These were the first jeggings I bought when I first started losing weight almost exactly a year ago. I was excited they we're a smaller size, but they were still tight. I would wear a baggy shirt with them to hide any muffin top. Now, it's kind of a cool representation of how far I have come. 💪 I also want to point out that I rely heavily on MyFitnessPal! This app works wonders in breaking down your macros!! So, little introductory.. I'm Caitlin! My personal social media seem to get a lot of response when I post about my weight loss and people ask me all sorts of questions about my diet and routine. So, here I'll be able to consolidate everything that I do. This will include diet, milestones, exercise, and everything else Keto and weight loss journey! I started out high protein and low carb. I ended up plateauing after about 20lbs lost. I ended up switching to Keto and just shedding off everything else. I'm still a work in progress, but I will share everything about that progress. KETO HOT DOGS 🌭 🤯 Thank the lords 🎉 - 🗒 Ingredients: 6 fully cooked hot dogs (they usually come fully cooked 😉) 3/4 Cup Almond Flour 1 1/2 Cups Shredded Mozzarella 1 egg 1/3 tsp Baking Powder 2 oz Cream Cheese EBTB seasoning or Sesame Seeds - 👨🏽🍳 Instructions: 1. Preheat oven to 450° 2. Put the mozzarella and cream cheese in the microwave for 30 seconds , mix and repeat 1-2 times until it’s melted. 3. Add in the rest of the ingredients and knead until you form a well blended dough. If it’s too sticky wet your hands with some water and create a dough ball. 4. Separate into 6 pieces and coat your fully cooked (cold) hot dogs in the dough. You can either make little snakes and wrap them around or roll out the dough and wrap around. 5. Sprinkle with your favorite seasoning, I like TJ’s everything bagel seasoning. 6. Bake for 12-15 min. (Till brown) 7. It really made me think about how crazy life is and how much it can change in a year. One of my favourite spice mixes is a Berbere Spice Seasoning Blend- you can use in stews, curries, and even as a rub for meat... this is from Ethiopia with cardamom, fenugreek, cumin, ginger, chills, paprika and more. A building block in Ethiopian Cooking. The word berbere means “hot” in Amharic —a spicy and flavorful spice blend. (Pronounced bari baray), somewhat of an all-purpose spice mix, widely used in Ethiopian dishes. A must have for Ethiopian cooking. ______ 🌶🧂🍗 Ingredients: 3 Tablespoon smoked paprika 2 Tablespoons paprika 1- tablespoon ground ginger spice 1 Tablespoon granulated garlic spice 1 Tablespoon dried basil 1 teaspoon freshly ground white pepper ½ tablespoon cinnamon spice ½ Tablespoon ground nutmeg spice ½ Tablespoon Fenugreek 1 teaspoon Cumin 1 teaspoons cardamon spice 1 Tablespoon or more Hot pepper Chili, cayenne pepper Adjust to suit taste buds Instructions If using whole grain, lightly toast, on low heat, in a fry pan, for a couple of minutes, before grinding. Cook just until the spices smell nice and toasty. Then grind in a coffee grinder. Combine all the ingredients in a bowl, or Jar and stir so that all the ingredients have been fully combined. ———— What’s your fave spice blend? Pesto-Injected Burrata Bombs 🤤 Save this recipe down for your next BBQ 🍢 - - - INGREDIENTS: 1/2 cup pine nuts 1/2 cup Parmesan, roughly grated 2 cloves garlic 2/3 cup olive oil 2 cups basil ASSEMBLY: 2 burratas 4 cup plain flour 2 eggs, beaten 3/4 cup breadcrumbs TO SERVE: Tomato sauce Basil leaves Parmesan shavings STEPS: Make the pesto: Put the pine nuts into a small frying pan and toast them lightly, stirring often, until golden brown. Transfer to a food processor, along with the Parmesan, garlic, olive oil and basil. Process to a very smooth pesto then fill a syringe ready to inject the burratas. Prepare the burrata: Fill a large saucepan halfway with vegetable oil, and heat it to 375 degrees. Put the flour, beaten eggs and breadcrumbs into three shallow bowls. Drain the burratas and pat them dry. Use the pesto-filled syringe to inject each burrata with pesto. Be careful not to overfill and split the delicate casing. Roll each filled cheese ball in the flour, then spoon beaten egg over it until it’s completely covered. Finally, roll it in the breadcrumbs. Put onto a plate and chill for 15 minutes. Heat the tomato sauce and get any other serving accompaniments ready, before you start to deep-fry. After 15 minutes of resting, use a slotted spoon to submerge the cheese in the hot oil. Fry for 1 minute, keeping a very close eye on them — the outer layer of cheese will melt quickly and split the breaded coating if they cook for too long. Once golden brown, drain on paper towels. It was a weak week. The last 2 days were NOT #keto 😑 & I definitely feel like shit today. Back on the wagon, but I’m battling. Not feeling very strong, just saying. I really want to see 180-185 before or on July 13th.
Wanna know what’s hard....being 30 days away from vacation, knowing you’re going to eat whatever your heart desires on said vacation and staying motivated to keep loosing during the countdown. Life is insane right now with 2 very active kids and everyone needing to be at 5 places at once and I’ve been battling horrible thoughts about eating all the bad things. I’ve been #keto but I’ve been driving the STRUGGLE BUS FULL SPEED!!!!!! Today I feel like I can’t get full. 🤦🏻♀️ g’night.
