So we went to for Father’s Day. I went with their new dish Zoodles primavera. It was tasty, but I wouldn’t order it again. It was a bit of an overload on the veggie department for me. I did ask the waitress if we could use zoodles on any other pasta dish (apparently I was the first to ask and she made it seem like I was a genius lol, she had to ask the cook) and they said yes. So next time, I know. 👌🏼 . . Anyway I do feel like I overdid it a bit this weekend so (not to punish myself, but reward myself) I’m going to start this week off with a 36+hr fast then another round of carnivore. . . KETO COOKIE DOUGH SNICKERS BARS🍪 Might be the most delicious snack I’ve ever made 😋 It’s perfect to bring when you’re on-the-go and it’s super satisfying. . I promise you, it’s super fast and easy to make. . Macros per bar: 380 calories, 3g ner carbs, 33g fat, 10g protein. ______________________________ INGREDIENTS: 8 large bars COOKIE DOUGH LAYER 3/4 cup (1,8 dl) coconut flour 1 cup (2,4 dl) almond flour 3 tbsp sugar free syrup 2 tbsp butter 3 tbsp crunchy peanut butter 1/2 cup (1,3 dl) erythritol 3 tbsp milk 1 oz. (30g) dark sugar free chocolate (I use my favorite from @cleaneating.se) CARAMEL LAYER: 1/2 cup (1,2 dl) almond butter 1/4 cup (0,6 dl) coconut oil 1/2 cup (1 dl) sugar free syrup 3 tbsp cream 0,8 oz. (20g) butter 1 tbsp erythritol COVER: Pecans 2,5 oz. (80g) dark sugar free chocolate ____________________ INSTRUCTIONS: 1. Mix all ingredients for the dough layer in a bowl. Chop the chocolate pieces and blend in. 2. Line a bread pan with baking paper and spread the dough evenly in the bottom and put in the freezer while preparing the caramel. 3. Caramel: Use a microwave safe bowl and add almond butter, syrup, coconut oil and heat in the microwave until coconut oil has melted. Blend and add cream, butter, and erythritol and heat again until melted. Blend everything well. 4. Pour the caramel on top of the cookie dough layer and put in the fridge until it’s hard. 5. Take it out of the pan and turn it upside down with the dough layer facing up. Spread melted chocolate on top. It will get hard pretty fast since the dough is frozen. 6. Cut into bars. Press two pecans on top of the caramel layer and dip the rest of the sides in the melted chocolate. This can get pretty messy so use your fingers or do whatever you need to get them covered. Keto Bunless Bacon, Egg & Cheese 😍🍔 Ingredients 2 eggs 2 tbsp. water 1/2 avocado, lightly mashed 2 slices cooked bacon 1/4 c. shredded Cheddar cheese Instructions In a medium nonstick pan, place two mason jar lids (centers removed). Spray the entire pan with cooking spray and heat over medium heat. Crack eggs into the centers of the lids and lightly whisk with a fork to break up yolk. Pour water around the lids and cover the pan. Cook, letting the eggs steam, until the whites are cooked through, about 3 minutes. Remove lid and top one eggs with cheddar. Cook until the cheese is slightly melty, about 1 minute more. Invert the egg bun without the cheese onto the plate. Top with mashed avocado and cooked bacon. #repost @keto.conmigo --- Parmesan Crusted Chicken topped with Creamy Pink Sauce Ingredients 🍴 🥫Pink Sauce 2 TBSP Olive Oil 2 TBSP Butter 3 garlic cloves 2 cups spinach 1 cup heavy whipping cream 1/2 cup Rao’s Marinara One small onion 1/2 cup Grated or Shredded Parmesan 🍗Chicken 1/4 cup Almond Flour 1/4 Cup grated parmesan 1 Egg (add 1/2 tsp salt/pepper & 1tsp Italian seasoning) 3 chicken breasts Instructions- Cut chicken breast in half and pound to 1/2 inch thickness Mix almond flour/grated Parmesan in separate bowl Dredge chicken in egg/seasoning mixture and coat in “breading” mix Add olive oil to frying pan-Cook on medium-medium low till chicken is golden brown and cooked on both sides. For the Sauce: heat butter& olive oil on medium, add diced onions: cook till translucent. Add garlic, cook for 2 minutes then add HWC & whisk together Marinara until fully combined Whisk slowly till sauce thickens, lastly adding the spinach. Serve over breaded chicken, top with extra parmesan if desired! Goes well with any roasted veggie side of your choice. ---
