I finally made the infamous keto mug cake. I made a cinnamon mug cake topped off with a Xylitol sweetened lemon flavoured whipped cream and a dusting of cinnamon. How delicious if you haven’t tried it give it a go. There are plenty of YouTube videos the base is almond flour, baking powder, butter, egg, sweetener of your choice and then you can add whatever else you like mix it all together and put in the microwave for 1 -2 minutes. Serves: 4-5 INGREDIENTS 3 tablespoons butter 4 garlic cloves, minced ¼ cup freshly chopped oregano 1 teaspoon fresh rosemary, chopped 1 teaspoon fresh thyme, chopped 1 pound boneless skinless chicken thighs, or breasts salt and pepper 2 medium sized zucchini, sliced INSTRUCTIONS  In a medium sized skillet over medium high heat add the butter until melted. Add the garlic, oregano, rosemary and thyme. Add the chicken and cook for 3-4 minutes on each side or until chicken is no longer pink and 165 degrees. Remove chicken and set aside on plate.  Add the zucchini to the pan and salt and pepper. Saute for 2-3 minutes or until tender. KETO HOT DOGS šŸŒ­ šŸ¤Æ Thank the lords šŸŽ‰ - šŸ—’ Ingredients: 6 fully cooked hot dogs (they usually come fully cooked šŸ˜‰) 3/4 Cup Almond Flour 1 1/2 Cups Shredded Mozzarella  1 egg 1/3 tsp Baking Powder  2 oz Cream Cheese EBTB seasoning or Sesame Seeds - šŸ‘ØšŸ½‍šŸ³ Instructions: 1. Preheat oven to 450° 2. Put the mozzarella and cream cheese in the microwave for 30 seconds , mix and repeat 1-2 times until it’s melted. 3. Add in the rest of the ingredients and knead until you form a well blended dough. If it’s too sticky wet your hands with some water and create a dough ball. 4. Separate into 6 pieces and coat your fully cooked (cold) hot dogs in the dough. You can either make little snakes and wrap them around or roll out the dough and wrap around. 5. Sprinkle with your favorite seasoning, I like TJ’s everything bagel seasoning. 6. Bake for 12-15 min. (Till brown) 7. INGREDIENTS 4 large chicken breasts 1 tbsp lemon zest salt & pepper 12 asparagus stalks, trimmed 3 slices mozzarella cheese 1 tsp garlic powder 1 tsp paprika 1 tbsp olive oil . INSTRUCTIONS Preheat oven to 425 degrees F. Cut the chicken breast in half, length-wise. do not cut all the way though. You need to create a pocket into each chicken breast. Season the inside of the chicken breast w/ lemon zest, salt & pepper. Place chicken on work surface & lay the mozzarella cheese & 3 asparagus inside of each chicken breast & fold over, enclosing the filling. In a small bowl mix together salt, pepper garlic powder & paprika. Then season the outside of the chicken breast w/ this spice mixture. Heat a large & oven safe skillet over medium-high heat. Add the olive oil. Sear the chicken for 3 to 5 minutes each side & until the chicken is golden brown on top. Place the chicken in the oven. Bake for 20 minutes. Lunch was the same as yesterday, only this time, I turned my eggs into egg mayo (with a sachet of mayo). Much better! I survived the photo shoot. The photographer survived me and we ended up with some lovely pictures. I wasn’t hungry until 3pm when I planned to go to a subway to get a salad but that was closed so I ended up getting a donner kebab, no bread, with salad. Ate on the tube covering up with the paper like it was prohibition era. Little do they know that eating this baby is going to give me a washboard stomach. Oh yeah! Now on the train back home to take over the baby from my mum. Hopefully soon will share some photos from the shoot.
