Ingredients: * 4 tablespoons coconut oil * 1 large onion, diced * 4 garlic cloves, crushed * 2 teaspoons garam masala * 1 teaspoon ground cardamom * 1 teaspoon ground coriander (cilantro) * 1 teaspoon ground ginger * 1 teaspoon ground cumin * ½ teaspoon smoked paprika * 1–2 pinches of cayenne pepper (optional) * 1 teaspoon ground turmeric * 3 tablespoons tomato paste * 1 teaspoon sea salt * 2 tablespoons lemon juice * 1 x 400 ml can coconut cream * 700 g (25 ounces) chicken thigh fillets, cut into bite-sized pieces * coriander (cilantro), to serve * cauliflower rice, to serve Be adventurous with your vegetable component. Try eggplant (aubergine), okra, zucchini (courgette), asparagus, pumpkin, sweet potato and Asian water spinach. The rice has been replaced with cauliflower ‘rice’ but broccoli ‘rice’ is also a big hit or try a mixture of both. 1- Heat 4 tablespoons of the coconut oil in a large saucepan over medium heat. 2 - Add the onion and sauté for 3 minutes until translucent. Turn the heat down to low and stir in the garlic and spices. Add the tomato paste and cook for 1 minute. Add the salt, lemon juice, coconut cream and mix well. 3 - Turn the heat up to medium and bring the sauce to a simmer. Add the chicken and stir until well coated with the sauce. Cover the pan with a lid and cook, stirring occasionally, for 20–25 minutes, or until the chicken is cooked through and the sauce has thickened. To serve : 1 Garnish with the coriander (cilantro) and serve with the cauliflower rice. I did some fun experimenting this weekend. And turned out this guy! I used @kissmyketo birthday cake protein in the batter and it gave it that cakey goodness! Made my own sprinkles with coconut flakes and natural food coloring. I am so happy with how it turned out. Honestly I was so excited to share it with you all! Keto Avocado Devilled Eggs 🥚 ...great for snacks to have in the fridge or in your lunchbox. Full of great fats and lots of nutrients. Thank you to Dr Axe for the inspiration for this recipe 🙌 INGREDIENTS: * 4–6 eggs * 1 avocado * ¼ teaspoon sea salt * ¼ teaspoon pepper * ¼ teaspoon garlic * ¼ teaspoon cumin * ¼ teaspoon smoked paprika * optional: 2 tablespoons cilantro and full fat mayonnaise if you like creamy eggs DIRECTIONS: 1. In a medium pot add eggs and cover with water until fully submerged. 2. Bring to a boil, then remove from heat and cover for 12–13 minutes. 3. Fill a large bowl with ice water and, using a slotted spoon, gently place eggs in the bowl, allowing eggs to chill for 5 minutes. 4. Remove outer casing from eggs and slice in half lengthwise, removing the yolk. 5. Add the yolk, along with the avocado and spices to a bowl, mixing together until well combined. 6. Add the mixture to the egg halves. 7. Drizzle with lime juice and top with cilantro. Is this IF friendly? I have been having a rough morning. Little man was not feeling well and things were hectic. I typically practice IF for at least 18 hours only consuming black coffee and water in that time period. This morning I needed a little something extra so I went with a bang. No calories or carbs and does not have an effect on (my) blood glucose. There are many different schools of thought as to whether or not this would be ok to drink while practicing IF. 4 months ago i didnt think i would have a story to share. I doubted my own success and assumed i would fail, if we are being honest. I figured as soon as i lost the first 10lbs i would celebrate by overeating and drinking as i did in the past. But something was different this time. Something said keep going. Something said you got this! In 3 months i lost 30lbs . I am closer to my goal then i have ever been. I feel amazing. I smile so much more now. Confidence is SO underrated. Its so much more than a vanity thing, its an internal feeling of ACCEPTANCE. Accepting who you are unconditionally. By no means am i perfect. I have flaws all over this beautiful temple i call my body. But I own these flaws and work them like no ones business. This journey i have been on was intended to help me find satisfaction.....instead i found happiness! A smile looks so good on me! 😊😊 I share my story because it helps me stay accountable but i am hoping to also inspire others. Hoping that someone who needs to hear this takes something from it. My coffee now gives me LIFE!!! 🥰🤣🦄 This combo is RIDICULOUS ! 🔥 I usually do 1-2TBS of heavy cream(1/2-1 Carb) Spash of sugar free @torani (which is the BOMB 💣) And my coffee made in my @keurig ! 🙌 Also if you’re more of an iced coffee person(like me) just wait till your coffee cools off before making this concoction and then add some ice. I’ve been drinking STOK unsweetened iced coffee BUT it has 2 Carbs!! I was shocked! So for zero carbs go with a coffee made from the grounds and then cooled off! 😉 and if you’re a mom, your coffee is probably already cold so why not just add ice 🤣🤣🤣 What’s your favorite way to drink your coffee?! 👇
