. Add the cauliflower “rice” and stir to combine. Add the salt and pepper and continue to cook, stirring frequently until cauliflower softens about 3-5 minutes. Remove from heat and transfer to a large serving bowl. Add lime juice and fresh cilantro and toss gently to incorporate. . .
