Recipe below and in story ☘️Garlic Cilantro Sauce 3 cloves garlic 1 tsp salt (or to taste) 2 tbsp Olive oil 1 tbsp fresh lime juice 1 cup Sour Cream 2 Tbsp Mayo 1/3 cup Cilantro Throw all ingredients into food processor/blender and pulse continuously till well blended/chopped.

Add ghee (or other oil if dairy free) and place the zucchini in the pan and sautA for a few minutes then form into anestsa. Crack an egg into the middle and cook until the whites are done. I’ve gotten some test strips to see if I’m in ketosis and I am. Blood sugars are staying in a fairly decent range but I still want to be a little more consistent. Changes in the bod are happening. It’s fun to see my tight clothes have some wiggle room. I’ve not had such a good headspace in months. Anxiety is there but less close to “end of the world” panicking, depression is non-existent for the time being and I have legit goals and achievements to strive towards. Keto Beef Taquitos 😋⠀ .⠀ .⠀ Via @keto_blondie ⠀ TAG & SHARE THIS WITH A FRIEND! 😋 _______________________________________________________⠀ ►Ingredients⠀ :⠀ 1 Cup Shredded Cheddar Cheese⠀ 1 Cup Shredded Mozzarella Cheese⠀ ½ Cup Grated Parmesan Cheese⠀ 1 lb Ground Beef⠀ ¼ Cup Minced Onion⠀ 1 Tsp Cumin⠀ ½ Tsp Chili Powder⠀ ½ Tsp Paprika⠀ ½ Tsp Onion Powder⠀ ½ Tsp Garlic Power⠀ ½ Tsp Salt⠀ ½ Tsp Pepper⠀ ½ Cup Water⠀ .⠀ ►Instructions⠀ :⠀ Brown the beef with the minced onion. In a cup mix the cumin, chilli powder, onion and garlic powder and salt and pepper with the water. Then pour over the browned ground beef. Let simmer for 5 - 10 minutes or until all the liquid is evaporated.⠀ In a large mixing bowl, mix the cheddar, mozzarella and parmesan cheeses. Divide the cheese mixture into 6 then make balls. Place onto a parchment paper lined baking sheet. Bake @ 400 F for 6-8 minutes, or until the edges are golden brown.⠀ Let cool for 1- 2 minutes. Flip upside down, then place a few spoonfuls of the beef on the edge of each shell. Tightly roll each one into a cigar shape. (You need to do this quite quickly, before the cheese hardens)⠀ This recipe makes 6 Keto Beef Taquitos.⠀ Note: To reheat, Preheat oven to 350 F. If you love easy chicken recipes, these chicken fritters filled with cheese and Jalapeño are for you! They make a perfect Keto meal and you can stack them up in your lunch box for easy meal prep during the workweek. Enjoy! ~ 1.5 lb (700g) skinless, boneless chicken breast, finely diced 2 medium eggs 1/3 cup almond flour or coconut flour 1 cup shredded mozzarella cheese 1/2 cup grated parmesan cheese, optional 3 Jalapeño peppers, seeded and finely diced 1 spring onion, sliced + for garnish 2 tablespoons parsley chopped 1/2 teaspoon garlic powder A pinch of salt and fresh ground black pepper 1 tablespoon olive oil, to fry Directions 1. Into a large bowl, add diced chicken, almond flour, eggs, mozzarella, parmesan, spring onion, Jalapeño, parsley, garlic powder, salt, and pepper. Mix well to combine. 2. Heat oil in a large non-stick pan over medium-low heat. With an ice cream scoop or a large spoon, scoop into the chicken mixture and transfer it to the pan, then slightly flatten to make a fritter. Don’t overcrowd the pan, cook the fritters in batches to ensure even cooking. 3. Fry until golden brown on both sides, about 6-8 minutes. Make sure to cook the chicken fritters at medium-low temp, otherwise, they will burn on the outside and won’t get well cooked in the inside. Garnish with more sliced spring onion and serve immediately with your favorite dip: mayonnaise, chipotle aioli, Sriracha or even ketchup. Baked Salmon and Asparagus in Foil with Lemon Garlic Butter Sauce —— Ingredients: 2 slices of salmon fillet 2 tablespoons vegetable broth or chicken broth 1 1/2 tablespoon fresh lemon juice, or to taste 1 tablespoon of your favorite hot sauce (we used Sriracha) 4 teaspoons minced garlic (4 cloves) Salt and fresh ground black pepper, to taste 3-4 tablespoons butter, diced into small cubes (or ghee) 2 tablespoons fresh chopped parsley or cilantro 1 lb (450g) medium-thick asparagus, woody ends trimmed —— Instructions: 1. Preheat your oven to 425ºF (220ºC). Cut 2 sheets of 14 by 12-inch (35 x 30 cm) heavy duty aluminum foil then lay each piece separately on the countertop. In a small bowl, combine the ingredients for the sauce: broth, lemon juice, and hot sauce. 2. Divide salmon fillets onto the aluminum foil near the center then place trimmed asparagus to one side of the salmon, following the long direction of the foil. 3. Sprinkle over garlic and then season with salt and pepper. Drizzle the sauce generously over the salmon fillets. 4. Divide butter pieces evenly among the foil packets, layering them over the salmon and asparagus. 5. Wrap packets in and crimp edges together then wrap ends up. Don’t wrap too tight – keep a little extra space inside for heat to circulate. 6. Transfer to a baking sheet and bake in the oven, sealed side upward until salmon has cooked through, about 9 – 12 minute. 7. Carefully unwrap the baked salmon foil packets then drizzle with more lemon juice and garnish with fresh parsley or cilantro and a slice of lemon. Enjoy! .