Lettuce wraps make me happy 🤗 . . I tired so hard to make a video clip of me making this wrap. And I have no idea how to edit it and I took way too long making it, so screen shots of the steps are the best I’ve got 😅 . . . Steps: Get a sheet of paper or cellophane or aluminum ready for your rolled wrap . . Wash and dry lettuce, romaine works really well for wraps! . . Crunch down the stems prior to loading them up with the good stuff. This helps you wrap it more evenly without it cracking and breaking. Dry off any excess water and make sure you get all the crunchies out 🙃 . . . Load up the good stuff!! I used Red Leaf Romaine and produce from @stopandshop and @boarshead_official cold cuts . . . Roll it up, while holding onto it, place it on the cellphone or aluminum or paper, whatever you’re using to wrap it up and go for it 👍🏻 . . . A lettuce wrap is GREAT for taking to lunch. I’ve even made them the night before and rolled it in a paper towel first and then cellphone and the lettuce stayed fresh for the next day 😊

Whisk the egg whites to soft peaks, and then carefully fold in the egg yolks along with the chopped spinach, chives, dill, cheeses (reserving some to put under the grill) and some seasoning. 2️⃣ Turn your grill on to medium heat. Heat a small non-stick frying pan on a low to medium heat and add 1 tablespoon of butter. Carefully slide the egg mixture into the pan and give it a little shake to spread it to the edges. Allow this to cook for 1 minute then sprinkle the remaining mozzarella and cheddar across the surface and place the frying pan under the grill. Let it cook here for 1 – 2 minutes until the cheese has melted and going lightly golden. Take the pan out the oven and allow it to sit for 2 minutes. 3️⃣ Serve: Slide the omelette onto a plate and carefully fold one side over to reveal the golden underside. Asparagus Stuffed Salmon Rolls with Lemon Sauce 😋💗⠀ ——⠀ Ingredients:⠀ 4 (5 ounce) salmon fillets, skins removed⠀ salt and pepper to taste⠀ 1 (12 ounce) container ricotta⠀ 1/2 cup parmigiano reggiano (parmesan), grated⠀ 2 tablespoons basil, chopped⠀ 2 teaspoons lemon zest⠀ salt and pepper to taste⠀ 1/2 pound asparagus, trimmed⠀ 1 tablespoon butter⠀ 1/2 cup chicken broth⠀ 2 tablespoons lemon juice⠀ 2 teaspoons cornstarch⠀ ——⠀ Instructions:⠀ Season the salmon fillets with salt and pepper to taste, lay them down with the skin side up, top with the mixture of the ricotta, parmesan, basil, lemon zest, salt and pepper, several spears of asparagus and roll them up before placing them on a grease baking sheet with the seam side down. Bake in a preheated 425F/220C oven until the salmon is just cooked, about 15-20 minutes. Meanwhile, melt the butter in a small sauce pan over medium heat, add the mixture of the broth, lemon juice and corn starch and heat until it thickens, about 3-5 minutes. Serve the salmon rolls topped with the lemon sauce and optionally garnish with more basil and lemon zest. Lemon garlic butter baked salmon with crispy potatoes and asparagus 🍋🌱 ⠀ .⠀ By: @sara.haven⠀ .⠀ ⠀ 👉🏻 this recipe is great for Sunday or Monday meal prep, as it comes together fast and calls for ingredients you probably already have in your kitchen 👌🏻 1) POTATOES: Preheat oven to 400 F. Toss 1 pound quartered yukon gold potatoes in 1 tablespoon olive oil; season with salt and pepper 2) arrange potatoes on a large baking sheet and bake for 15 minutes; remove from oven •• SALMON & ASPARAGUS: while the potatoes are roasting, combine 3 tablespoons @fourthandheart garlic ghee (or butter) + 2 cloves minced garlic + a splash of lemon juice in a small bowl; microwave for 30 seconds, or until melted. Season salmon and asparagus with sea salt + black pepper. Once the potatoes are removed from the oven, push them to one side of the baking sheet (they’re not finished cooking yet), and arrange salmon and asparagus as seen in the photo. Drizzle with lemon garlic butter sauce. Bake for 10-15 minutes or until salmon is cooked through. Remove from oven and turn it to broil. Broil for 5 minutes or until salmon, potatoes, and asparagus are crispy.