I’m really, really bad when it comes to eating breakfast. Normally, I don’t eat it unless (1) I’m Hungover, (2) I’ve made brunch plans, or (3) My boyfriend makes me something in the morning. Obviously breakfast is a super important meal. It fuels your body, keeps you going, and wakes you up. I decided to start trying some meal replacement bars (I’ve got quest and slimfast) it’s difficult to find Keto options so I was limited in what I could get but I got a variety of quest bars and I got the 2 Slimfast flavors I could find. Today I’m trying the whipped chocolate. .......…… HONEST REVIEW: For a Keto option this is very good especially for my chocolate lovers and those with a sweet tooth. I could automatically tell it used Erythritol which wasn’t an issue for me personally but it must be a decent amount included in as the bar definitely had a cooling effect in the mouth. It was a tiny bit chalky which I notice with products that use cocoa powder but not a terrible mouth feel. Honestly instead of a breakfast I would use this as a on the go fat bomb. I will probably start buying these to start including in my rotation of sweeter Keto! Very dense and heavy though so you could have 1/2 a bar and be more than satisfied!
When is the last time you had a slice of low carb or gluten free bread that made you just want to keep eating it plain out of the oven? This bread is so good the main issue with it is not eating it all in one go. You can easily substitute pine nuts for another cheaper nut meal. Once it’s cooled you should slice it into very thin roughly 50 gram slices and eat it on it’s own or any way you would normally use bread. ——————— Macros/50 gram slice 206.6 kcal / 18.4 g fat / 6.1 g carbs / 3.7 g fiber / 6.8 g protein ——————— Recipe: 2 c Pine Nuts, crushed 1 1/2 c Almond Flour 1/4 c Flax Meal 1 c Chia 1/4 c Pumpkin Seeds 1/4 c Stevia 1/4 c Coconut Flour 1 Tbs Baking Soda 1 tsp Salt 1 1/2 c Almond Milk 6 Eggs or flax eggs 2/3 c Butter, melted or coconut oil —————— 1 Tbs Butter to grease the pan 1/4 c Pumpkin Seeds to top loaf —————— Preheat oven to 350 degrees Fahrenheit and cover a bread pan with parchment paper and the 1 Tbs butter. Mix together all of the dry ingredients until a consistent mealy texture. Add in almond milk, eggs, and melted butter. Mix until well combined. Pour into prepared bread pan and sprinkle the remaining 1/4 c pumpkin seeds over top Bake for 45 minutes to an hour, checking every fifteen minutes. Keeping things real here...I LOVED and don’t at all regret my cheesecake decision last night. However, my glucose this morning (I waited for the somogyi affect in case you’re wondering) was 114. That’s pretty high for me. Most generally I run 75-80 before breakfast. The truth bomb is, I could eat this every day and still be Keto. But it might really slow me down too. This is why I love having @ketomojo to figure these things out. Can I have this every once in awhile and still maintain feeling great? Absolutely. But now I know it should only be that. #ketoonmyfriends
Today is day 50 doing Keto, counting my macros daily. No cheats (Not even one tortilla chip, although I came across many and would’ve been glad to crush a few). I’ve never been this strict with eating, nor have I ever felt like I had an endless supply of Red Bull 24/7 without the crash. Along the way I also did 30-40 hours of research regarding Keto (I’d be happy to share the summary if desired). What a life. Just some rando thoughts. @drericberg taught me everything I know. . However, it’s amazing how much our diet plays in to our overall health, well being, and enjoyment of life. It was one thing for me to know that and another thing to experience it. We cannot separate the physical from the emotional and spiritual. We’re created to thrive, which we experience when we live into life wholistically as it was designed.
